Nature's Gatorade
Ingredients used:
1 cup peeled ginger
- 6 cups water
- 1/2 cup fresh lemon juice
- 1/2 cup apple cider vinegar
- 1/2 cup maple syrup
- pinch of celtic sea salt
1. Add your ginger and water to a 2 quart pot
2. Get it to boil then turn off the heat, let it steep for 20 min
3. While that’s cooking, to a big pitcher or a 64 oz jar, add the lemon juice, apple cider vinegar, maple syrup, and Celtic sea salt
4. Once the ginger is done steeping, strain out the ginger root & add the water to your pitcher/jar
5. Serve with fresh mint leaves and top with sparkling water
6. Enjoy! 🤔

Witch’s Heart !
Ingredients:
 1 ¼ oz Raspberry Liqueur
 1 oz Apple Brandy
 ¾ oz Crème De Cassis
 ½ oz Lemon Juice
 3 pinches Purple Luster Dust
 2 Blackberries
Method:
1: Add raspberry liqueur, apple brandy, crème de cassis, lemon juice, and cubed ice to a shaker.
2: Shake for 10-20 seconds.
3: Strain into a martini glass.
4: Add purple luster dust to glass.
5: Stir for 5-7 seconds.
6: Garnish with blackberries.

• 3 green apples, diced
• 3 red apples, diced
• 3 Ib grapes
• 6 kiwi, peeled and sliced
• 3 lb strawberries, halved
• 18 oz raspberries
• 3/4 cup pomegranate seeds
• 3/4 cup honey
• 6 tablespoon fresh lime juice
• zest of 6 limes
DIRECTIONS:
1. Add all of your fruit to a large bowl.
2. Whisk together honey, lime juice, and lime zest in small bowl.
3. Pour over fruit just before serving and toss to evenly coat.

Serves: 2 | Preparation Time: 10 Minutes
What You Will Need: 1 apple, cored 1 banana, peeled 1 tsp grated fresh ginger Small handful of spinach Small handful of kale 1 Tbsp chia seeds 1/4 cucumber 15 mint leaves Juice of 2 limes 3 ice cubes Scant 1 cup/7 oz/200 ml apple juice, plus extra if needed 1 tbsp honey
Place all ingredients into a blender and blend until smooth.
If it feels thick, add more apple juice. Serve right away. This is certainly a boost you need first thing in the morning.

Makes: 2 | Preparation Time: 10 Minutes
What You Will Need: 3/4 cup/7 oz/200 g watermelon, seeds removed 1 tbsp honey 5 mint leaves Juice of 2 limes 1 1/4 cups/10 fl oz/300 ml soda water, chilled
To Serve: Ice, for the glasses 2 Tbsp grenadine (optional) Extra mint leaves 2 slices lime 2 watermelon wedges
Put the watermelon in a blender with the honey, mint leaves, and lime juice and blend until smooth. Add the soda water and blend for another couple seconds.
Add ice to two tall glasses, top with the watermelon drink, and pour in the grenadine, if using. Garnish each glass with mint leaves, a watermelon wedge, and a slice of lime. Serve immediately.

Autumn Punch
5 whole cloves
1 cinnamon stick
1 vanilla bean, split lengthwise
1 (64 oz) bottle apple-cranberry juice
4 medium purple and/or green plums pitted and sliced
1 pear, seeds removed and sliced
1 (750 ml) bottle Gewurztraminer or other fruity white wine
Ice cubes
Place cloves, cinnamon stick and vanilla bean in a large container with the apple-cranberry juice. Add plum and pear slices. Cover and chill for 4 to 24 hours.
Remove cloves (they float so they're easy to find), cinnamon stick, and vanilla bean and discard. Stir in Gewurztraminer. Serve punch with sliced fruit over ice. Omit wine and serve just the juice or add soda water if you want a non-alcoholic version.
If desired, omit the ice and heat the juice mixture with the wine in a Dutch oven or slow cooker until hot.

