Jan 2021 Wins
ive “journaled” for 6 months now. it started as small ___ wins because when you feel rly empty, even doing the bare minimum feels like a win. written down some of the wins. i think until now i’d like to keep the “win” part. a win against my shadow sometimes. a win in life. some things to be grateful for. a win for remembering it later in the future. i know some days im just basically doing nothing.  there are a lot of wars not won by me. but im still tryna ✨manifest✨
1 - woke up. watched bts’ 2021 seasons greetings. read trap city. afternoon nap. pupuy’s mbah passed away. i got DOMS in my body even though i did the barest of exercise yesterday (frail, i know). shower, matcha latte.
2 - the x banner atikah and i sent for racil post thesis defense has arrived lmaoo. mom made delicious (and sweet) fried banana. did some studying (more than usual, bcs the bar is on the floor)
3 - ate muesli, 3 risols. Kopsus coklat at flavola. Stayed there from 12-ish to 17:30 lmaooo. weekly bahas soal w/ fi. Rapat nemo
4 - first day of collab module. Barely cicil ukmppd. My mood is normal-ish but i hardly have the will to study. Dinner is fried fish with mentai sauce, potato wedges, and saladdd by mom
5 - collab module, qa presentation for rsui reps. finished reviewing tryout 2 solid. did padi pretest (got 66,5). ate chicken porridge, a bit of muesli and vsoy, tan ek tjoan bread, matcha latte, fish and chicken and potato wedges and salad, fried banana. i ate well today lol.
6 - slept during collab webinar, went to clara’s place to study osce and attended padi together. i ate well at clara’s placeee lol. ate nastar, kusuka, white kwetiaw with soup (?), and lele goreng. went back home @ 9 pm. i feel refreshed. even though we’ve half studied half mukbang all day. human interaction rly does heal me. i need human interaction more than i think. at night i dreamed about going to bali, to waterparks, seeing sea creatures, watching a movie displayed on a concert-like stage and screen at the front row. 
7 - woke up at 07:55, finished my part for collab group work. felt a bit tired today. the rest of fam went to DM, and when they were on the way back i HURRIED my way out, not even taking a shower lmaoo. got pistachio matcha latte at starbucks dm. now im more skilled in searching the best spot in a cafe to distance myself from people lmao. the matcha latte is served with some sort of pistachio cream and sprinkled with nuts on top. its like when sbux had taro matcha latte and it had purple cream on top. the pistachio taste is quite strong. reviewed TO 1 padi, sent proposals for nemo sponsorship.
8 - did syndrome try out and padi 2 web try out. studied for osce and padi @ clara’s place. wanted to order pizza since clara bought me food before, but she insisted in ordering lmaoo. so dinner is pizza hut
9 - woke up at 11.00 lmao. havent had breakfast. lunch is muesli with the brand new delishhh chocolate granola and cimory banana milk. did one shot try out, got 71. had a google meet with Prof Agus (that ethics book ghostwriting job from a year ago is not finished until now huaaa) that went from 20.00ish and finished at 22.30,,,,, reviewed syndrome try out along the way. havent made my collab self reflection hhhh. i also need to study for osce. also havent edited article for bukang solid. and there goes my saturday nooo
10 - i swear i keep waking up late lmao. Flavola w atikah, racheel later came with wawa. Kopsus coklat and ukmppd class w dr yudo. After class i just talked at flavola (and ended not studying osce at all for sunday). Went to racheel's to pray and talk some more. Hurriedly went back for booty call with fi, watched konser dies natalis first. Tryout and sum study with fi and clar that went from 20:30 to 00:10. Powered by left over kopsus and 2 snackit pia. Rip my sleeping schedule
11 - woke up at 10:30 ish, the lack of meal and horrible sleep pattern (for my standard) produced stuffy nose during the day and a bit of headache that went away for a bit after i ate. Late bfast is muesli, drank protein, ate tan ek tjoan, plus 2 brownies in the evening. Tht coaching w dr niken. Did self reflection for collab. Had dinner without rice, as usual. Ukmppd class w dr ayu. Finished reflection at 21:30 lmao (deadline is 23:55). Tryna sleep and my nose is still itchy and i sneeze a more often. i hope it goes away 2mrw
12 - DV coaching, scele tryout, took a nap before padi cause my head kind of hurts. Les padi while drinking matcha with vsoy less sugar and no added sugar. I can withstand the horrible sugarless cy matcha taste bcs theres a taste of soy. Didnt do anything else. Havent studied osce on my own until now. Astagfirullah
13 - my head still kind of aches. Its goes away when im eating. im eating so well during the weekdays that i gained 2kgs lmao. lazed around the first half of the day. padi. finally tried saint matcha and damnn its an amazing upgrade from Cy matcha. the green color is super different yall. Cy’s green looks sick and tired compared to saint matcha. the taste? immaculate (although coco deli is more fragrant). caffeine? hits. awake and feel normal? yes. messaged an ao3 author and got replied and turns out she’s making a sequel for my fav fic of hers. yay
