Potato peel crisps 🥔♻️ Stop throwing away your potato peels! Experiment with different herbs and spices and create your own snacks 💫 I used some Chinese 5 spice which worked really well but basil, parsley etc would be good too. ~ 200g potato peels (from 3-4 large spuds) 40g unsalted butter 1 tbsp Chinese 5 spice powder 2 garlic cloves, crushed ~ Preheat oven to 200C / fan 180C. Wash then pat the peel dry with kitchen roll. Melt the butter in a pan then stir in the spices and garlic. Pour the butter onto the peel and mix thoroughly. Here’s some Thursday dinner inspiration 💫 Prawn and spinach korma 🥘 Mild enough for the little ones to enjoy too (Teddy has decided he doesn’t like anything green so removed the spinach) Details below 👇🏻 ~ 1 onion, roughly chopped 2 inch piece of ginger, peeled 2 large garlic cloves 5 tbsp korma paste 3 cardamom pods, crushed 70g ground almonds 500ml vegetable stock 150g spinach 200g cooked and peeled prawns 100g Greek yogurt ~ Put the onion, ginger and garlic in a food processor with a splash of water and blitz until completely smooth. Heat some vegetable oil in a deep frying pan over a medium-low heat. Add the onion mixture and fry for 5 mins or until lightly golden. Add the korma paste and cardamom, and fry for 1 min. Stir in the ground almonds and fry for 1 min to make a thick paste. Add the stock, bring to a simmer and cook for 5-10 mins, uncovered, or until reduced a little. Add the spinach and prawns to the sauce and cook for 2 mins. Stir through the yogurt and season, if using. Pappardelle with rose harissa, black olives and capers 🍝 Yesterday’s lunch was this super quick and easy pasta dish from the @ottolenghi Simple cookbook. Is it bad that Teddy, mummy and I ate up all 4 adult sized portions? 👶🏼💁🏼‍♀️🤷🏼‍♂️ Ingredients and directions from the book, I just removed the salt. ~ Ingredients: 2 tbsp olive oil 1 large onion, thinly sliced 3 tbsp rose harissa 400g cherry tomatoes, halved 55g pitted olives, torn in half 20g baby capers 500g dried pappardelle pasta 15g parsley, roughly chopped 120g Greek-style yoghurt ~ Directions: 1. Put the oil into a large sauté pan, for which you have a lid, and place on a medium high heat. Once hot, add the onion and fry for 8 minutes, stirring every once in a while, until soft and caramelised. Add the harissa, tomatoes, olives, capers and continue to fry for 3–4 minutes, stirring frequently, until the tomatoes start to break down. Add 200ml of water and stir through. Once boiling, reduce the heat to medium low, cover the pan and simmer for 10 minutes. Remove the lid of the sauce and continue to cook for 4–5 minutes, until the sauce is thick and rich. Stir in 10g of the parsley and set aside. 2. Meanwhile, fill a large pot with plenty of salted water and place on a high heat. Once boiling, add the pappardelle and cook according to the packet instructions, until al dente. Drain well. 3. Return the pasta to the pot along with the harissa sauce. Mix together well, then divide between four shallow bowls. 🍓 Porridge with roasted strawberries and sumac 🍓 I took some inspiration from a dessert in @ottolenghi's new Simple cookbook this morning for breakfast. Roasting the strawberries brings out the natural sweetness and combined with the zingy sumac works perfectly with creamy porridge for a delicious and simple breakfast treat. ~ Ingredients: 300g ripe strawberries, hulled and cut in half 1 lemon, 1 tbsp sumac 3 sprigs fresh mint 1 vanilla pod, split and seeds removed (or 1 tsp vanilla essence) 1 cup rolled oats Honey to serve ~ Directions: 🥄 Preheat oven to 220°C/fan 200°C. 🥄 Toss the strawberries with the sumac, mint, vanilla and lemon. 🍌Banana and sesame seed porridge 🍌 Happy Saturday! The next time you're having porridge, try topping it with toasted sesame seeds, charred banana and honey. Super simple, healthy and delicious. To make the topping add sesame seeds to a dry frying pan, give them a stir for a minute or two. 