The Crew and Bulgarian cuisine in Varna
First off, Jonathan. I think he would want to try Shkembe (Bulgarian tripe soup), and love it. Tripe soup isn't common in England, but we know he is open to new experiences and that he is daring. Plus, he used to be poor and it's likely he's been having similar cuts of meat, which was most affordable in England. Tripe soup has variations in Southeastern Europe and the Middle East, but the Bulgarian version adds paprika in particular and, in fact, claims the more paprika, the better. (imo it's up to your spice taste)
Is he trying any in Varna? I say yes. Because tripe soup places are traditionally open all night and morning because they're commonly visited around dawn by graveyard-shift working-class people, sailors, and people who drank the night away. Because it settles the stomach.
After Mina's dawn report, he sometimes goes there to eat, after another night of being up with Mina. He's not been very hungry, but he tries to eat... He needs his strength. He of course asks for extra paprika. He needs to feel somewhat alive.
I see Mina liking fish, and Varna is a sea town. I base this on her surname and her strong affinity with the seashore, mostly. She would really like deep-fried sprats (tsatsa), herring-like fish with lemon and fries. Sort of reminds her of home with its fish and chips. She would like the various Black Sea fishes like shad and goby, and mussels. She avoids going out when she's awake, but Jonathan knows her tastes and brings her seafood.
She tries to eat like a normal human, for him. It gets less and less easier.
Van Helsing may have tried a few Balkan dishes before but I think that he would like local Lozomi Sarmi. Rice/veggie/herb-stuffed grape leaves are a staple starter in the Balkans. I see him in general preferring vegetarian dishes but he'll have some of the ground meat stuffed ones. Dipped in Bulgarian yogurt.
Quincey is a meat lover to me and I can see him loving Meshana Skara, aka assorted meat dish, that includes meatballs, the famous kebapche, steak, and pita. Arthur isn't a lover of the local cuisine but he will try it if his friends are having it. It's what he usually does in their travels. But he eats plenty of Bulgarian yogurt, Kiselo Mlyako. It's sour, and he prefers it that way, than adding honey.
Jack likes trying new things and assessing them, he'll try almost anything once. It's autumn and getting chillier at the seaport, so he opts for warmer food like Gyuvech, a vegetable casserole with beef and potatoes in red sauce.
His insomnia sometimes brings him to overnight restaurants. Sometimes, after dawn, he sees Jonathan there. They sit and eat and smoke together, mostly in silence.

Flag of the Pueblo Sultanate

This is the flag of the Pueblo Sultanate. It comes from a world where the Ottoman Empire established colonies in the New World. The Ottomans began in the Caribbean, and soon went on to conquer Mexico. Eventually, the Ottomans made their way to the American Southwest, and subjugated the Pueblo peoples. Life was harsh for the Pueblo people under Ottoman colonialism. Pueblo people were forced to toil away in silver mines to feed the Ottomans’ hunger for precious metals. Several madrasas were established with the intent to convert the Pueblo peoples to Islam. In theory, the madrasas would provide aid, education, and social services to the Pueblo people. In practice, however, the imams often subjected their charges to horrific abuse. Despite this, Islam did manage to spread among the Pueblo peoples. The Pueblo peoples begged for a savior. But where could he be? 
The Pueblo people received their answer in the form of a charismatic preacher named Po’Pay. Despite the similar name, he is a separate individual from the Po’Pay of our world. This Po’Pay preached the highly syncretic religion that combined indigenous Pueblo beliefs with Islamic liberation theology. This was in sharp contrast to the Islam of the Ottomans, which frowned upon syncretism, and suppressed indigenous beliefs. Po’Pay teachings began to spread, and soon Po’Pay a revolt against the Ottomans. Though the fight was hard, at last the Pueblo peoples were free from the Ottoman yoke. The Pueblo peoples began to think of themselves not as a collection of disparate tribes, but as a united people sharing in a common destiny. 
 Po’Pay organized the tribes into a sultanate, with himself as the first sultan. However, the sultan would not rule alone. An assembly of tribes was created. Representatives of each tribe could voice the opinions and concerns of the tribe to the assembly. Thus, the Pueblo Sultanate became the first representative monarchy in the New World. The Pueblo Sultanate stretches over much of what would be he American Southwest.   The Pueblo Sultanate is famous for begin very tolerant, open-minded, and accepting of peoples with different beliefs. Most citizens practice Pueblo Islam, but don’t try to push it on other people. Most women do not veil, and most Pueblo citizen wear traditional indigenous-style clothing. to Po’Pay developed a written script based upon Arabic, and the Pueblo Sultanate is home to several libraries and other centers of learning. In fact, the Great Pueblo Library is world renown for its expansive collection of books. Qurans are written in the Pueblo script, and the call to prayer to announced in the various Pueblo languages. The Pueblo Sultanate is also quite famous for its cooking. Pueblo cuisine combines cooking techniques from the Eastern Mediterranean with spices and ingredients of the American Southwest. The Pueblo Sultanate has a noticeable minority of Greeks, Serbians, Bulgarians, and Amazighs. They are mostly descended from slaves brought over during the days of Ottoman colonialism.  
Also, the Pueblo Sultanate isn’t actually called the Pueblo Sultanate in-universe, but I couldn’t think of a better name.  The flag includes the sun symbol of the Zia people, and the crescent moon of Islam. This is a reference to the Sultanate’s mixed indigenous and Islamic heritage. The blue band represents turquoise, an important stone to many Pueblo peoples. The green band represents prosperity, and green is a color associated with Islam. The yellow band is there because it goes well with everything else.

In her seminal book European Peasant Cookery, Elisabeth Luard called Romania “a kind of culinary Galápagos Islands.” She was referring to the merging of Nordic influences (as seen in various methods of preservation, including fermentation, fish-drying, and pickling) with an almost Mediterranean use of fresh vegetables and fruit and baking techniques. I feel her description might equally well apply to Ukraine. Sandwiched between Poland and Russia, with Belarus to the north, Romania and Moldova to the southwest, and Turkey a stone’s throw away across the Black Sea, Ukraine’s regional food is very diverse.
Besides, as its borders have been stretched and pulled, Ukraine has been exposed to plenty of other ethnic, religious, and cultural influences, which have been integrated into its cuisine, making it one of the most exciting food culture in Europe. Nowadays, you can find Transcarpathian villages where Hungarian, Slovakian, and Polish dishes live happily alongside the more usual fare of quintessentially Ukrainian borsch and varenyky. This mosaic of influences pervades every family. As a friend in Transcarpathia puts it, “My grandmother was born in Czechoslovakia, got married in Hungary, and died in Soviet Ukraine, yet she never left her village.”
Both Russia and the Ottoman Empire once encouraged people from neighboring countries, known as kolonists, to come and settle in Ukrainian territory. As a result, the southwest of Ukraine is peppered with Bulgarian- and Moldovan-style villages. And in the south, in the region of Kherson, there are also historically German and Swedish settlements. Lviv, in western Ukraine, and Odesa, on the Black Sea coast, as well as the whole region of Bukovina, used to be among the biggest Jewish hubs in Europe. To some extent, these pockets of different cultures remain today, and their heritage still resonates in various local dishes.