14 - osce practice w ara ren ness. bedah and anak osce coaching. had 3 of mom’s cinnamon rolls and matcha latte for the afternoon. cicil osce DV. edited some pld articles. did nothing else basically
15 - wasted my day, didnt have the courage to study osce (i feel like i procrastinate on it bcs it feels overwhelming to me), TO FKUI 2, hurriedly reviewed to 1 before, les padi. i feel like this is the least focused im being in a les. maybe its the too few matcha powder.
16 - woke up at 9 am. breakfast is muesli. reviewed to 2 fkui w apa salahku (finished at 12 pm, there goes half of my saturday). tried fried chicken master. its good and tender but i still prefer moon chicken. 
17 - breakfast is muesli, banana and 2 martabak tahu. snack is keripik pisang aduuu wenak (and picking bits of meat cooked by mom). went to devi’s place w/ racheel silvi. brought RJ to be wrapped. we watched okay madam and its super fun, hilarious and full of twists anddd a bit of cutesy romance. just the right balance to enjoy and let the stress out. late lunch is moon chicken yay!! went home after maghrib, did to padi 6 w/ fi and matcha latte. talked about a senior’s wedding and eating healthier til 22:30
18 - To fkui 3, wasted my afternoon playing my phone, finally mustered some will to study after ashar. My progress is rly slow today. Watched hilarious jessi interview with eric, heechul. Im telling u, i thought tiktok is the funniest internet content but i was wronggg. Seeing heechul flustered is hilarious. Tried to study again at night but only learned 1 disease hiks
19 - had no idea what i did before dzuhur lmao. went to racheel’s to surprise atikah. actually napped at her place lmaoo why do i feel so sleepy. gifted rj to atikah. we ate fried chicken master and pempek on a small green table and talked. its like korean movie lmao. we talked while im simultaneously listening to padi lol.
20 - woke up at 8, chicken porridge + muesli and low sugar vsoy for breakfast. arrived at clara’s @10am. to fkui 4. reviewed it. reviewed general physical exam. finished up to padi 7. tried bombo donut. studied osce. i felt sooo dumb in osce (and clara is already super smart). superrr motivated to learn after going back home (arrived at 7) but i ended up opening youtube and drinking protein lmaooo and its suddenly 9 pm
21 - matcha latte at starbucks dm. Studied osce. Obgyn coaching w the super kind dr ilham. Les padi. Read angel buddy and played with my phone til 12 pm
22 - to fkui. padi as usual. had low motivation, so i did the tryout that day close to the actual course.
23 - left home at 06:30 to study together in capitol. had breakfast in mcd first. thank god i ate rice + chicken and breakfast wrap cuzzzz. studied osce together w ara, ical, kelvyn, dio and kak ilonka til about 2 pm. WALKED to bk bcs my parents are there. apparently simply driving to capitol is too much for them. immediately ate muesli at 4 pm cause i didnt eat anything in capitol. did nothing else after that. did not pray maghrib together lmao somehow mom had mercy on me and let me sleep som more. mom bought sate padang but i didnt eat it. i cried in bed because as yoongi said, “this is the real you and this is the real me”. did not shower/wash my face at night bcs i felt like shit lmao rip my face (its a week before bukang photoshoot)
24 - i feel tired, lazy, and just wanted some sleep. like all that’s in me is drained. ate muesli with strawberry milk. tried fitmee beef. its better than i thought. because the noodle is chewy you spend more time to chew. also ate fried chicken and daun singkong. usually i cant wait to go to flavola but even at 12 pm i just feel like laying down. finally mustered the will to shower and go out. its raining a bit on the way. colddd. 
25 - to fkui 6, osce briefing, covid lecture (that was actually for ppds), padi
26 - spaghetti for brekkie, coaching neuro and ophthalmology, cicil osce
27 - cicil osce, the second to the last padi omg. the fastest padi ever
28 - obgyn osce practice at kak ilonka’s place (that nice kosan at forkabi) with ara, ren ness, kelvyn, dio with mannequins from og dept, tried meokja salemba that serves bulgogi rice. quite good. after arriving at home, studied neuro together with menno til about 20:45 an and i just dont have the energy lmaooo so i gave up and slept
29 - today is bukang photoshoot at bintaro. put base make up on the way. even put glue on my eyebrow. got eyebrow, eyeshadow and blush done by renata. took lots of photos. nebeng om coro afterwards to bxc to meet mom. we ate at genki sushi (renata ara kris mendel oca regan geordie eka). i missss road trips hua. did tryout fkui on the way back home. after shower and prayer proceeded to review TO with apa salahku. Last padi (havent done the questions beforehand so i sprinted it out while on the actual course). Muhasabah osce with kak widia afterwards lmao. Studied osce with clara
30 - studied osce with ara ren ness @ merra. I ate eatlah, moms muffin, kemplang, tango. I ate so welll. Its a productive sesh, neuro and infectious disease. At home i studied osce w clara til abt 22:15 ish. I feel like i miss my me time lmao its been 3 days. I can still go on w clara but i dont wanna get myself sick
31 - simul osce in the morning. Osce study with clara almira. Cicil osce alone. Played my phone at 10 pm even though i still have mental clarity post matcha latte -___-

