Gluten Free Oven-Baked Chicken Tenders
These chicken tenders are great, nice and crispy, and reheat well. I tend to make mine in a large batch and freeze, you can reheat either using the oven, a toaster oven, or the microwave. My go to is the microwave because I meal prep for the days when depression is hitting hard. Also making my own gluten free chicken tenders has saved me money, I buy most of my ingredients on sale and usually chicken tenders in my area that are gluten free and pre-made are 16.00+ USD a package (3 meals). Most of what’s below already have in the house and it makes 6-8+ meals.  Ingredients- This recipe is for multiple batches and can be paired down pretty easily by taste for smaller batches. 3-4 lbs of chicken breast 3 eggs (I prefer free range from my local farmer’s market)  1 cup of brown rice flour 3 cups Gluten free panko or unsweetened rice puff cereal (slightly crushed) 1 cup Gluten free Italian bread crumbs or you can make your own  3 tbsp avocado or olive oil (I recommend putting this is a spray bottle or mister made for oils) 3 teaspoons of rubbed sage 1 tbsp of garlic salt to start 2 tsp of granulated garlic  1 teaspoon of fresh cracked pepper 3 teaspoons of basil 2 teaspoons of parsley 2 tbsp of smoked paprika Take out two shallow dishes, one wide bowl, and one fork. These will be used for your breading station. Prep your pan where you will cook the chicken. I like cooking them on top of an oven safe cooling rack that fits inside a baking pan, I usually line the baking pan with tinfoil (you don’t need the rack for this recipe but it gets a better crisp). Spray some of your oil liberally on the rack/tin foil. Preheat your oven to 425 degrees Fahrenheit. Mix your panko and bread crumbs, then add 1/4 cup of the brown rice flour to this mixture and mix well again. I recommend putting this mix in the shallow dish closest to your baking pan. Then in the other shallow dish you will put the rest of the brown rice flour and in the wide bowl you need to add your eggs, add 2-3 tablespoons of water to your eggs and beat until well combined.  Add 2 teaspoons of rubbed sage to your bread crumb mixture, all the garlic salt, all the garlic, 1/2 a teaspoon of pepper, 2 teaspoons of basil, all the parsley, and 1 and 1/2 tbsp of the paprika.  Put the rest of your spices and herbs into the brown rice flour. Mix everything well. Taste both mixes and adjust to your preference. I often go stronger on the garlic salt, and a second tbsp because we don’t season the chicken itself.

We have our stations set up, I use the wet dry technique for my hands. Meaning, only touch the wet chicken and egg wash with one hand and a fork, while you touch the dry flour or bread crumb mix with your other hand. (the crumb and flour amounts needed for this much chicken is eyeballed from my usual recipes. Sometimes I use more, sometimes less, you will do the same)  Cut your chicken breasts into strips, I don’t try to keep things similarly sized.  I do however cut out the large piece of tendon running under the breast that would normally attach to near the breast bone. Cut out most of the larger piece, if you want tender meat, however it doesn’t make them taste any different.  Place several of the strips into the egg wash, and flip them using the fork until they are well coated. Coax a single strip up so that you can grab it with your wet hand and let it drain some of the egg back into the bowl before transferring into the brown rice flour. Make sure it is coated lightly on all sides and then when it is ready, shake a little extra off just in case. Put the strip back into the egg wash and get it covered with the help of the fork, then grab it to then put it in the bread crumb mixture. It will take several rotations and gently pressing the breading into the chicken until it is well covered. Give it a light shake to knock off any excess and then place on the baking sheet.  Repeat.

If you want a good browning and well cooked breading without dried out chicken I recommend lightly misting/spraying or brushing the chicken with oil. Put them into the oven once it reaches temp for 11-13 mins on one side and then flip them, once again brush/spray the new side with oil and then put them back in the oven for another 11-13 mins. I recommend watching the oven on the second bake, sometimes it takes certain ovens 2 mins less and until you know your timing for your oven I would check them after 10 mins just to know where they are. You want them lightly golden brown like the picture below. Remove and put them on a cooling plate. You can eat right away (after they are cool enough obviously) or you can freeze like I do for later.

