Mashed potatoes aren’t just for supper! Doughnuts enhanced with mashed potatoes allow for a wonderfully tender finished product that is totally unique.
Before you start on your doughnut making journey, it is important to understand the different types of potatoes.

Humble in appearance, the potato was first domesticated in the Peruvian Andes mountain region some  5000-8000 years ago. A member of the nightshade family, the potato is one of the world’s most popular staple starchy food crops. Adaptable, affordable and naturally gluten free, the potato is versatile to assume any role on the table from salads to desserts.
 Mealy vs. Waxy Potatoes
Mealy potatoes like Russets have thick skin, high starch content, and are low in both moisture and sugar content. Waxy potatoes, like baby red or new potatoes are the exact opposite- they’re thin skinned with high sugar content. When making mashed potatoes I prefer the fluffy, starchy Russet potato. The naturally low moisture content of the Russet readily allows easy incorporation of the decadent dairy products which results in the crave-worthy, creamy mashed potatoes of our dreams.

Mashed Potato Doughnuts Chef Ilona Daniel Makes 12 doughnuts
1 cup leftover mashed potatoes
1 cup sugar
1 cup milk
2 Tablespoons butter, softened
1 large egg
3 cups all-purpose flour, plus extra for rolling
2 teaspoons baking powder
1 teaspoon nutmeg
1/2 tsp. salt
canola oil, for cooking
 For the glaze:
2 cup confectioner's sugar (sifted to remove any lumps)
2-3 Tablespoons whipping cream, hot
½ teaspoon vanilla extract
 In a large bowl, mix together the mashed potatoes, sugar, milk, butter and eggs.
In a separate bowl, mix the flour, baking powder, nutmeg and salt.
Stir in the dry ingredients into the mashed potato mixture until you have a thick, sticky dough.
Place dough in a covered container and refrigerate dough for at least an hour, or overnight.
To make the doughnuts, generously flour your countertop, and place the dough on the counter and dust the surface of the dough with flour.
Pat the dough out to a 1/2-inch thickness.
Cut into rounds with a doughnut cutter while you heat 2 inches of oil in a heavy pot to a medium-high heat.
Cook the doughnuts a few at a time, without crowding the pot, until golden on both sides.
Transfer the doughnuts to a paper towel-lined tray to drain off excess oil.
 While the doughnuts cool, prepare the glaze by mixing hot whipping cream, vanilla and icing sugar together.
Dipped the cooled doughnuts in the glaze and then in sprinkles, nuts or other desired garnishes.

A true vintage recipe, century old cake flavoured with butter and ground almonds and speckled with chocolate and coconut.
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
• 4oz Self Raising Flour
• 4oz Butter
• 4oz Sugar
• 2g Bournville Chocolate
• 1oz Ground Almonds
• 1oz Desiccated Coconut
• 2 Eggs
• 1tsp Vanilla Essence
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
1. Cream butter (or margarine) and sugar. Add the beaten eggs and mix well.
2. Add the vanilla essence
3. Fold in the dessicated coconut and Ground Almonds.
4. Add the milk and sifted flour and mix well.
5. This is optional, the recipe here didn't use it but you can fold in nuts, cherries and sultanas into the mixture.
6. Grate in the dark chocolate.
7. Pour into a well-greased and floured or paper-lined round 7inch cake tin or loaf tin.
8. Bake in a moderate oven for 35-40 minutes (or until top of cake springs back when touched lightly) at 180
9. When cool, dust with icing sugar or ice with chocolate icing and sprinkle with coconut.
For a larger cake just double up the ingredients, pour into two separate tins and for the filling use buttercream.
𝗕𝘂𝘁𝘁𝗲𝗿 𝗖𝗿𝗲𝗮𝗺 𝗥𝗲𝗰𝗶𝗽𝗲
For if you're making a two layer cake or want a topping that isn't dark chocolate.
𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨
• 600g icing sugar, sifted
• 300g unsalted or salted butter, softened
• Smidge Vanila extract
𝙈𝙚𝙩𝙝𝙤𝙙
1. Beat 600g sifted icing sugar and 300g butter together with your chosen flavouring and colouring if using, add 2-3 tbsp of boiling water to loosen and beat until smooth.
2. Fill a piping bag with a star nozzle and pipe onto cupcakes or smear in the middle and over the top of a 20cm cake using a palette knife.
I've tried to Google the history of Kentish cake and can't find any information on it, even Pinterest offers no results (I even tried Wikipedia) so if anyone randomly knows the origin feel free to share. According to my nana this was my 'Grandpa's Grandpa' recipe from the family and they owned a bakery so it was passed down.
I remember my mum making this when I was younger and always really enjoyed it - you can add the chocolate on top too or just experiment.

CHEF ILONA: No-churn key lime ice cream pie!