Homecookings [March ed.]
How was everyone’s March 2020??!
Here’s mine: Started off the month with staycation, which I didn’t get a lot done (nowhere close to what I had planned) but at the same time, I got quite a lot done. I’m referring to a newly self-taught skill, which is ink painting. I busted out my ink block FINALLY. Those ones where you gotta swirl & melt it in a water reservoir. It’s super old-school & it’s how oriental ink painting is supposed to be done (the liquid ink bottles are modern-style). The ink block has been around for so long; & for the longest time, I didn’t want to start using it bcos I didn’t wanna ruin it lol I wanted to “save” it. But you know what? LET’S GET IT!!!! Every day, I worked on a painting, & I actually ended up with 10 in total. It wasn’t as hard as I thought; I tried different styles, & after 10, I think I have a good grasp of the technique!

I rarely talk about current events on this blog bcos it’s a place for me to document my food adventures as well as travel-related (but mostly food-related) topics, with the rare appearance of Kpop/Kdrama talk. But things have been CRAZY in Alberta! With the COVID-19 ‘formally’ entering the province early March, & ppl hoarding things, to school closures & online classes.. . now semi-lockdown, where only essential service is open, etc.. . The province has, is, & will be going through a lot of changes, as a whole.
To say the ‘official entry’ hasn’t impacted me/my life at all is a lie, however, the impact has been very minimal. Since starting mid-March, there has been daily updates regarding the cases by our Chief Medical Officer of Health, Dr. Hinshaw. *My personal view only* Everyone’s situation is different, & I fortunately, am able to keep my lifestyle pretty much the same at this point. I’m a pretty big home-body to begin with, & as much as I love seeing my friends, I don’t see them that often anyway due to shift work *shrugs* so in terms of the practice of social distancing to my social life, in all honesty, not much impact. 
Well, what about my work?! Am I sent home to work???! No. Don’t wanna go into too much detail here, but I will share a little. As a medical laboratory technologist, PPE at work + hand-washing practice is “normal”, as in, there’s nothing to change about it. I may wash my hands more, but ppl that hang out with me know I sanitize/wash hands often anyway so. .. I’m still going to work as a regular full time, doing the things I do; we are an essential service & we gotta be open no matter what! The company has adopted some recommended guidelines put forth by Public Health, such as, “sick leaves” (+ follow up) have now expanded in definition, & staff gets mandatory temperature check at the entrance before we enter the facility. The biggest change at work has been the change in work volume - we are so used to busy, busy, busyyy & now it’s like “let me pick up the next phone call pls!”
Anyway, didn’t mean to start off with such a loooooong update ... Let’s start the real deal: homecookings this month!

