Hey guys I invented a soup to use up all the leftovers in my fridge last night, and it turned out insanely, blisteringly good, so I’m gonna call it Emily’s Vaguely Thai-Inspired “Oops Everything Is About To Go Bad” Soup, and tell you how to make it.
INGREDIENTS (note: don’t be precious about the amounts, adjust as needed, I’m not your mom. you’re an artist and the heavy-bottomed dutch oven is your canvas)
three cups of any hearty mushroom, sliced (I used white and baby bella)
a stalk of lemongrass, bashed to reveal the tender insides and cut in two inch lengths
five large carrots, diced in rounds
one knob of ginger, around the size of your thumb, minced
three garlic cloves, minced
one red thai chili, diced
one large yellow onion, diced
fresh cilantro
3 cups veggie stock 
3 cups chicken stock 
(you can use better than bullion in water for either of these in a pinch, and if you want to bulk up the veggie stock, add all the trash bits of the onions and garlic and carrots and ginger and the tough outer leaves of the lemongrass with some peppercorns and star anise and let that puppy simmer for like ten minutes before straining.)
two giant handfuls of any sturdy leafy green, like bok choi, kale, or spinach
three eggs
one lime
fish sauce
coconut or brown sugar
frozen dumplings of any kind
gochujang paste
INSTRUCTIONS
add a few tablespoons of neutral oil to a large soup pot over medium heat
once the oil is shining, add the garlic, thai chili and ginger and sauté until fragrant
add the lemongrass and the onions, and continue to sauté until the onions are soft and translucent
in go the carrots, the zest of one lime, and three heaping tablespoons of your gochujang, stir stir stir until everything is tender and the paste has worked its way into all the nooks and crannies. 
pour in the strained veggie stock, bring to a boil, then down to a simmer. cover, and continue to simmer for ten minutes.
remove the lid, stir the reduced broth, and add your mushrooms and your chicken stock. make sure it’s all well combined. 
we’re going to start adjusting the flavor now: add two tablespoons of fish sauce, and a tablespoon of coconut sugar (brown will do if that’s what you have).
cover and simmer for another 10 minutes.
add more gochujang plus the juice from your naked lime and chopped cilantro to taste.
now you add your frozen dumplings and your greens and just keep an eye on them until they cook through. 
meanwhile, break the eggs into a bowl and scramble them with a fork. pour them into the soup in an even, unbroken stream while you stir. this will give you those pretty egg-drop ribbons.
serve in deep bowls and garnish with more cilantro and lime juice.
NOTES: like I said above, nearly everything in this recipe can be substituted, save for the aromatics, and if you’re a vegetarian you can just double the amount of veggie stock, instead of adding chicken stock.

The lazy Susan was quickly filled with dishes as we continued with our reunion dinner. The Prawn Paste Chicken (虾酱鸡) featured plump and juicy mid-wings coated in a batter of fermented shrimp paste. Also known as Har Cheong Gai, it is crispy with an umami aftertaste and a hit with young and old.

The stir-fried French Bean with Dried Shrimp (虾米四季豆) might look deceptively plain but plain and simple it is not! The string beans or green beans is flash-fried with minced hae bee (dried shrimps) to absorb the wok hei (wok thermal radiation or breath of the wok) yet maintained the crunchy texture and aroma of the sea (dried shrimp). This dish was one of the highlights of the dinner.

My nephew asked for this Fried Rice with Chicken (鸡丁炒饭) as he preferred it over the steamed white rice the rest of us are having. The Yam Ring (佛钵飘香) featured a ring of deep-fried mashed yam (taro) and filled with sautéed seafood such as prawn, squid and also various vegetables. Normally one would also find cashew nuts in it, but I didn’t notice any this time. Plating is done haphazardly as the chef just poured everything into the yam ring. If I will to do it, I would place the vegetables at the bottom and present the seafood on top with a sprinkle of crunchy cashew nuts over it. Anyway, dish is passable but not fantastic in taste and an “F” for presentation.

Popeye’s power booster canned vegetable is reimagined into Spinach with Trio Eggs (三皇苋菜). To enhance the power, three kinds of egg are used – normal chicken egg, preserved century egg and salted duck egg. Finally, the eyes is also protected with goji berry or wolfberry added into the thick soup. With all the above ingredients used, how can a vegetable soup like this not be good for you?