In the Kingdom of Corona, they have bustling trade by sea and a distinct region to draw drink inspiration from. Sundrop Punch, a batched beverage i could imagine everywhere from The Snuggly Duckling, to  Old Corona, or to celebrate Rapunzel and Eugene’s wedding,  is a fortified beer & mead punch with inspirations centered on Northern and Central-Eastern Europe from the late Medieval to the early 1800s. It's a golden, long drink that's gentle and bright but certainly a little deeper than you expect. Suits the princess perfectly!  In time for the long, gentle drinks of spring and early summer, I present a recipe for Sundrop Punch, inspired by Tangled: The Series.

Sundrop Punch
~10% ABV | Yield: Roughly 1 Liter/32 fl oz | Historical, Pre-Cocktail, Punch, Long Drinks, Fandom Cocktails 
1 bottle [~15-16 ounces]Pilsner or similar lager (I used Grolsch) 
8 oz or 240ml semisweet mead (Linganore Semi-Sweet Medieval Mead)
4 oz or 120ml Aquavit (this is a Norwegian-style[aged]) 
1/2 oz or 15ml cinnamon syrup
1/2 oz or 15ml ginger syrup
1 oz or 30ml Oleo Saccrum (Lemon)
2 oz or 60ml fresh orange juice 
1 oz or 30ml fresh lemon juice 
Chill all spiritous ingredients beforehand and combine in pitcher larger than 1 liter, gently stirring. Allow it to sit for a little while in the fridge so the flavors meld and mellow out, but if you dont plan to serve it within an hour or two I recommend squeezing the orange juice last, mixing in shortly before serving, to avoid any bitter/metallic notes oxidizing. If you wish to serve it over ice, add ice to the individual serving glasses, not the pitcher itself. Pour servings into cups of your choice, garnish with freshly grated nutmeg and, if you would like it, orange zest.

This is a punch sort of devised out of the general region and eras Tangled takes cues from. Norwegian aquavit-- a spirit noted for its strong notes of caraway and other botanicals -- also historically is aged in sherry casks on ships, appropriate for a port city. As we see a Tangled cameo in Frozen, I like to imagine sea-maturation Aquavit is a signature of Arendelle’s -- Elsa & Anna’s kingdom --main style of Aquavit. 
Pilsner as a light, hopped lager style arose in the mid 1800s, which is about the tail end of the eras drawn from as inspiration for the setting of Tangled. Mead has been around for forever but this stuff is not a bad approximation for young mead recipes("white" mead, historically) of the 18th century -- still, not carbonated, a bit sweeter over dry. (18th/19thc drinks trend sweet.) 
 Since the Kingdom of Corona is a port(though probably not a warm water one) fresh citrus seemed allowable and helps backsweeten against the hops in the beer, but I actually think unfiltered apple juice or cider would work too. But a punch does need citrus, so historically Oleosaccrum is standard(literally oil sugar -- macerate citrus peel, removing pith as much as possible, w caster sugar. I do equal weights and give it a good while, at least a few hours. Put it in a zip lock and squeeze it occasionally, then strain peels out.) This is lemon oleo, because I wanted the color to remain fairly golden(Sundrop. Duh). Any citrus can make oleo though. I loosely referred to How To Drink's DnD Tavern Punch(which is a very different Scotch Ale/Dansk Viking Blod Mead punch) for the backsweetening, but decided a split of cinnamon & sweet ginger syrups was more suited to a much lighter mead, a lighter but more bitter beer and the stronger hit in terms of proof and flavors in the aquavit. 
Syrups like these are easy to make -- I recommend referencing youtuber Anders Erickson, Smuggler’s Cove by Martin Cate, and Leandro from The Educated Barfly for comprehensive spice infusion syrups info, and sights like Punchdrink and Spruce Eats have good recipes. 
Lastly, punch is traditionally garnished with nutmeg.
So: Is this a cocktail? Well, no. Cocktails were very new in the 1800s and at the time definitionally contained bitters more like we know today-- super potent tinctures of bittering agents commonly featuring herbs like gentian. There are bitter notes in this drink, but they much more like seasoning here than to balance the structure of the drink. Now, you can always sweeten to taste since your mead of choice is giving the structure to the sweetening and that varies a lot. Though tempting to include elderflower liqueur because, you know, Sundrop flower, it's anachronistic -- though I have a modern cocktail to share that does use it.  Anyway, aside from the fantasyland regional/era specific inspirations, there's one more theme here, and that's the restorative powers of the Sundrop. "aqua vitae" is "water of life", & nectar as used in Greek myth may, I think, refer to a fermented honey drink- mead-like?  A drink of the gods.