^ KitKat-covered wafer rolls. I find milk chocolate reallllyyyy sweet so I melted some tiramisu KitKat with some brewed coffee (1. to de-sweeten, & 2. to make the mixture more runny). I crushed majority of the KitKat but I aimed to keep some wafers as large-ish pieces to fulfill texture-building. Then I poured the mixture on top, let cool, then cut into individual pieces.

^ I then up’ed my game, & nearly tripled the amount of coffee that I used the 1st time. The resulting melted KitKat + coffee mixture was very bitter - just the way I liked it. I didn’t use as much wafer rolls this time bcos I couldn’t; that’s all I had left in the house. But I had some chocolate mix left; thus I just scooped some over Oreo thins.
PS: Oreo thins wins!
PPS: For both experiments, I used half of the large KitKat bar! mmm.. coffee amount was pretty much YOLO-’d.

^ Kimchi + chicken mini tacos. Stir-fried up some chicken breast & cut up kimchi, & scooped on top of soft corn flour + wheat tortilla tacos. Added some mozza shreds & green onion after.

^ Another fusion soft taco, consisting of Costco fries & basa fish fillet that’s been cooked in pasta sauce. Decided to add some bacon ranch dressing as well. This was surprisingly a success! I’m not a huuuuge fan of fish, in general. I’ve never tried basa with tomato + herb pasta sauce. I was gonna eat the basa on its own like that, but then I thought, let’s fish taco-it! Got a nice crunch & softness of the basa in 1 bite :D

^ Beef + cabbage with flat rice vermicelli noodles. This is like my home-made bun bo hue but with a looooooot of cabbage bcos I love cabbage! I used the canned pho soup (diluted it with water), some fish sauce, & fire chicken sauce! Doesn’t look like much, but it was spicy!

^ baked salmon - used coarse sea salt, fresh ground black pepper, furikake, & white truffle olive oil. YUM!

^ another baked salmon. I know this probably sounds stupid, but I’m 100% transparent about it haha I have a foil sheet on my toaster oven tray, & I’m not a fan of changing it out every single time, so I’ve come to a consensus with myself that I’ll bake, but use some other dish as a vessel, instead of “baking” on a tray or pan. The last salmon, I used a white dish - it was SO hard to wash afterwards. So this time, I used one of these stainless steel dishes my mom has (& uses for steaming). It was less of a mess!
Anyway, what flavour is the salmon here? Salt, fresh ground pepper, garlic, & honey!

^ cheese tortellini with pan-seared chicken breast. I made the sauce using: milk, butter, salt, dried parsley, & 2 slices of Kraft mozza singles. Topped with more dried parsley & fresh ground black pepper. (Don’t worry! I had steamed broccoli on the side for my “greens” portion.)

^ Vegetarian bibimbap. The fried tofu was store-bought, but I cooked it in Korean soy sauce + sugar, so kind of like braised tofu. Mixed salad greens at the bottom, then rice, then the tofu; lastly, some sesame seeds + bibimbap paste.

^ Ramyeon with mixed greens + chicken breast. Gotta keep it healthy! haha you might find that this is weird - to put salad greens in soup. But let me tell you, use a small amount & try this the next time you buy these veggies. Like just try! If it fails & you don’t like it, you won’t waste too much of it. When you pour soup over it, the greens start to “cook” & decrease in size significantly. With these salad greens, this ‘sorta cooked but not cooked’ texture is another way I personally enjoy them.

A glass of milk.. . the base for dalgona “hot chocolate”. Do you think it worked or not?
I used 2 tbsp hot chocolate powder with 1.5 tbsp sugar & also 1.5 tbsp of warm water. I manually whisked for a loooooong time, but it didn’t really froth. It became more dense if anything. But anyhow, I ended up with a somewhat heavy product, but was able to *feel* there was some air in it. I went for it.. . scooped it on top of the milk.. . And.....

