I'm thinking of changing careers completely (currently an MSW student) and I've always wanted a culinary career but have been terrified to try. Thanks! 🌞

Hi anon!

I am a pastry chef and I'm not going to lie to you, it wasn't my initial choice in life lol. I always loved food and had started as a front of house (host, server, etc.) restaurant worker back in 2015. I had just finished my B.A., Historical Studies and Research in 2019 and didn't know what I was to do after graduating. (I would add that I almost dropped out of undergrad because I realized this was not what I wanted to do halfway through my course work.) Sometime while working at a bunch of chain restaurants, I realized I wanted to be the one behind the line cooking/coming up with my own recipes. I loved cooking and baking already and my soul kept calling me to start somewhere new. So during the first year of COVID, I began culinary school. I graduated as a savory student, but moved onto the pastry side once I started my externship at this well known restaurant in town. I was hesitant at first, but after catching on quickly, I was pretty much wrapped into the role. It helps to have chefs that are willing to teach you and help you succeed. So here I am now, I've been there for almost 2 years.

Advice I would offer especially when you're debating going into a whole new career field:

It is never too late to change directions and start over. The decision is going to seem nerve-racking and terrifying; but if you don't ever step out of your comfort zone, you may regret it later. Choose what drives you, but take into account costs of schooling if you take that route. Also remember to get creative, have fun, yet take your craft seriously. The art of finesse with food is what drives your price point of each plate/item served. Study current chefs (besides Gordon Ramsay lol) and their styles in order to discover your own style. You can always learn a new technique through Youtube University before you ever get to culinary school. Oh! Or magazines, cook books, and other sources.

How do you do your lighting??? It looks so simple, yet it looks so good???? I’m going crazy with lighting LMAO

Movies can be a great way to reference lighting schemes and color palettes from! I'll be using this scene below as an example:

I use either Normal, Screen, Color Dodge or Linear Dodge (Add) layer modes to add lighting. Don't limit yourself to these, experiment to see what works for you :)

Layer 1: Main lighting source.

Layer 2: Bounce light. (Optional - depends on the environment)

Layer 3: Additional glow. Airbrush the light areas to make it more vibrant.
