There has been a lot of criticism for Zephyr, the son of Esmeralda and Phoebus, looking almost exactly like his father and having inherited only the green eyes of his mother when statistically, he would likely have resembled his mother more in appearance than he does.
But. Think about it.
Frollo was obsessed with Esmeralda.
Esmeralda was imprisoned in the Palace of Justice overnight.
Frollo had free reign in the Palace of Justice.
No one would have come to the aid of a prisoner who was condemned as a witch.
No one would have risked crossing Frollo.
Even if there was anyone deep within the Palace of Justice to hear Esmeralda call for help, which there probably wouldn’t have been in the first place.
The producers know their fandom. They know the fandom will sometimes come up with any and all theories and headcanons. They also know that The Hunchback of Notre-Dame was one of, if not the, darkest Disney movies of all time.
The producers of The Hunchback of Notre-Dame II designed Zephyr to look almost exactly like Phoebus, so no fans could theorize that he was actually Frollo’s son.

It wasn't easy finding a movie clip from "The Hunchback of Notre Dame II" so I have to go with the one where the scenes have been cut and faded together. But I think it turned out alright.
So MJ as Madellaine tries to confront The Joker as Sarousch that she doesn't want to take part of his thievery. But because The Joker as Sarousch pose a threat that he and his men will kill Jason as Quasimodo, she had no choice but to lure him away.
Then as she tries to explain what was happening, the bell got stolen. Then things took a turn for the worse.

The scene in which Quasimodo rings the cathedral bells for Esmeralda was shot the day World War II began in Europe. The director and star were so overwhelmed, the scene took on a new meaning, with Charles Laughton ringing the bells frantically and William Dieterle forgetting to yell "cut." Finally, the actor just stopped ringing when he became too tired to continue. Later, Laughton said, "I couldn't think of Esmeralda in that scene at all. I could only think of the poor people out there, going in to fight that bloody, bloody war! To arouse the world, to stop that terrible butchery! Awake! Awake! That's what I felt when I was ringing the bells!"

Ever since reading your Hunchback of Notre Dame 2 rewrite, I like to imagine that whenever Quasimodo and Madellaine get married in several years, their wedding is on Zephyr's birthday. They don't originally plan for the wedding to be on that day, but once they realize it's going to be around that time, Quasi suggests to push it off for another few weeks so it's on the same day. This way Zephyr can have a new, happy memory to associate with his birthday, instead of just a sad one.
That sounds like a suggestion Madellaine might make. They'd likely ask Esmeralda and Zephyr for permission first.