Fish Maw & Crab Meat Soup (蟹肉鱼鳔羮) is the most expensive dish of the night at S$45 (large portion) due to the two premium ingredients. The thickened soup is chocked with the spongy fish maw, succulent crab meat and I also detected mushrooms in there. Before eating, drizzle a few drops of the black vinegar and add a dash of white pepper.

The Emperor Chicken (皇帝鸡) is also known as herbal chicken. In the olden days, the emperor’s diet was strictly prescribed and monitored by physicians, because it was important for the emperor to be in excellent health in order to focus on governing the Kingdom. This was one of the healthy dishes the emperor ate! The chicken is wrapped in the waxed paper and aluminum foil then steamed for a few hours until the meat is tender and the flavours of the herbs is infused into the chicken.

The last dish to be served is the Poached Prawns (白灼虾). If the ingredients are fresh, you just need minimum condiments and simple cooking style to bring out the best in taste. So here the prawns are boiled in basically water, ginger and scallion for a couple of minutes at most. Chinese cooking wine is then drizzled into the broth to enhance the overall flavours.

For this reunion meal, we spent S$331.76 for the dishes, steamed rice and drinks including 10% service charge. I can foresee the next year we will be back here for our dinner again. After all the food is good and the place is nearby our houses.

There has been so much going on in my personal life that’s been affecting my mental health, and unfortunately I haven’t been able to focus much. I’ll explain in another post when I get the chance. But for now, as an apology, here is something I’m excited to share: My first ever mod!

Hair Care (tw:ed)
I've seen a lot of people worried about hair loss due to restricting. I definitely started to notice more shedding so I wanted to share some of my tips that helped me.
(Keep in mind that I already have naturally thick and long wavy hair, so what works for me might not necessarily work for you!)
1.) Food
PROTEIN. Protein is important for so many things, including keeping your hair healthy. The recommendation is 0.8g per kg of body weight. For me, I try to get at least 50-60 grams of protein per day. I know it can be a little hard sometimes. One of my favorite ways to get in enough protein a day is protein drinks! They can be relatively low cal with 20-40 grams and very filling. My favorite right now is the Fairlife Core Power, which is 26g of protein for 170 calories. Not to mention they taste very good.

Another easy relatively low-calorie way to get in protein is Greek yogurt! If you want a really low-calorie option, I recommend Dannon light and fit Greek yogurt! 80 calories for 12g of protein! They have a vast array of flavors, but here are my personal favorites:

If you can afford a higher-calorie option I would also recommend the Chobani flips. These are about 9-10g of protein for 150-170 calories. Not as much protein for a higher amount of calories, but if you are craving dessert, these work really well and are very satisfying! Once again they also come in a vast array of flavors, but I will show my favorites:

Nutrition. I know it's hard but eating a balanced diet is also the key to keeping your hair as healthy as possible while restricting. Some foods that I include regularly that may help hair growth/hair health are:
Spinach (2 cups are worth ~25 cal)
Eggs (One egg is 70-90 cal)
Salmon (or any fatty fish) I personally like to get the Bumble Bee Smoked Flavored Coho Salmon ( 150 cals, also 19g of protein) It is a little high cal but this is something that I think is worth the cal spending

Avocado. It can be expensive to buy avocados and a lot of times when you open an avocado it can be bad on the inside. What I like to do is buy the WHOLLY Avocado minis. They are just straight avocados in little mini cups. (1 cup is 130 calories) once again a higher calorie food but something that is worth the cal spending. I have a wrap recipe that I use these for if anyone wants me to post it!