This happened! It did not build up on top, but settled nicely at the bottom lol. You try with hot chocolate powder & let me know if it worked for you or not! :P

^ Post-night shift brunch =] I try to eat somewhat cleaner when I’m on nights by doing less meat compared to my usual diet. I don’t know what it is. .. I just crave more vegetables + non-meats. So I made braised tofu (just soy sauce & sugar) & cabbage soup (seasoned with gochujang & salt, so it’s a little spicy). It looks really red but it’s actually very mild.
All in all, pls stay home if you can during this time. If the sacrifice isn’t done now, the result will be much more devastating later down the road.

INTRODUCTION TO KETO Keto is an amazing diet and/or lifestyle that when paired with multiple other forms of healthy choices can be a quick way to lose a few pounds or a healthy way to live longterm allowing you to still enjoy life without estranging yourself from your friends and family.  It is very flexible and people that stick to keto find themselves in love with it and raving about their success, as long as they gave it the proper chance! I myself lost ten pounds the first week I did strict keto and I knew then I was hooked!
SCIENCE BEHIND KETO AND WHY IT WORKS The common american diet is very high in sugar, carbs, unhealthy fats, caffeine, sodium, etc. This recipe is a disaster waiting to happen, heart disease, obesity, cancers, diabetes, among a plethora of other terrible life stealing diseases that effect millions of americans. Whether you do a low carb, or low calorie, or low red meat and fat diet, the idea remains the same.  Reduce calorie intake vs output, avoid foods that cause inflamations or gastro-intestinal upsets, and eat filling whole foods that offer a lot of nutrient density. Now, the reason that keto works so good is the science behind the diet: When you reduce the amount of sugar (glucose)  your body intakes, which is its normal source of fuel, it panics, uses what it has, burns glycogen which is stored in the liver and muscles, and finally switches your body to KETONES (which burns FATS for fuel instead).  When your body is in Ketosis, it will burn your body fat and consumed fats for energy, to do normal body functions.  This sounds like a miracle, and I can honestly say it is.  Most average americans have anywhere from a 20%-50% body fat ratio, men usually on the lower end of that, where anything over 30% is usually considered overweight.   That being said, most people have a lot of fuel to burn that they would never have burned if they were eating a large amount of carbohydrates that the body prefers to burn first.  You literally have your own fuel just waiting to go, and you will feel awesome when you see the fat melting off your tummy, thighs, back, face.  :D
Myths and Misconceptions When I first started keto I thought I could eat as many hot dogs, burgers, chicken wings, ranch dressings, etc as I could stuff in my face.   Truth be told you can, but your body will be severely lacking vitamins and minerals that you need to be healthy so I would suggest making sure to vary your diet, always include a healthy fat (example: salmon, avocado, macadamia nuts) and lots of greens whenever possible.  If you absolutely cannot, taking a high nutrient density multi vitamin is really smart, as well as looking into electrolyte mixes or supplements. People will try to bully you or shame you for not eating "just one this" or "you have to try a bite" and after a little while, you absolutely can! But during the first month or so, til you become "fat adapted" it is best to be as diligent as possible, and you will be really proud of the results. Not all fats are created equal:  While dirty keto does exist and sometimes is necessary, try to remember that quality of your fuel will always dictate how you feel.  Will you feel better after a slice of greasy pizza or a big salad with lots of veggies and roasted turkey? Easy concept. You don't have to starve yourself.  This was the hardest part for me to learn at first.  Keto foods are filling, yummy, and full of flavor, so eat til you're about comfortably full and give the fork a rest.  You'll find you're sated for many hours! Not all people get the keto flu.  Some adapt to eating high fat really well with minimal issues.  If you are feeling dizzy, lightheaded, or stomach sick, make sure you have plenty of water and if you need to, have a shot of pickle juice or a sprinkle of salt in your water.  Vitamin water ZERO is also a decent way to get electrolytes without having to spend a lot on a supplement.  I'd avoid zero sugar gatorade though, the sweetener in it is sucralose which is bad for ketosis.
NOW TO THE FUN PART: THE FOOD! I do most of my shopping at a normal grocery store, and most of the things I mention can be bought at meijer, target, walmart, or whatever your local chain is. Buy organic if you want! But it isnt necessary.  Meats and dairy foods are best when bought all natural or organic if possible.  Look for words like grass finished, or pasture raised.