Oven reheat: Temp 425 degrees F for 15-18 mins depending on your oven Microwave reheat: 6 tenders for 1 min on one side, then flip and heat for another 1 min-1.5 mins

cause like.. my body is anything but gluten friendly
in fact my body reacts very poorly to gluten
it goes into self destruct mode
I have celiac so being friendly to gluten is the opposite of what we’re going for here
we’re very anti-gluten

mushroom yogurt pasta || 10-15 mins
it’s pretty hard to show off earthy/hearty food in an appealing way, but you gotta take my word for it! this was honestly so nice + it made my apartment smell amazing!!
ingredients
- 1 serving dry gf or regular pasta (about 70g)
- a handful of chestnut mushrooms (like 5)
- 1/2 yellow onion
- a splash of soy milk (30g-ish, enough to coat the pan but not so it’s all swimming)
- 1 dissolved stock cube in 1 cup of water or a cup of veg stock
- a dollop of soy yogurt (30g-ish, enough to make it creamy but add more if you like it v v creamy)
- 2-3 frozen spinach or frozen kale cubes
- enough olive oil to fry up the goods (10-15g)
recipe
1. bring a saucepan of water to a boil and salt the water, add the pasta once ready, or as according to instructions + don’t worry if it cooks before the sauce is ready cuz we’re gonna toss it through the sauce anyway
2. as that happens, dice up your onion and sauté in the olive oil on high heat in a frying pan stirring semi frequently, as you’re doing so, you can also slice up the mushrooms and add those in once the onions have browned a little (like 5-6min)
3. once the mushrooms have absorbed the oil, add in the soy milk and slowly add the stock, adding more and more as the water cooks away
4. add the yogurt and then your frozen leafy green of choice and reduce to medium low with the pan covered, stirring and adding more stock if it starts to dry up
5. add the drained pasta to the sauce and give a nice toss through, serving into your fav bowl of choice and optionally adding some yogurt and a further drizzle of olive oil to finish up with

optionally you can also work in miso into this recipe and it adds a bit of depth to the sauce
pumpkin seeds make a great topping and add even more healthy fats to this dish
chilli flakes go amazingly with the cream sauce
to reheat, just pop in the microwave for about 2-3 mins stirring halfway or make on the stove again with a bit of extra water or stock to revive the moisture

Though Mrs. June Pace didn't work at Gracey Manor as long as she would've liked (having found the pay worth it if it meant getting to tend to such a beautiful, sprawling garden day in and day out, as well as see her one and only son finally have a friend beyond his teddy bear), she and Beauregard Ghast got along very well in the time she was in the Gracey's employ, her expressing gratitude at Beau looking after her son, treating him no different than Dorian, while he openly admired her resolve, her sense of humor in the face of adversity, and her skill with all things that grew. She was a lovely woman, and Beau would've liked to have gotten to know her better.

Theres a startling number of tourists who come in to the ice-cream shop asking what vegan options we have, and I'm just like "Ma'am, this is a town with approximately 10 permanent residents, where you can buy handmade moccasins next door. We are naught but simple country folks who drink milk and eat meat, both of which came from farms down the road."