Beans. One of my favorite beans to use is Great Northern Beans. I have a recipe using these beans in a delicious and low-calorie soup if anyone wants me to post it!
2.) Vitamins
You may be eating a balanced diet, but if you are restricting then you will not get enough vitamins and micronutrients. This is where I would recommend taking vitamins. I Personally take a multivitamin as well as a Hair, Skin, and Nails vitamin daily. I take the Centrum Adult Multivitamin and the Vitafusion Hair Skin and Nails Vitamin:

3.) Rosemary oil/water.
I like to use rosemary oil on my scalp followed by a five-minute scalp massage/combing with a bamboo brush every three days. I have naturally thicker and coarse hair, so my hair can take rosemary oil, but if you have thinner hair, I have read that rosemary oil can be too much, and you would need to use rosemary water. It's very easy to make, just google it! If you use rosemary oil, do not saturate your scalp with it! You only need a few drops to do the trick. It's also not recommended to put straight rosemary oil on the scalp, instead to dilute it in another carrier oil. This is the brand of rosemary oil I use:

Bamboo brushes are said to reduce breakage, reduce frizz, and aid in scalp care, aid in circulation, and hair growth. I personally have noticed my hair looking a lot healthier after switching to one.
I think that is about all the tips I have for right now. Remember I am not a doctor, hair specialist, or anything like that. These are simply some things that I do, and I have noticed that they have helped decrease hair fallout.
Remember that the best course of action is recovery, but if it is not an option for you then I understand.

ok, so i was in the mood for lamb stew, however I did not have any lamb medallions, just ground lamb meat. so i googled recipes for lamb meatball stew and found this
however i made mine slightly different as i had to use what I had in my pantry
my recipe:
preheat oven to 325
in a large dutch oven, pour in idk about 2-3 tablespoons of olive oil (don't be stingy) on medium heat
then throw in about half an onion roughly chopped and sauté until softened (I use spanish onions)
while sautéing, season generously with salt, pepper, garlic powder, thyme, rosemary, cumin, oregano (it smells so goooooood)
once softened, add a small can of sliced carrots and one small can of mushrooms (add additional seasoning as needed) - i use canned carrots because i hate frozen carrots (they have just an ughhhh texture for me) and I didn't have any fresh carrots
sauté and marry it all together for a few minutes
I also added half can of diced italian seasoned tomatoes (garlic, oregano, basil) - because i had to use up my left overs, but you do you
sauté it a bit more and then add about 1/3 cup of good red wine
let that simmer for a bit to cook off the alcohol
then add about 6-8 cups of beef broth (enough broth to cook meatballs in)
re-season to taste (i added a bit more salt, garlic, & thyme, then added a sprig of fresh oregano from my plant)
add 2 bay leaves
then about 1/3 cup or so of frozen spinach
while that's cooking you make your lamb meatballs
defrosted 1 lb of ground lamb, put in bowl with about 1/4 cup of italian style bread crumbs, salt, pepper, garlic powder, thyme, cumin, shawarma seasoning, oregano
the recipe called for uncooked rice, but I used one of those single serving ready to go rice portions and added about half that container to the meat mixture
i threw the rest of the rice into the soup to cook
While mixing your meat: add 1 egg then mix all your ingredients together by hand and start forming meatballs to drop in your simmering hot soup
once done, put the lid on your dutch oven and throw that bad boy into the oven for about 25 minutes for the meatballs to cook
serve with fresh crusty bread
the soup smells and tastes amazing, absolutely best broth
the only thing i might change going forward is I might bake my meatballs a bit beforehand for a nice crust, then throw them in (i'm italian/sicilian american and grew up baking my meatballs)
this all makes a big pot of soup that could feed 4-6 people, or if it's just your little old self, you can freeze some portions for some other cold day

One of my best friends is Erin, whom I met when I was 15. She always touches stuff that looks touchable—a sweater in the store, a smooth-looking rock, whatever. I learned to do that, and appreciate textures more, because of her. Also, right after I went through a painful and dramatic breakup in high school, we were both in a yearbook photo for some club, and she was like, "Let's hold hands in the photo! That way our love will be preserved for eternity!" and that cheered me up SO MUCH. She lives on the other end of the country from me and we don't get to see each other as often as we'd like, but she's still one of my best friends and favorite people in the world.
26. Can you cook or bake? If so, what are some of your specialties?
Yes! I love to cook and bake, and I'm really good at both. Hmm, specialties...I make excellent blondies. Pretty damn good spaghetti sauce. Also chicken katsu. Fried rice. Egg drop soup. I make really good sandwiches. A spinach pasta salad I invented that my mom always requests when she's visiting me. I make a lot of different things and I'm good at most of them.
