A while back I saw a photo in a baking magazine of some brownies filled with shortbread and raspberries and wanted to play with this idea. I didn't have any shortbread so I went with custard creams!
I made Pork Shoulder for the first time today and damn am I proud of this one.
Forgot to take a photo before letting my partner dig in but he seemed satisfied enough from how fast he ate it. (He also has made several trips to pick at more)
It was soft and juicy and the flavor was really good without drowning out the meat. 10/10 Can't wait to make it again.
Recipe under cut
Pork Shoulder (mine was a bit over a pound)
1/4th cup bbq sauce
1/4 mix of half Worcestershire sauce and soy sauce (mine was gf but should work same with regular from other meats ive cooked with a mix of this
Salt to taste
1/4 pepper
an bbq rub i maybe forgot to measure (Rib Rack company)
half a tablespoon garlic powder
half an onion
two tablespons butter
cook on low for 7 hours or until cooked all the way through to pull apart soft (145° internal temp)
About halfway I went in and took out a cup and a half of the liquid buildup so it wouldnt toughen the meat too badly the way my pork did last time i tried to experiment 😔
and i heared that seperate with some random spices added in my own taste for dipping the sandwhich.

I've been wanting to make @thida.bevington (Instagram) scone recipe for a while and now the strawberries in my garden are starting to grow I had the perfect excuse! These straw and marzipan scones were a real hit and I'm so pleased with myself for freezing some for later. Future me will be very happy! And yes I did make them as big as my head, what of it!?
As a side note seeing these did make me laugh because the other day I baked something and needed to prop it up a little bit for the photo so I used a blob of marzipan. Later, when my husband came to eat it he said 'I should have known there would be marzipan somewhere. With you it's either strawberries or marzipan!' so now I get to combine the two 😍