As we find ourselves heading into the dog days of summer, we are in search of fun ways to stay cool.
It’s always a spectacular party if an ice cream cake makes an appearance. Again, when thinking within the context of the hottest portion of the summer, citrus accents are a logical fit to the often-sweltering afternoon heat.
This ice cream cake takes influence from the popular dessert from the Florida Keys, key lime pie. Key limes are actually a specific type of lime, not necessarily a mere name sake of the land mass. Key limes are very small, almost round, and become more yellow as they ripen on the tree. They have a higher acidity and a strong aroma, which makes them an excellent option for baking because their inherent lime qualities are concentrated and the flavours carries well across the flavour softening qualities of dairy products. If you can source key limes, double the amount of limes of those listed in the recipe.

When planning to serve, I recommend preparing it the day before you plan on enjoying it; you want to make sure it fully sets. 
Frozen Key Lime Pie Created by Chef Ilona Daniel
For the crust:
1 cup graham cracker crumbs
4 tbsp salted butter, melted
1/4 cup brown sugar
For the ice cream
1 package (8 oz) cream cheese, softened
1 can (14 oz) sweetened condensed milk
1/4 cup whipping cream
1 tsp vanilla extract
2 tbsp finely grated lime zest, from about 3 limes
6 tbsp fresh lime juice, from about 3 limes
1 pinch salt
Preheat your oven to 350 F.
Use a food processor to turn graham crackers into a crumb. This can also be done by placing the graham crackers into a zip top bag and smashing them all up with a rolling pin.
Mix the graham cracker crumbs, butter, and brown sugar together and pack tightly onto a baking sheet that has been lined with parchment paper. Bake the mixture for eight minutes, the edges will turn a beautiful golden brown. Allow to cool fully and break up the cooked crust into chunks.
Place the cream cheese into a bowl of a stand mixer or use a hand mixer to whip cream cheese until smooth and a bit fluffy. Next, add condensed milk and beat until it is incorporated. Then add the heavy cream and mix until incorporated. Finally, mix in the lime juice, zest, and salt.
Into a loaf pan, evenly spread half of the graham cracker crumble over the bottom. Add all of the cream cheese mixture and spread evenly over the graham cracker base. Finally top with remaining graham cracker crumbs. Freeze overnight or for at least eight hours.

With Valentines Day next week I thought I'd create some sweet treats! 💕
𝙎𝙖𝙡𝙩𝙚𝙙 𝘾𝙖𝙧𝙖𝙢𝙚𝙡 𝙎𝙝𝙤𝙧𝙩𝙗𝙧𝙚𝙖𝙙 𝙍𝙚𝙘𝙞𝙥𝙚
𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴:
• 300g butter
• 150g golden caster sugar
• 350g plain flour
• 100g rice flour
• 150g dark chocolate, chopped
𝘊𝘢𝘳𝘢𝘮𝘦𝘭:
•100g golden caster sugar
•salt flakes
𝘔𝘦𝘵𝘩𝘰𝘥:
STEP 1
To make the caramel, heat the sugar in an even layer in a frying pan until it melts and then starts to bubble to a golden brown. Swirl the pan if you need to keep the melting and browning even. (This happens at around 160-180C making caramel quite dangerous to work with so you can always buy pre-made caramel) Add a good sized pinch of salt flakes and tip the caramel onto an oiled baking sheet set on a wooden board. Cool and then break into chips with a rolling pin.
STEP 2
Easy melt the butter in a microwave and mix sugar in a food processor until you have a smooth paste - unless you're me and just bash manually!
STEP 3
Add all of the flours and a pinch of salt and whizz to form a dough. Tip onto a lightly floured board, pat out gently and sprinkle with the caramel chips. Fold in half and then transfer to a 20 × 30cm tin and push into an even layer - but what I did to create the heart shape was use a cookie cutter and just moulded the dough for baking. Chill for 30 minutes.
STEP 4
Heat the oven to 180c/fan 160c/gas 4. Bake the shortbread for 25 minutes or until golden brown and cooked through.
STEP 5
Cool in the tin for 5 minutes, cut around the edges with a knife and then cool completely - take out and enjoy!
I haven't room for two recipes on here but will add the 𝘿𝙤𝙪𝙗𝙡𝙚 𝘾𝙝𝙤𝙘𝙤𝙡𝙖𝙩𝙚 𝘾𝙤𝙤𝙠𝙞𝙚 𝙍𝙚𝙘𝙞𝙥𝙚 to my blog page 'Bryony - Perfectly Imperfect' but to be honest there are literally millions of recipes out there! I was considering a step by step reel but that required more effort but there's also loads of videos online!
As with all recipes you can adapt and see what works (the classic wing it style is my go to) so you can change to suit personal dietary requirements.
