As requested by Dan....cole slaw. After many attempts at other recipes I came up with our favorite recipe for cole slaw dressing---not too sweet, not too vinegary, not too much mayo. ⁠ Cole slaw is great by itself, on sandwiches, in wraps, mixed with BBQ chicken or tofu, or as a simple salad addition.⁠ Cabbage packs a punch nutritionally with glucosinates that fight cancer, fiber to nourish colon health, sulfur to promote detoxification, about 1/2 of the DRI for Vitamin C and over 3/4 of the DRI for Vitamin K---an critical nutrient for healthy blood, bones, and heart health.⁠ ⁠ >>Recipe link.in bio ⁠ In a nutshell: Whisk together dressing ingredients: avocado mayo, white pepper, french herb mix, rice vinegar, and a pinch of agave. Ahhhh-vocado toast with a poached egg. So delicious and pairing an egg with healthy fat and whole grain is a great way to balance fats and add fiber.⁠ Poached eggs are so easy to make and can be made ahead and held in the refrigerator in water until you are ready for one. ⁠ Pro Tip: add 1 tsp. rice. vinegar to the boiling water to help the egg white hold together. Put the egg in a small bowl or ramekin and gently slide into the simmering water. Giving the water a a gentle circular swirl also helps the egg white bind and not separate. This is the. first year my lettuce has been this awesome! The trick? WAIT until it's lettuce season---some like it hot, but NOT lettuce. I've always been to pushy with lettuce and planted it way too early. ⁠ ⁠ Today I even found a heart in the lettuce! @heidihanna⁠ I pick the leaves I need, wash them, then store them in water until use.⁠ ⁠ Lettuces are a good source of folate, Vitamin K, Vitamin C, calcium, phosphorous, magnesium, and potassium. They don't contribute much fiber but do have a high water content. ⁠ ⁠ Grown with absolutely no pesticide or herbicide. I use row covers to keep out most pests and hand pick any visible pests and weeds. Enzo, my duck dog, also helps---he can smell a worm and will pick it off without damaging the leaves. Crazy. pup! The last 3-4 days have been cool enough to remove the cover and let them get a bit more sun. Looks like a ginormous plate of food right? Even as I plated it I thought, ‘how can I eat all of this’? Truth be told, it’s all contained on a 6 inch plate. It was a reminder this morning of how we perceive the food we eat. Portion size of most foods have increased over the years and contribute to an excess of calories. I've been experimenting with sprouted grains. I find they not only taste better, but my GI tract has a greater appreciation for them as well. It is also thought that the grains may be more digestible when sprouted. So when searching for yet another GF pizza crust recipe, I came across this wheat based recipe from @natashaskitchen. I thought this would be a great place to start before attempting to make it with GF flour. I was hooked when I heard Natasha's explanation on the yeast. Most recipes call for too much---of course! After YEARS of trying different wheat crust recipes, THIS ONE IS IT! See her recipe and rationale for more insight. You will love this recipe. LINKIN.bio ⁠⠀ ⁠⠀ Yes, the sun dried tomatoes on the right half got burned...but now I know they need to be under the cheese. This was my test recipe and I learned a few things. First, don't overwork this dough! Follow Natasha's guidance exactly. This is the second pizza where I managed to handle the dough perfectly. The first pizza crust (not shown) was accidentally overworked and I could not stretch it into the right size. Second, I used @thrivemarket Sprouted White Wheat flour. Dan, pronounced it restaurant worthy! He wants this healthier dough on hand routinely. ⁠⠀ This pizza had a brushing of olive oil, chopped garlic and fresh mozzarella cheese to top it. Next I might experiment with GF flours and see if I can get it close to this deliciousness. Any thoughts on flours to use to make this GF?
