Rhubarb crumble
Make this classic rhubarb crumble for an easy, family-friendly dessert. Use seasonal rhubarb and a handful of ingredients to make a stunning pud.

Ingredients
500g rhubarb, chopped into chunks the length of your thumb
100g golden caster sugar
3 tbsp port (optional)
For the crumble topping
140g self-raising flour
85g butter, chilled
50g light brown muscovado sugar
50g chopped walnuts (optional)

Method
STEP 1Tip 500g thumb-length chunks of rhubarb into a saucepan with 100g golden caster sugar and 3 tbsp port, if using.
STEP 2Cover and simmer on a very low heat for 15 mins, adding more sugar if you want. When soft (but still holding its shape) and sweet enough, pour the rhubarb into a medium baking dish.
STEP 3Heat oven to 200C/180C fan/gas 6.
STEP 4To make the topping, rub 140g self-raising flour and 85g chilled butter together with your fingers until you have a soft, crumbly topping.
STEP 5Now add 50g light brown muscovado sugar and 50g chopped walnuts, if using. Mix together with your hands.
STEP 6Scatter the topping over the rhubarb and bake for 30 mins or until golden brown on top.
STEP 7Serve piping hot with a big jug of thick vanilla custard. Refer to the tip for a recipe.

Pineapple upside-down cake

It's time to turn the tables - this upside-down cake will send you topsy turvy.
Ingredients
440g can pineapple slices in juice
1/3 cup firmly packed brown sugar
90g butter, softened
1/2 cup caster sugar
2 eggs, lightly beaten
1 1/4 cups self-raising flour, sifted

5 Method Steps
Step 1Preheat oven to 180°C/160°C fan-forced. Grease a 6cm-deep, 20cm (base) round ring pan. Line base with baking paper.
Step 2Drain pineapple, reserving 2 tablespoons juice. Cut pineapple in half.
Step 3Sprinkle brown sugar over base of baking upside-down prepared pan. Arrange pineapple, just touching, over sugar.
Step 4Using an electric mixer, beat butter and caster sugar for 3 minutes or until light and fluffy. Add eggs, 1 at a time, beating after each addition.
Step 5Add flour and reserved pineapple juice. Stir to combine. Spread mixture over pineapple. Bake for 35 to 40 minutes or until a skewer inserted in cake comes out clean. Stand in pan for 5 minutes. Turn out onto a wire rack to cool. Serve.

CURRY GROUND TURKEY WITH RICE AND PEAS

Curry ground turkey with rice and peas is full of warm, rich flavors but is super quick and easy to make! This 20-minute recipe is great for a weeknight dinner!
INGREDIENTS
1 teaspoon extra-virgin olive oil
1 small onion, diced small
2 cloves garlic, minced
1 lb. lean ground turkey (I use 93% lean)
1 tablespoon curry powder or garam masala
1 teaspoon ground cumin
1 teaspoon ground coriander
¾ teaspoon kosher salt
½ teaspoon turmeric
½ teaspoon ground ginger
1 (14.5 oz.) can diced tomatoes (undrained)
1 cup frozen peas

FOR SERVING:
¼ cup chopped fresh parsley or cilantro
Steamed brown rice
INSTRUCTIONS
Heat a large skillet over medium heat and add olive oil.
Add onion and sauté for 4-5 minutes, until softened. Add garlic and cook another minute.
Add ground turkey the pan and and cook until browned through, about 7-8 minutes.
Add the curry, cumin, coriander, salt, turmeric and ginger and stir well to combine.
Stir in the tomatoes and peas until warmed through, 2-3 minutes.
Serve the curried turkey and peas over steamed rice. Sprinkle with fresh parsley or cilantro and enjoy!

Ingredients
150g butter, softened
2/3 cup caster sugar
3 tsp finely grated orange rind
3 eggs
1 cup self-raising flour, sifted
2/3 cup almond meal
1/3 cup milk
4 stalks rhubarb, trimmed, cut into 2cm pieces
Double cream, to serve

Orange syrup
3/4 cup orange juice
1/3 cup caster sugar
3 stalks rhubarb, trimmed, chopped
Directions:
Step 1 Preheat oven to 180°C/160°C fan-forced. Grease a 7cm-deep, 20cm round cake pan. Line base and sides with baking paper.
Step 2 Using an electric mixer, beat butter, sugar and orange rind until light and fluffy. Add eggs, 1 at a time, beating after each addition. Fold in flour, almond meal and milk. Spoon mixture into prepared pan. Smooth surface. Sprinkle top with rhubarb. Bake for 1 hour or until a skewer inserted in centre comes out clean. Stand in pan for 10 minutes. Turn out onto a wire rack.
Step 3 Meanwhile, make Orange syrup: Place all ingredients in a medium saucepan over medium heat. Add 1/3 cup cold water. Stir to combine. Cook, stirring, for 3 minutes or until sugar dissolves (do not boil). Bring to the boil. Reduce heat to low. Simmer for 10 minutes or until slightly thickened. Strain syrup into a jug. Discard rhubarb.