Breakfast ideas: Omelets - add whatever meats veggies and cheeses from list fit your choosing Cauliflower "hash" - sautee pieces of cauliflower with meats, veggies, top with cheese and let it melt :D keto "cereal" - 2 cups unsweetened coconut, sprinkle with cinnamon, stevia, coconut oil, pecans, macadamia nuts, whatever.  bake two minutes per side around 375 til toasted.  cool and serve with unsweetened hemp, oat, almond or soy milk and fresh berries if you want! Chorizo and eggs with avocado and sour cream - they do make turkey chorizo too! or make your own by adding hot sauce and spices to ground turkey.  :3 "Two Good" Makes a super low carb yogurt that tastes amazing  - i eat it with berries or a "Quest" brand protein cookie for breakfast! Chia pudding - 2 T. chia seeds, milk substitute or water, stevia, and whatever flavor you want to add! Peanut butter, cocoa powder for PB cup,  raspberry/almond,  blueberry/pecan.  Chill overnight, awesome grab and go Egg muffins  - mix up eggs like youd be making scrambled eggs, add some ricotta or cottage cheese (full fat only), add toppings, bake for 5-10 mins til middle is set (use a tooth pick).  Can freeze and pop in microwave or last a week in the fridge.  I like mine with pesto and mozzarella with tomato on top.
Lunch ideas: La tortilla factory low carb wrap "blt" - these tortillas are amazing and come in many sizes.  If you cant find those, find any brand that says "low carb" - look for net carbs under 6 for best choices.  Add avocado, turkey bacon, mayo if desired, lettuce, tomato, peppers, etc.  Eat with cheese chips (recipe in snacks) Soups:  Creamy chicken chili, broccoli cheese (substitute heavy cream and broth in place for milk in recipes) bone broth veggie soups (imagine PHO or Ramen with no noodles!) MAKE A BIG ASS SALAD WITH WHATEVER MEATS AND CHEESE AND VEGGIES YOU WANT   (that are safe on the list ofc) this is what i do a lot, and i put the dressing on the side so i can just munch on it throughout the day without it getting soggy.   If you find yourself picking certain parts out of your salad right away, try to focus on those more until your body is craving other things.  Some days i eat my meats right away, others i eat all my veggies.  Your body often tells you what you need without even realizing. If you're a grazer make a fruit and nut tray, or "lunchables" almost. There is a recipe for whats called CLOUD BREAD. It's basically like a fluffy meringue that is made with cream cheese and eggs. I dont make it a lot, I almost always would rather have those wraps.  They're that good and last longer :D Try to keep things with you that you know you will eat, rather than things you think you're supposed to eat, because cold fish sounds disgusting vs that yummy five piece chicken tender with hot sauce. >_>
Dinner Ideas: Dinner is my forte because for a long time I was doing OMAD keto, aka "One meal a day keto" where I would fast until dinner every day, except for coffee, tea and water.  During these times I dreamt up many cheat meals that I JUST HAD TO HAVE and went home and keto-ized em.  If there's a will there's a way, bahahaha. OMAD is not recommended at the start of ketosis because you may feel low on energy or dizzy sometimes and we want to avoid bad feelings during initiation so when you see the success you have you won't have a negative feeling as to why it happened.
LITERALLY IMAGINE YOUR FAVORITE DINNER. Whatever you're craving.  You can hack it. We got this.   Chinese/Take out? Easy mode.  You can make stir fries, fried cauliflower rice, sweet and sour chicken (using parmesan for a crust!), peanut "noodles" or "zoodles", egg foo young, etc! American: Wings, burgers, brats/sausages, grilled chicken, etc - most cook out foods in whole form are totally safe. Pair with grilled veggies or a salad, or make a pasta salad from zoodles with homemade italian dressing.  YUMMMM bish Italian: Low carb tomato sauces and "noodles", Fat head Pizza (link to fat head dough recipe will be at bottom.  This shit is dope.  I never even liked pizza before this).  Chicken Parmesan, "Spaghetti and Meatballs", Lasagna: AND OMG GUESS WHAT. Alfredo is like totally fair game, and its really good with mushrooms and chicken. :P Mexican: HOLY FUCK I EAT THIS STUFF SO MUCH.  Like, pretty much everything but the chips and rice are totally gucci for keto.  Taco/Burrito bowls, fajitas, ceviche, salsa, avocado salad, guacamole, and for dipping I make cheese chips or thin slices of cucumber spritzed with chili lime and salt. Greek: Greek salad, schwarma, gyros (either without bread or use the low carb wraps), hemp seed "Falafel", tzatziki sauce, feta cheese, olives, etc. I have even made indian and thai curries, moroccan food, middle eastern We have made chicken tenders, french fries, chips, "nachos", fish fry, breaded mushrooms, mozz sticks, cheese curds.  All your craving foods! The internet is wonderful for this, just make sure you are paying close attention to how much a portion is, or if its higher in carbs than you're allowed for the day.

