When I say no waste- I mean absolutely none! Instead of throwing out your beet stems- you can make a quick pickle by adding some of your favorite aromatics, vinegar, salt, sugar, and boiling water! Had a busy weekend seeing friends - and making new ones - so I don't have a lot of content to share right now. A bigger post will be coming later, so watch this space! In the meantime, enjoy this photo of these surprisingly adorable meringues we made last night, with leftover egg white from a hollandaise sauce I made on Saturday. The hardest part was stopping myself from eating them as soon as they came out of the oven!! For a total of 12 meringues, you will need: 💫 The whites of 3 eggs 💫 150g sugar (we used granulated white sugar, but you can use caster sugar too) Equipment: 💫 Bowl big enough to whisk in 💫 An electric whisk 💫 Oven pre-heated to 140⁰C 💫 A baking tray covered in baking paper OR a muffin tray lined with 12 cupcake cases. Method: 1. Pre-heat oven to 140⁰C. 2. Pour egg whites into bowl, whisk until white, foamy, and creating stiff peaks when you remove the whisk. 3. While continuing to whisk the mixture (I use a slow, 8-formation), gently pour in 1 teaspoon of sugar at a time until it is all incorporated. Don't be tempted to rush this step, as you will beat out all the air that makes the meringues fluffy in the middle! 4. Using two tablespoons, separate the mixture into 12 cupcake cases. 5. Bake in the pre-heated oven for 1 hour. I have been obsessed with rice bowl's lately. They are so easy to make and tasty! On top of being easy to make they also are a great clean out the fridge meal! Every couple of days I go through our fridge to see what ingredients are on their last legs. This way I can use them up and avoid any waste. Not that we waste because we compost but I would rather eat it than the worms! This Greek bowl was made to use up the last of my @laurachenel goat yogurt and a few odds and ends of veggies. First I marinated some chicken in the goat yogurt, lemon and herbs. Baked that up and sliced it onto the bowl. I didn't want to waste the carrot tops that came with the carrots. So I made a dressing with them. A bunch of carrot tops, a smidgen of garlic, black pepper, cream, parsley, chives, 1 chilli, a little salt, a splash of olive oil and a small amount of water. There's a tale about how carrot tops are poisonous, but that's not the case. Carrot greens do contain alkaloids, but so does nearly every leafy green vegetable and so can be eaten in moderation. They have a deep, bitter, peppery taste, so work well with fresh flavours. No waste cooking in its finest 😁👌 Leftover cookie Emma didn't want to finish, a strawberry 🍓, half of a peach, all topped with soya whipped cream (also leftover from chocolate truffle I was making earlier today). Whipped cream is sweetened with agave and shredded coconut. I also added 1/2 teaspoon spirulina powder. 👌 You got to have your superfoods! 😉 😆 Instead of cherry on top I used a "cookie": pulp from making cashew milk this morning, I just smeared on a baking paper and in dehydrator for few hours. No Waste Cooking 💖♻️ Main Ingredient: Beets 🍽️ The Root- the most popular part of the Beet Root plant. Normally this is the only part that gets eaten. We roasted them whole with a salt crust to get the skin nice and crispy. We sliced them into rounds because anything beyond that would ruin the perfection. 🧂 Stems- these almost ALWAYS get thrown away. To utilize them, we thinly chopped the stems into juliennes and separated them into two bowls. In one bowl we did a sweet pickle, and a sour pickle in the other. We let them chill for two hours and then mixed them together with some thinly sliced beet top leaves for a sweet & sour salad 🌱 Tops/leaves- IMO this is the best part of the beet root! We thinly sliced the leaves and used them to make a delicious Beet Top fritter Together- this one beet root plan was composed to create a well-balanced harmonious dish. And the best part- not a SINGLE shred was thrown away. NEW FACEBOOK PAGE!! I have created a new Facebook page to increase the amount of people who has access to my recipes, food waste reduction tips & tricks, and to increase community engagement! Some of the goals of my cause include: 🌳 Building a community of ecologically mindful people who are eager to share their no-waste recipes and lifestyle hacks. 🌳 I want to reach 1000 new people over the next few months. 🌳 Eventually, I would love to create a selection of affordable no-waste products. The revenue generated from sales will go towards local social causes, boosting my pages' reach, and giving me the freedom to increase the amount of ecologically mindful practices I can incorporate into my lifestyle. Making ecologically mindful choices is often a privilege gatekept by limited financial freedom. In other words, it is often only the middle to upper classes who can afford to reduce their carbon footprint, as they can afford more expensive, durable everyday products, and local, organic, and plastic-free foods.
