Coconut Banana Cookies

1 tbsp egg replacer 3 tbsp water
2 cups all-purpose flour 1/2 cup banana flour (or more AP flour) 1 tbsp maca (optional) 2 tsp baking powder 1 tsp cinnamon 1/2 tsp sea salt
1 package (350 grams) banana paste, cubed
1 cup vegan butter, softened 1 cup cane sugar 1/2 cup coconut sugar 1 tsp pure vanilla extract 1 tsp coconut extract (optional) 1 tsp caramel extract (optional)
1 cup coconut flakes
In a small bowl, whisk together the egg replacer and water. Set aside.
In a large glass mixing bowl, sift together the; AP flour, banana flour, maca, baking powder, cinnamon, and sea salt. Stir in the cubed banana paste until the cubes are all coated with flour mixture. Stir in the coconut flakes.
In a medium-sized mixing bowl cream together the vegan butter, cane sugar and coconut sugar. Add the extracts along with the egg mixture. Mix well.
Combine the wet ingredients with the dry ingredients. (It will take a few minutes of mixing/kneading to achieve a nice rollable texture.)
Preheat oven to 350 degrees F. Grease or line a large cookie sheet. Roll batter into walnut-sized balls. Place balls on prepared cookie sheet and press down gently.
Bake in preheated oven for 12 minutes. Allow to cool on cookie sheet for several minutes before transferring to a cooling rack.
Store in air-tight container. (Freezes nicely.)
Yields; 3 dozen cookies.

So what kinda food does the HSA cafeteria have and what is the main thing?
Given its a very advanced Technology school and many Talerenea members help out, often its a basic menu of things that cater to Vegans, Vegetarians, Allergie friendly, Glutenfree and just simple everything is covered with the basic menu…
Each week there is a few specialty dishes, maybe from another culture, maybe some sort of theme, On halloween there is like Spider cupcakes or something… The Basic HSA menu already covers over 50 different dishes, the school is huge so there is often like many people at once taking orders and working in the kitchen, Angelica is just the head of the this group and mainly in charge.
So each day is busy in the HSA cafeteria.

About the HSA Gym: -Lots of things are already technology locked. Aka use your gem again. Your own personal lockers for your stuff and everything will be set and Psynched up with it, so only you can open your locker -Teachers often only 1 or 2 are present hence their room is so small -there is a pool too for the swimming club and general lessons -The showers are locked as well automatically after entering and open once you press a switch inside the place -often there is enough showers so 25 people can shower at the same time, -Girls and boys dressing rooms are not locked to Cis-Gender, but also as what you identify as, I was unsure about making an extra one but I had no idea what would be better.

Actually HSA infirmary facts: -Beatrice doesn't really do her Job alone, on Occasion some students help out Volunteering as well as Pherea to fetch her stuff, she may only look pretty but Beatrice with her old age and observer powers is quick to find the pain and find spells to mend it quick -There is enough beds to house a whole 3 classes of students, yets still some prefer to stay in their dorm room… if so she has the allowance to get into the dorm despite the whole old rules, cause this is an emergency -Angelica who is close with Beatrice also has a professional doctor as friend if things go that far that someone has to go to an actual hospital, but that is rarely the case cause most can be fixed on its own -Beatrice is kind and Caring to most students but people like Greg who get into fights for unessesary reasons might get the worse tasting medicine or a bit more of a menacing aura from her -Its mostly full on Combat tournament days aside that many also rely on the Exodus dorm as well, but in all some students like Kome or Eleafy are daily people who come for medicines and all

Choose lean meats, skinless poultry, fish, beans, and nuts; replace butter with olive, canola, or vegetable oil; consume low-sugar beverages and limit sweet desserts; ensure adequate omega-3 polyunsaturated fat intake by eating fish or flaxseed, canola oil, or walnuts; avoid salty processed foods and canned goods.
Protein

