Vegan Keto Friendly Tacos with Strawberry Salsa Recipe: 1/2 lb Beyond Meat Burgers 1tsp Fajita Seasoning 1ea Boston Bibb Lettuce Optional Avocado For the Strawberry Salsa 3cups Strawberries small diced 1ea Red Bell pepper small diced 1ea Green Bell pepper small diced 1ea Yellow Bellpepper small dieced 1ea Jalapeno small diced 1/2 Red Onion 2 tblsp White Balsamic 3 tblsp Extra Virgin Avocado Oil 2 tsp Cilantro, Finely chopped Salt & Pepper To Taste Add a little oil to the pan and brown the meat, breaking it up with a wooden spoon. Season with the Fajita seasoning and salt and pepper. Once browned set a side. For the salsa mix all ingredients together. Cut off the root of the bibb lettuce and separate the leaves. Using the leaves as a taco shell top with the meat and salsa. Optional add the avocado and shredded vegan cheese. After a brief break The Veggie Chefy is back with more food to share and new recipes. I am open to requests so if you have an idea throw it my way. Tonight's dinner: Roasted Portobello Mushroom with Spinach & Brie Risotto topped with Porcini Balsamic Glaze. This is a super simple and filling dinner. Just roast your portobello mushroom in a 350° oven with salt, pepper, and oil. Cook for about 15 mins or until tender. In honor of my Birthday today I present to you a Vegan panna cotta with matcha green tea powder. 14 oz can of coconut milk 3 tbsp agave 1 tsp agar 1 tsp vanilla extract Place all ingredients in a pot and bring to a boil with stirring constantly then lower heat to simmer for 2-3 minutes still stirring.
