Oyster Mushroom Risotto

When Autumn days get crispier and chillier, there is nothing as comforting as a heartwarming risotto ai funghi. This Oyster Mushroom Risotto is a bit special, and very tasty. Happy Saturday!
Ingredients (serves 3 to 4):
2 tablespoons unsalted butter
1 tablespoon olive oil
1 small onion
½ teaspoon dried thyme
1/2 teaspoon dried oregano
200 grams/7 ounces oyster mushrooms, dusted
1 large garlic clove, minced
1 ½ cup arborio rice
¾ cup dry white wine, such as Sauvignon Blanc or Chardonnay
3 cups, warmed Chicken Stock
¼ teaspoon coarse sea salt
½ teaspoon freshly cracked black pepper
Parmesan
1 heaped tablespoon sour cream
In a large saucepan over a medium-high flame, melt butter with olive oil.
Peel and finely chop onion. Add chopped onion to the saucepan when the butter is foaming. Cook, a couple of minutes. Stir in dried thyme and oregano.
Roughly chop oyster mushrooms.
Add roughly chopped oyster mushrooms, and cook, another couple of minutes, until softened and browned. Stir in minced garlic, and cook, 1 minute more. Then, stir in arborio rice and coat well in fat, mushrooms, and herbs until transluscent. Deglaze with Sauvignon Blanc. Reduce heat to medium.
Cook, stirring often, and gradually adding warmed Chicken Stock, until rice is cooked and most of the liquid is absorbed, about 30 minutes. Finally, grate in about 1/3 cup Parmesan, add sour cream, and give a good stir.
Serve Oyster Mushroom Risotto hot, with a glass of chilled Sauvignon Blanc.

I've been streaming Hell's Kitchen. I have been saying how hard can it be to make a risotto? I figure by the 5th service you should know how to make it. Well, tonight, I decided to put my skill set to work and see if I can make risotto for the first time. I chose to make a mushroom risotto. I used Lidia Bastionich's recipe as a starting point and then added my own style and touches to it to make it my own. I knew that I couldn't go wrong because Lidia is one of the best Italian chefs ever!! After cooking for 50 minutes, I have created a creamy, rich, delicious mushroom risotto!!! It's heavenly. The rice still has a bite to it, but the dish is creamy as well. The flavors are magnificent, with the mushrooms and Parmesan complementing each other, perfectly 🥰 I should've made this a long time ago. It's easy and inexpensive, and you feel like you're indulging yourself with a luxurious dish of wonderful food that has nourished your body and your soul. Can you tell that I like it? 😊 I wish that I could go on Hell's Kitchen and cook this for Chef Ramsay. I think that he would love it. ❤️ I know that I do!!! I, highly, recommend that everyone try to make risotto. It is fun and satisfying in every way that food can be. Budget-Friendly Mushroom Risotto Recipe:
Ingredients:
- 1 cup Arborio rice
- 8 oz (about 225g) mushrooms, thinly sliced (use affordable mushroom varieties like button mushrooms)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth (you can use bouillon cubes to save money)
- 1/2 cup white wine (optional, you can omit or use a non-alcoholic substitute)
- 2 tablespoons olive oil
- 2 tablespoons butter (or margarine for a more budget-friendly option)
- 1/2 cup grated Parmesan cheese (or a cheaper alternative like Pecorino Romano)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Prepare the Mushroom Broth:
- In a saucepan, bring the vegetable broth to a simmer and keep it warm on low heat.
2. Sauté the Mushrooms:
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes. Remove some for garnish, if desired.
- Set aside the cooked mushrooms.
3. Sauté the Onions and Garlic:
- In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onions become translucent.
4. Toast the Arborio Rice:
- Add the Arborio rice to the skillet with the onions and garlic. Cook for 2-3 minutes, stirring constantly, until the rice becomes translucent at the edges.
5. Deglaze with Wine (optional):
- If using wine, pour it into the skillet and stir until most of it is absorbed by the rice.
6. Begin Adding Broth:
- Add a ladle of warm vegetable broth to the rice and stir. Allow the liquid to be mostly absorbed before adding more.
7. Continue Cooking:
- Keep adding broth, one ladle at a time, and stirring frequently. Allow each addition of broth to be absorbed before adding more. This will take about 18-20 minutes.
8. Add Mushrooms:
- When the rice is almost cooked (after about 15 minutes), add the sautéed mushrooms back into the skillet and stir.
9. Finish the Risotto:
- Stir in the butter (or margarine) and grated cheese, and season with salt and pepper to taste. The risotto should be creamy and the rice should be al dente.
10. Serve:
- Garnish the risotto with reserved sautéed mushrooms and chopped fresh parsley (if desired).
- Serve hot and enjoy your budget-friendly mushroom risotto!

In-game ingredients: Any Mushroom, Goat Butter, Hylian Rice, Rock Salt
I made my risotto with champinjon (?) mushrooms because that's what I had at home, but it'll probably be fun to maybe mix the type of mushroom you use. This i probably not a "authentic" recipe for risotto, but this is just the one we use at home
This recipe makes ~4 portions
I ate this with a cabbage salad and some bread
Mushroom Risotto
oil 1 yellow onion 2 cloves of garlic 300 g mushroom 3 dl arborio rice 1 dl white wine 1 L vegetable or mushroom broth 1 tbsp butter 1 dl grated parmesan salt pepper dried thyme
1. Heat the broth in a smaller pot and keep warm while cooking 2. Chop onion and garlic, wash and slice the mushrooms 3. In a large pot heat up oil and then sauté onion, garlic and mushroom until soft and fragrant 4. Add the rice, let fry for ~3 min until the rice grains are slightly translucent 5. Pour in the wine and let cook into the rice 6. Using a ladle, slowly add broth to the rice, letting it cook into the rice before adding more. Stir continuously while adding the broth 7. When all of the broth is added and the rice is soft, stir in the butter and then the grated parmesan 8. Salt and pepper to taste and sprinkle in some thyme 9. Serve in a deep plate or a bowl