Tropical Magic Cookie Bars

2 cups vegan chocolate cookie crumbs 1/2 cup vegan butter, melted
2 cans (195 ml each) sweetened condensed coconut milk
1 package (400 g) guava paste, cut into small cubes 1 cup vegan white chocolate chips 1 cup macadamia nuts, chopped 1 cup toasted coconut flakes
Preheat oven to 350 degrees F. Line a 9 x 13 inch baking pan with parchment paper.
In a mixing bowl, combine the cookie crumbs and melted vegan butter. Pour into the lined baking pan. Spread out evenly and press down firmly.
Pour the sweetened condensed coconut milk evenly over top of crust. Dollop the guava cubes evenly over top. Sprinkle the white chocolate chips evenly over top, followed by the macadamia nuts and the toasted coconut flakes. Press down gently on the entire surface.
Place pan in preheated oven and bake for 25 minutes. Allow to cool fully on countertop then transfer to fridge for at least an hour to set fully.
Cut into bars and serve. Store leftovers in fridge. (Freezes nicely too.)

starting over again and again and again

Showing up for myself feels like the hardest thing to do, and I'm noticing...I really would like to change this narrative. What would it look like if showing up for myself was the easiest thing to do? Can I even imagine it? Once other people are involved, I throw myself out of the window, all my hopes and dreams and it hurts - this time really hurts. Other times I've allowed it, I've let it happen, I was happy to do it, but this time, it doesn't feel good. It is so easy for me to listen to someone else for hours, give them my time and space to express themselves, but then I don't do it for me. Why? It took me the longest to even brush my teeth consistently at night. What is going on with that? But this time, this fall hurt a lot. This tumble feels like a big bruise to my inner self, like I let the truest version of myself down. And for what? To not say no to others? To fit in? 11:41pm.
It seems like I'm really good at rejection and failing for this latest chapter of my life, and hiding. I want to heal my digestive system, I want to be fibroid-free and have healthy hormones. I don't want to live in fear anymore. Why have I given up this time around? What did it? It's like the old ways crawled back? It is about 3 things that I pinpointed: control, fear/safety and enjoyment/comfort. I started a new job, and there was a fear that I would be fired. That they will find a reason to let me go and I will be up shit's creek because my money has been dwindling and I'm scared. I work really hard at this job and I don't feel safe, and it isn't comforting. Also, it's a lot of energy being burned up at every shift and if I don't replenish, I end up eating out of depletion and comfort at the end of the shift.
All of this made me really sad today and I didn't have anyone to talk to about this, so I didn't eat and then I ate a banh mi (tofu) and iced coffee and then gorged out on vegan chips and cookies and a seltzer. This is the pattern. But I also recognized something VERY important as I was walking back from CVS: I'm in the inbetween. This is the inbetween and I am walking on the line. And THAT gives me hope. I'm transforming to a whole different person with different habits and different goals and ways to operate in the world and there are certain old ways that pop back, especially when I enter similar old environments. So, I guess I need to give myself some slack and learn to fail smaller. 3 coffees in 3 days equals basta. We can stop at 3. We don't have to go to 4. We can show up for myself now, instead of after the weekend shifts. I don't have to stop showing up for myself because I do things differently, even though it is so hard to say no over and over and over. Maybe the more I say no, the less I'll have to start over again and again and again. That could be an experiment I'll have to try, stay tuned.
I do have to talk about this inspiration moment that happened today? Yesterday? It was a woman that I started to follow via Grace. She was in front of a chalkboard menu that seems to be a vegan/plant based restaurant in a tropical place, maybe Nicaragua? And my heart gave a slight jump, like it perked up. I want that, it said. To make really delicious raw/healthy food in a situation like that. So, I followed her and she just so happened to have a raw food certification self-study course. I really want to take it, but I'm holding off at the moment because it's $166 month for a year and I need to figure out what's going with moolah and student loans and all this stuff is really stressing me out. I miss N. But this is life. And I'm too high on caffeine to go to sleep at my usual time, hopefully I can calm down enough to get some decent sleep before tomorrow.
