Day 265

Wednesday mornings are a dream. The district has given us more planning time, and a shorter class time on Wednesdays. Seeing my students in the morning makes a difference. They are more alert and ready. Today, I read them Mo Willems’s Knuffle Bunny. It’s the third time they’ve heard it, and because they know the story, they are able to participate. And they did. So darling. We did a little glueing activity connected to it, then my teaching day was done - at ten a.m. A few emails later, I headed to my kitchen, my other work space. 

I’ve been eyeing a recipe called French Yogurt Cake with Marmalade.  Somewhere I also read about using leftover cranberry sauce from Thanksgiving. Why waste that? I had about one half of a cup left, so I used it to fold it into this cake recipe. It’s in the process of baking in a square pan, rather than a loaf. Bakes faster, and I’m feeling eager. I may skip the marmalade. Too many flavors. Maybe I’ll go with a lemon glaze. Now there’s a good idea. 

AND...drum roll.....it’s a keeper. 

If you choose to make this, here’s how I changed the recipe: I only used 1/2 cup of sugar, 1/4 cup oil, only two eggs, and a half cup of the leftover cranberry sauce. I baked it in a 4x4 pan for 25 minutes, and used a lemon glaze instead of the marmalade. It’s just wonderful. Warm, spongy, sweet, and fruity.

The Parentals usually visit us every weekend pero nga dahil sa quarantine wala na muna. They have to stay sa kabilang ibayo since andun yung work ni Mama. Day 297

I was inspired the other day by my friend Shawna’s picture of baked feta. It looked so wonderful. We have a Persian market near our home which we stopped in yesterday to buy flatbread and an eggplant. Her photo made me start dreaming about Middle Eastern food. I wanted baba ganoush. But it wasn’t until I started planning the weekly menu that I thought - we need to have baked feta. Tonight! I drove back today and bought a pound and a half of Bulgarian feta. French feta, less salty than Bulgarian, was their other option. They sell big hunks of it in large vats. The store, with shelves and shelves of Middle Eastern products - rose water, baklava, cookies with pistachios, stuffed grape leaves, flat breads, canned goods, and on and on - makes me feel like I’ve been transported to another country. I’m half surprised in there when I hear American English. 

Cooking makes it easy to bring the feel of other places into your home. I was disappointed I only had half of a lemon, but I stretched that out and used it for both dishes, the baba ganoush and the Sheet-Pan Baked Feta.   

Here’s how I make the baba ganoush: Heat oven to 400. Prick an eggplant a few times with a fork, and place on a roasting pan. Bake for 45 minutes. When cool, remove skin. Put the eggplant flesh into a food processor and add 2 minced cloves of garlic, juice of one lemon, 1 tsp salt, black pepper, 2 tablespoons tahini, a little olive oil. Puree. Serve with pita bread or some kind of warm flatbread.  

This morning I made an orange cake. We were getting together with neighbors who live a few doors down and I said I’d bring a cake. I settled on the orange cake because, well, two oranges in the fridge. The Silver Palate Cookbook never disappoints. We sat outside under a blue sky - cold, but they had a little fire - and had a lovely conversation, getting to know each other better. We have great neighbors all around us. We’re are lucky.