🥗 Greek inspired ruote pasta salad 🥗 Back to reality from holiday and back to cooking! I thought I should still try to channel the holiday vibes with this Greek inspired ruote pasta salad given the sun is still shining ☀️! All of the chopped salad pieces and ruote pasta shapes are ideal for baby led weaning and finger food 👌🏻. ~ Ingredients: - 200g dried ruote pasta - 1 red onion, finely sliced - 10 baby tomatoes, halved - 1/2 cucumber, chopped - 1 green pepper, sliced - 100g feta cheese - 1 tbsp dried oregano Dressing (juice of half a lemon, 1 tsp Dijon mustard, 2 tbsp extra virgin olive oil, 1 tbsp white wine vinegar) ~ 🌿 Cook the pasta as per the packet instructions, typically 10 minutes in simmering water with a drizzle of olive oil. 🌿 Finely slice the red onion and place in a small bowl of cold water for 5 minutes to remove some of the sharpness. 🌿 Chop or slice all other ingredients and add to a large salad bowl. 🌿 Once cooked, drain and run the pasta under cold running water to cool it down. Add the pasta to the bowl with the other ingredients. Drain and add the onion. 🌿 Mix the dressing and drizzle it, along with the oregano and crumbled feta, over the pasta and salad. 8 minute smoked haddock kedgeree 🐟💫 This is my cheats version of a traditional smoked haddock kedgeree 🙌🏻 Packed full of goodness and smoky curry flavour - who knew something so tasty could be cooked so quickly! Swipe for video 📹 Recipe below: ~ 2 eggs 2 smoked haddock fillets 1 onion, finely diced 1 tsp turmeric 1 tsp ground coriander 1 tbsp mild curry powder 200g baby spinach 1 pack microwave rice 2 heaped tbsp plain yogurt 1 lemon, juiced ~ 1. Using a two tiered steamer, boil the eggs for 8 mins with the fish in the steamer pan above it. 2. Fry the onion in a little oil in a large non stick pan, then add the spices and stir in - add a dash of water if it becomes a little dry. Add the spinach and rice to the pan, cover and cook until the eggs and fish are cooked. 3. Gently tip the cooked fish into the rice pan and stir to break apart into flakes. Stir in the yogurt and lemon juice. 4. Veggie Lentil Lasagne 🌿 I've been experimenting with a new lentil ragù recipe to use with various pasta dishes 👨‍🍳, and this one is perfect for a hearty lasagne! Rich, tomatoey and herby - you could almost forget this is a #vegetarian dish - perfect for our #meatfreemonday meal this evening 😍 ~ Ingredients: 1 carrot, finely diced 1 celery stalk, finely diced 1 white onion, finely diced 200g mushrooms, finely diced 2 cloves garlic, finely diced 1 tbsp dried thyme 500g passata 2 cans of cooked puy lentils, drained Lasagna sheets 500g bechamel sauce 2 tbsp grated parmesan 1 large ball of mozzarella, torn ~ Directions: 🌿 Add some olive oil to a large pan and sauté the diced carrot, celery and onion for 6-8 mins until soft but not browned. 🌿 Put the mushrooms, garlic and thyme into the pan and cook for another 2 mins. Then add the passata, stir, season with black pepper, and bring to the boil. Reduce the heat and simmer gently for 10 mins. 🌿 Add some more water to the pan, if needed, then add the puy lentils and simmer for another 2 mins. 🌿 Preheat oven to 220°C/fan 200°C. 🌿 Add a spoonful or two of lentil ragù to the bottom of a baking dish and spread it around. Add a layer of lasagna sheets. Add another spoonful or two of ragù followed by a spoonful of bechamel sauce. Repeat this until all the ragù has been used up. Finish with a final layer of bechamel sauce. 🌿 Sprinkle parmesan over the top and spread out the mozzarella. Chocolate orange brownies ✨ These chocolate orange brownies are a perfect indulgent treat for the festive period. Refined sugar free, thick, chewy and gooey, just as a perfect brownie should be 😋 ~ Ingredients: 150g dark chocolate (70% cocoa solids), chopped 175g unsalted butter, chopped 3 medium eggs 200g coconut palm sugar Zest of 1 orange 75g plain flour 40g cocoa powder Icing sugar to dust ~ Directions: • Melt the chocolate and butter together in a heatproof bowl over a pan of barely simmering water. Once melted, lift the bowl off the pan and set aside to cool for 20 mins. • Preheat oven to 180°C/160°C fan and lightly grease and line a 20cm square tin with baking parchment. Beat the eggs, palm sugar and orange zest together using a handheld electric whisk in a large bowl until thick and moussey - 4-5 mins. • Add the melted chocolate mixture to the egg bowl and fold together. Sift over the flour, cocoa powder and fold together. • Transfer the mixture into the baking tin, level off and bake for 30 mins or until there is no wobble left when you gently shake the tin.
