UGLY delicious
Food is food, but when it comes to you 3 times a day or more... it is a serious matter, you can’t just ignore.
I believe anyone from any country would argue, they’ve got the best food that they are so proud of. So Yes, I’m from a country people are pretty proud of what they are making but somewhat also modest about it. It is complicated. Koreans are too complicated, sometimes you need to read the small hint in between the lines to really understand what the other person really means. You might think it is dodge, but surprisingly it is coming from respecting the virtue of being modest. They think bragging is bad and hiding their pride is good. But don’t worry, you will never have to cringe your forehead to understand my hints between lines. I’m not that sensitive and far from subtle. 
It is quite funny for 1.5th generation immigrant like me, because we don’t think we are fully Korean because more than half of our life or almost everything that I learnt and observed in my life is from non-Korean stuff, but still I have that Korean-genetic inside me. You can’t ignore what you’ve been fed by your parents, what what they’ve been eating that becomes the memory, habit or even nostalgia of some sort... 
I’m suddenly talking about nostalgia because while you are moved from one place, one thing that constantly sticks to my mind and can’t get rid of is the thing that are not readily available to you even though it was so easy to get and is just the most common thing that no one values it seriously. It will float around my head, draw pictures in my eye and finally I will get mad and book a ticket to Korea just to taste it. Simply because it is a dollar worth street food back in Korea and now it becomes frigging twenty bucks rich people’s dish and not even taste the same. 
And when I’m flown over 14hours or more to the destination I dreamt about and and run straight to the street where they sell this delicious food, I will order “One Tteokbokki!” and will say “Damn!! I really missed this bad mama”, crying because it is hotter than I remembered last. 
We all have that one thing we really miss. I bet nothing can replace my tteokbokki to any other gorgeous food in the world. And someone sitting next to be starts by saying... “Well, have you tried Pani Puri?” 
Oh dear.

The Story of “American” Barbeque
My fascination with what makes food so undoubtedly American started while I was bing watching a Netflix docu-series, “Ugly Delicious”. The series stars one of my favourite chef personalities, David Chang. With the help of other food authorities (and a few comedians), he travels across culinary hot-spots, exploring the history, barriers and diversification of various dishes including tacos, fried rice and barbeque. Tacos are Mexican and fried rice is Asian. These are facts very few people will argue. One concept that is addressed throughout each episode is what makes foreign dishes also American. Barbeque, many will argue, is just American. Simply, American.
After watching the episode, I dug a little deeper about the origins of barbeque and what makes it so American. The Spanish conquerors turned “barbacoa” into barbeque. Which was the Native Caribbean method of slow-cooking meat on a wooden platform. By the 19th century, it was a well adapted culinary technique in the South. Since pork was the primary meat (due to its cultivating ease and availability), naturally, it became the primary slow-cooked meat, or barbeque. This new style of cooking allowed for an abundance of food, making it perfect for picnics, church events etc.
Barbeque sauce as we know it was first documented in 1748 when Scandanavian botanist, Peter Kalm noted that guinea pigs were farmed and seasoned with “pepper sauce” by African-American slaves in Philadelphia. Kalm documented that it gave food a “very fine taste”.
Believe it or not, barbeque varies greatly by region or state. What a Texan might consider barbeque isn’t what Tennessean would consider barbeque.
To a South Carolinian, it is mustard that makes a great barbeque. When the Germans first immigrated to America (around 1820), they brought mustard with them, and lots of it. South Carolinian barbeque is pulled pork and other pork cuts dressed mustard sauce which is thinned out using vinegar and seasoned with various spices.
Texans love their beef. Plain and simple. They love their beef ribs, brisket and sometimes their sauce. Some food critics don’t believe in serving a brisket with sauce, equating it to putting ketchup on a steak. If there is a sauce, it is usually the perfect combination between sweet, spicy, and loaded with rich flavour. It’s usually a tomato based sauce with mustard, Worcestershire sauce, chili powder and thinned with vinegar.
Now, when it comes to that familiar sweet, brown-sugar based barbeque sauce you get when you order ten piece nuggets from McDonalds, you can thank Kansas for that. Kansas style barbeque is by far the sweetest and definitely known for their sauce. It is what most people think about when they think of a barbeque sauce- tangy, spicy and sweet. When it comes to their meats, Kansans don’t discriminate, they use a wider variety of meats and really just focus on their sauce. 
What about Korean barbeque or Middle Eastern “Mashwi” - isn’t that also barbeque? 
In “Ugly Delicious”, Chang refers to Peking Duck as barbeque. Peking duck is a roasted duck with a crispy skin, served with “Hoi Sin” (think of it as Chinese barbeque sauce). This imperialistic dish is usually served on occasion. Truly a dish fit for royalty.
While visiting Amman, Jordan I had Middle-Eastern barbeque- Mashwi. It is an assortment of meat, usually heavily spiced with pepper, cardamom, cinnamon, allspice and lots of garlic. Common meat assortments includes marinated and grilled lamb chops (riyash), beef kabab, and grilled chicken.  Instead of sauce, sides are the focus. Tabouleh, hummus, olives, baba ganoush and pita bread are present.
I leave you with a one things, like Chang, I believe nothing is ever one thing and barbeque is no exception. Enjoy your summer barbeque loves.