Been a while since i posted here. But im back. My mental health has been up and down a lot the last few years and thus my health and cooking habits have taken a hit. I am back though.
Today i made turkey sausage patties.
Ingredients:
1lb lean ground turkey
1/2 teaspoon granulated garlic
1/4 teaspoon garlic salt
1/4 teaspoon fresh crack black pepper
1/8 cayenne (totally optional and can even increase to 1/4 if you like spice)
1 teaspoon italian seasoning
1/4 teaspoon fennel fronds or 1/8 teaspoon fennel seed
1/2 teaspoon smoked paprika
2 teaspoons minced dried onions
Mix your ground turkey with seasonings until well incooperated, then let it sit covered in the fridge for 2 hours minimum but preferably overnight. I made 2 oz patties with this batch but they plump up a lot and therefore shrink in circumference, so i recommend 3 oz patties. Warm your pan before adding the patties, and cook on medium low heat. Cook in extra virgin olive oil (other fats optional), and after you flip when they are browned on one side, cover the patty for 2-3 mins until it is finished cooking. Covering it allows it both to brown and steam, which helps it keep moist.
These freeze really well and i ended up turning them into sandwhichs with some cheese. Next time i will add some egg as well.
These are low in sodium, low in fat, and high protein. They are easy to make, so are perfect for your low energy days.

If you’re Australian & haven’t seen yet. Gluten free tiny teddy cereal!! They’re also vegan if anyone’s lactose intolerant, &/or vegan too (may contain statement for milk if you’re super sensitive).
Endorsed by Coeliac Australia.
Note they don’t say GF on the front but I think it was probably a smart from a business perspective. They know this will spread through the celiac community quick, & it has already. They don’t want to turn off people who would turn their noses up at a GF label. I’m just so impressed they chose to make these super inclusive! Of course there’s some people who won’t be able to eat them, but the ingredients seem like they really tried & they’ve made something really fun. The boxes are quite big & the price is at least on par (if not better) with similar size boxes of non-GF cereal.
I’ve had the chocolate ones so far, they’re yummy. My favourite GF chocolate cereal so far (recent diagnosis, so very picky). They’re not super sweet or super chocolatey (I’m a super sweet tooth) but they are really satisfying & have a good crunch. Not too hard like many GF cereals.

stuffed aubergines w toms + mushrooms | 20-25 min
a very light meal that’s packed w fiber and will keep you going until dinner. :) highly customisable too!
ingredients:
1 aubergine/eggplant
1/2 onion
3 tomatoes or 1/2 can chopped tomatoes
a handful of brown mushrooms (like 4-6)
2 tbsp oil of your choice, divided
(optional) a drizzle of plant yogurt seasoned w mint
1 tsp smoked paprika, salt, pepper, basil, oregano
method:
1. preheat the oven to 200c (400f) and in the meantime heat up oil in a frying pan.
2. slice the aubergine in half and score the flesh into a grid and lay flat on the pan, cooking on high heat until the oil has been absorbed.
3. remove the aubergine from the pan and place onto a baking sheet to roast on the med-high rack, roasting flesh side up for 10 minutes.
4. in the meantime, chop up your mushrooms and dry fry them until the moisture has been cooked off, stirring frequently. add in the onions later with the remaining oil, cooking until they’re fragrant and browned, about 8 minutes and then add in the seasoning followed by the tomatoes, which are either freshly chopped or canned.
5. fry with the pan lid covered on low heat now for 2 min and remove from the heat.
6. take out the aubergines from the oven and using two forks, shred up the flesh and spoon the pan mixture into the aubergines, returning to the oven for a further 10 minutes.
7. plate as desired and optionally drizzle the yogurt onto the food with some extra oil of your choice and diiiig in.
notes:
olive oil works best but can go great w avocado or walnut oil too, a neutral oil will otherwise bring out the seasoning more if that’s your preference
for extra good fats consider sprinkling crushed pumpkin seeds or hemp seeds on top
if you can’t find a plant yogurt then tahini works also or otherwise hummus :)
if you feel like this is too light for you still or need more to fill you up, i recommend also adding chickpeas or your fav beans into the mix for satiety!

The simplest peanut butter cookies ever
first introduced to me by a member of my extended family
makes between 12 and 20 cookies depending on dollop size
1 egg
1 cup sugar
1 cup peanut butter
Mix together egg and sugar
Add peanut butter and mix well
Dollop dough onto cookie sheet
Bake for 6 to 8 minutes at 350°F
This recipe scales very easily. The amount of sugar can be cut back if desired, especially if you’re using peanut butter with sugar in it.