Fun fact: alcohol distillation is often credited to various alchemists throughout history beginning in 8thc, so with nearly a  we know at least one Tangled character almost certainly understands distillation! 
Whether I’d want Varian to mix the punch, tho...

Honey and Apple Challah

I know that raisins are the traditional mix-in for High Holiday challahs, but a) raisins suck, at least according to everyone in our family, and b) apples are the Official Fruit of Rosh Hashanah, right? So for the past three years (since I started baking challah regularly) I've tried to make an apple-studded challah for the holidays, but this has proved very difficult: no matter how I tried to prepare them, how small or big I chopped them, or when I added them to the dough, fresh apple chunks inevitably turned everything slimy and required me to add a TON of extra flour to bring the texture back into line, which in turn led to dense, stodgy bread.
But this year! This year I finally figured it out, because previous experimentation with varying the recipes in The Modern Jewish Baker (an amazing book) revealed that you could do a LOT with reconstituted dried fruit. So I got a big bag of dried apple rings from Trader Joe's, hunted around online for a recipe that promised to infuse as much honey flavor into the dough as possible, and squished them together.
The results were fabulous -- not only did it taste of honey and have a very satisfyingly dense distribution of apple chunks, but it even stayed fresh (in an airtight bag) for a full four days after first being cut into.
Recipe below the cut:
HONEY & APPLE CHALLAH
½ oz instant yeast ½ tsp sugar 1½ cups warm water (110° to 115°) 5 large eggs, room temperature ⅔ cup honey (raw honey if you can get it – quality makes a difference here!) ½ cup canola oil 2 tsp salt 6 to 7 cups bread flour 1 cup boiling water or apple juice 2 cups dried apple rings, chopped small 1 Tbsp water 1 tsp honey
Pour boiling water or apple juice over the chopped apple rings in a small bowl; let stand for 5 minutes then drain and pat dry very well.
In the bowl of your stand mixer, sift together yeast, sugar, 3 cups of flour and salt. 
Separate 2 of the eggs, and refrigerate the whites. Add the yolks, the other 3 eggs, warm water, honey, and oil to the mixing bowl, then beat with a dough hook on medium speed for 3 minutes. Slowly add enough of the remaining flour to form a soft (but still sticky) dough.
Turn dough onto a floured surface (or just leave it in the mixer…) and knead until smooth and elastic, another 6-8 minutes. Knead in apples. 
Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until almost doubled, about 1½ hours.
Punch down dough and turn onto a lightly floured surface. Divide dough by weight into 8 balls, then roll them into ropes – you will want 4 ropes for each challah. Assuming you’re making this for the High Holidays, braid into circles (pdf link) and place the loaves on a parchment-lined baking sheet. Cover with kitchen towels and let rise in a warm place until almost doubled, about 30 minutes.
Preheat oven to 350°. In a small bowl, whisk together the 2 chilled egg whites, teaspoon of honey and tablespoon of water; brush over loaves. Bake 30-35 minutes or until bread is golden brown and the internal temperature has reached 195°.

