Thinking. 🤔
going over to doc!ren's place while we're friends, knowing we're staying in (instead of our usual "i know a place" outings or surprise "actually one of us is too tired and we should chill instead" nights). i'm expecting some kind of takeout, like we usually have, but instead he opens the door and i'm blasted with the smell of southern comfort food. when i ask him about it, he tells me he made note of a conversation we'd had about food i ate growing up and decided to try his hand at it.
we'd sit at his dinky little kitchen table and he'd watch for every little change in my expression. depending on what he made, i might get genuinely emotional -- like i haven't had southern biscuits in years bc of my dietary restrictions, so if he went to the effort of making some that i COULD eat... ;_; i'd jokingly ask for his hand in marriage and he'd choke KJNFKJN.
and then he'd pull out something like a peach cobbler for dessert and it'd be Joever for me.
and AND if he'd made biscuits we could have a southern breakfast in the morning? with grits and bacon and sausage and fried eggs? HELLO??? i'm making myself hungryyyyyyy.
(and and AND every time i think about sitting at his tiny little table and knocking our knees bc there's no room... ksdjfnksjn ;;; poor guy never actually expected to have regular company, so he didn't have any reason to get anything bigger than a 1-person table.)

This week featured one of my all-time worst bakes so to balance it out here's tonight's ricotta cake, which was made in memorium for my grandmother, who died a year ago today. Did not realize I was out of 2/3 key flavorings, rosewater and saffron, until it was too late, but she still came out beautifully.

ohhh my god the cheesecake recipe book is american so its AAALLLL cups and tsp (which i can deal with cause ive followed american recipes before) but they tried to make it idk. non-american inclusive by having a metric side but the metric is all mL. like it's ALL cups (solids/liquids) -> mL (liquids) with the except of lb/oz -> g (solids) and that is insane. like sorry americans but unfortunately my sugar and butter and biscuits are not measured in liquids. when i buy flour/other solids the quantity listed at the side (which lets me know if I've bought enough for the recipe) is in grams. beause its not liquid. and WHY is oz (a liquid measurement) translated to g (a solids measurement). I Think Stick To The American System

For those in a rush, I’m re-posting the basic recipe here on my Tumblr. But if you want the full picture-by-picture instructions, nutritional information, and secrets to success you can go to my website.
Here’s what you’ll need…
Ingredients
280 Grams Almond Flour (2 1/2 Cups)*
2.5 Grams Baking Soda (1/2 Teaspoon)
3 Grams Salt (1/2 Teaspoon)
3 Large Eggs, Separated
42 Grams Honey (2 Tablespoons)
2.4 Grams Apple Cider Vinegar or Lemon Juice (1/2 Teaspoon)
Optional
7 Grams Slivered Almonds (1 Tablespoon) for Topping
7 Grams Almond Extract (1 Teaspoon) for Stronger Almond Flavor
Additional Equipment
Mixing Bowls, Cups, Spoons
Kitchen Scale
8-Inch by 4-Inch Baking Pan
Electric Hand Mixer
Wire Cooling Rack
Oven Mitts
Probe Thermometer
Instructions
Preheat oven to 300° Fahrenheit (148° Celsius) and place the rack on the bottommost setting.
In a large mixing bowl, sift together the dry ingredients: flour, baking soda, and salt.
In a smaller mixing bowl, whisk the wet ingredients together: egg yolks, honey, and apple cider vinegar (or lemon juice). Add almond extract if using.
In a medium mixing bowl, use an electric hand mixer to beat the egg whites until soft peaks form.
Gently fold the wet ingredients into the dry ingredients, and slowly add in the egg whites. Mix until fully incorporated.
Pour the batter into a lightly greased 8-inch by 4-inch loaf pan. Wet the back of a spatula with water and level the tops and corners of the batter. Sprinkle slivered almonds over the top, if using.
Bake for 33 to 35 minutes. The internal temperature of the bread should read between 200° and 205° Fahrenheit (93° and 95°Celsius).
Let cool in pan on wire cooling rack for 15 minutes.
Use a knife to loosen bread from pan and turn out onto wire cooling rack to finish cooling.

Making Blinis is easy. They are a delicious little cushion for leftover Manuka Honey and Gin Cured Salmon, and if you have too many, they freeze nicely; so you can bring them out anytime you wish, for a solo treat, slathering them with taramasalata; or should guests show up unexpectedly!
Ingredients (makes 30):
1 tablespoon unsalted butter (+ more for cooking the blinis)
1 cup plain flour
½ buckwheat flour
½ teaspoon salt
1 teaspoon baking powder
2 eggs
1 cup milk
In a large, flat frying pan, melt butter over a low flame until just foaming. Remove from the heat. Set aside.
In a large bowl, combine plain flour, buckwheat flour, baking powder and salt. Dig a well and break in the eggs and add the milk, whisking until combined. Add melted butter and whisk, until well-blended. Cover the bowl with a tea towel, and allow to rest, one hour.
Melt a little butter in the large frying pan, over medium-high heat. Spoon a heaped tablespoon of the batter onto the hot frying pan, repeating until full. Cook, for a couple of minutes. When mixture start bubbling flip blinis on the other side and cook, 2 minutes more. Repeat with remaining batter and butter until you have about 30 blinis. 
Blinis freeze very well; you can store them up to 6 months.
Serve Blinis warm, with Cured Salmon, Cured Mackerel, or Cured Trout.
