Mansaf is the national dish of my favourite country, Jordan…I’ve been there several times and I just can’t get enough of the country, its history, archaeology, culture, food, natural beauty and of course its warm and friendly people. Today I made Mansaf for lunch….it’s traditionally lamb (I used Chicken this time) cooked in an absolutely delicious, slightly tangy yogurt sauce. This sauce along with the meat is piled on to a mound of rice cooked in the flavourful meat stock and liberally garnished with parsley (which I purchased along with the Rosemary) and nuts.