Apollo's Amazing Autumn Apple Cider Recipe 🍂🍏🎃🍄🕯️
This recipe got me a boyfriend, use its power wisely.
Makes about 3.5 L, concentrated. Depending on how strong you like it, this could be around 14-28 servings.
Tools:
stockpot, 6-quart size
potato masher
fine mesh strainer
Optional: citrus juicer, zester, apple corer/peeler/slicer, cheesecloth
Ingredients:
6 apples (variety is up to you! I use half of a sweet variety like gala, and half sour like granny smith)
1 orange (navel is most common where I live, but any good juicing variety is fine)
6 oz fresh cranberries
6 slices fresh ginger
8 cinnamon sticks
1 Tbsp whole cloves
1 Tbsp allspice
1/2 Tbsp anise or fennel
1/2 Tbsp nutmeg
1/2 Tbsp cardamom
32 oz brown sugar
Optional: 1 box cinnamon imperial candies (aka Red Hots), baking soda and lemon juice/apple cider vinegar to correct acidity
Steps:
1. Core and slice apples and add to the pot. It's best if you peel them (and I like eating the peels lol), but not strictly necessary.
2. Zest the orange, if desired, and discard the pith. You can add zest to the cider for a more orangey "zing," but I prefer to use it in sorbet with raspberries and basil :) Juice the orange and add the juice to the pot.
3. Add the cranberries, ginger, and enough water to fully cover the ingredients. Bring to a boil.
4. Once the mixture is boiling, stir, reduce heat to low, and cover. Simmer 30 minutes, stirring occasionally.
5. Turn off the heat and mash the mixture with your potato masher. It doesn't need to be applesauce, but make sure all berries and apple chunks have been smushed at least once by your mighty hand. Revel in your power as the vindictive God of the Apples.
6. Add the spices and enough water to fill the pot with an inch of room. Bring to a boil, cover, and simmer for another 2 hours, stirring occasionally.
7. Turn off the heat. Add the sugar in 8 ounce increments, tasting as you go. I always use the full bag, but I like it sweet.
8. If you want more spice, I can't recommend cinnamon imperials enough. Cinnamaldehyde is the chemical in cinnamon that gives it that "kick," and cinnamon imperials are a cheap way to get your hands on lots of it. Add 5, let them fully dissolve, and taste before adding more. I usually add 10 total, but my spice tolerance is low.
9. If the mixture is too sour, you can add baking soda 1 tsp at a time. Make sure it stops bubbling completely, then stir, taste again, and add more if needed. Do the same with a 1/2 Tbsp of lemon juice or apple cider vinegar to make it more sour.
10. Strain the cider into a container. I strain once with just the mesh, then a second time with the cheesecloth over the mesh. That second step is optional; most mesh strainers will do a perfectly good job on their own.
11. Serve hot or cold, straight or diluted 1:1 with water (like I said, it's pretty concentrated). Store in the fridge.
Fun twists to add: ginger beer, caramel sauce, maple syrup, lemon juice, thyme/rosemary syrup, extra cinnamon imperials
Garnish suggestions: whole cloves, cinnamon sticks, star anise, allspice berries, apple slices, lemon/orange slices, zest, thyme/rosemary sprig, lemon balm/mint/basil leaves
Alcohol ideas: rum, bourbon, whiskey, applejack, triple sec, mojito fixings, moscow mule fixings, anything cinnamon or apple flavored, and my favorite: fireball 😁

The ingredients for this drink are as follows:
1 1/2 oz of [Nolet’s] silver dry gin
3/4 oz lemon juice, freshly squeezed
3/4 oz of simple syrup
Le Brun organic cidre (or other dry sparkling cider), chilled, to top
Garnish: lemon twist
Gin is more of a warm weather sipper type of drink, despite not exactly being binded by such, with this in mind Gin based drinks like Kalos 75 often tend to be stored away during the winter and autumn seasons.
