After a brief break The Veggie Chefy is back with more food to share and new recipes. I am open to requests so if you have an idea throw it my way. Tonight's dinner: Roasted Portobello Mushroom with Spinach & Brie Risotto topped with Porcini Balsamic Glaze. This is a super simple and filling dinner. Just roast your portobello mushroom in a 350° oven with salt, pepper, and oil. Cook for about 15 mins or until tender. In honor of my Birthday today I present to you a Vegan panna cotta with matcha green tea powder. 14 oz can of coconut milk 3 tbsp agave 1 tsp agar 1 tsp vanilla extract Place all ingredients in a pot and bring to a boil with stirring constantly then lower heat to simmer for 2-3 minutes still stirring. Thank you @eclecticcourtney for the great idea. I'm a mix of Irish and Italian and have grown up with corned beef and cabbage. This was a fun challenge. Vegan Corned "Beef" and cabbage Serves 4 Ingredients: 1# thinly sliced tofu 4 cups veggie stock 1 tbsp pickling spice 2 tbsp minced onion 1 bay leaf 1/4 cabbage, julienned 1 ea carrot, peeled and sliced 12oz pee wee potatoes 5 drops of red food coloring Salt and pepper to taste Place the pickling spice and bay leaf into a tea infuser and add to the stock along with the onion and bring to a boil. Next add the tofu and simmer for 1/2 hour. Next remove the tofu and 1/2 cup of the liquid. Mix the red food coloring with the liquid you just removed and place the tofu onto a sheet pan, pouring the liquid over the tofu. Bake it for 30 mins at 450°.