This is a nice shopping list but I find it is sort of strict.  Try to stick to these items to start but You can add in things like more nuts or avocados, almond and coconut flours (to make cakes and breads!), and higher starch veggies and fruits as time goes on.  I get down on some cantaloupe pretty often, and have a cupcake at least once a month.
Intermittent Fasting IF is typically considered an advance technique or body reset especially after big meal days or cheating, and while it has amazing health benefits, I would suggest you research it yourself and decide if it's right for you.  I had a lot of luck with it because I hate to keep track of my calories on an app so I knew if I ate whatever I could within a five to seven hour period that the chances that I would eat more than 1800 calories would go way down.   Each person is different, if you feel physically hungry, don't deny that feeling. What to do when you go out to eat We live in a time where many people eat low carb, or restaurants are very willing to wiggle with ingredients or substitutions.  Remember that nicer restaurants appreciate this less, but if you know that it will be happening, you can always call the restaurant and let them know in advance.  Many chefs are reasonable and want your business and willing to help. Always check the menu for words like, naked, ask for sauces on the side, try to stick to things that are usually safe, blue cheese, ranch, vinaigrettes, mayos.  When a dish comes with a carb side, most places will double up on steamed or grilled veg for very little extra or no charge.  I get steak with a literal dick ton of broccoli or asparagus and lotsa butter and its good and filling. :D Burgers can be put on top of a side salad , or ask for a lettuce wrap.  Make sure wings and chickens arent breaded before frying or baking.  Chinese restaurants usually have a section that has all the same ingredients but sauce on the side and veggies steamed, good for when you go out.  Egg drop soup is usually ok as long as you don't eat a gallon of it. If something comes that you really want, but can't have, just have one small bite and cover the rest of it with too much salt or ketchup or something than you can handle, or trade it away.  This will prevent you from eating it all. There's lots of options and understand that whenever you go out, there is a chance that you might slip out of ketosis.  Don't be discouraged because a small slip is a lot easier to deal with than a big one, and you will feel fine within 12 hrs.
What to drink and when Coffee, espresso, unsweetened teas, club soda or la croix like drinks with zero fake sugars added (look for aspartame, sucralose, dextrose, erythritol, etc), pure liquors with no added flavor or sugar (vodka, gin, whiskey, rum, tequila), dry red wine (cabernet, merlot) dry white wine (sauvignon blanc, brut champagne, pinot grigo, chardonnay).  Keep in mind that alcohol still contains a lot of calories and while it will not likely bump you out of ketosis, it does delay your body burning calories because it is too busy trying to destroy the evil alcohol from your bloodstream (dramatic music) so limiting intake in the first month really helps you to get in the swing and feel good and hydrated :P. Side Note: Ketal One makes new no sugar added Botanical Vodka and the Peach one and the cucumber mint one are fucking amazing, the end.
"Carb cycling" cheat days, and how to IF YOU KNOW YOU'RE GONNA CHEAT mentally prepare yourself for that.  Know what you want to eat, what isnt worth it, and how to stop yourself when you are done.  Ever been on a bender where you drank like three days in a row and by the end you're like dude wtf happened all I wanted was to drink friday night and now its sunday where did it go".  This has happened to me lots with holidays and special occasion weekends, and the best advice I have for you is to pay attention to how cheating makes you feel.  Don't feel guilty unless you feel bad for your progress or your body.  Sadly, potatoes make me feel like garbage so I try to avoid them like the plague even when I do cheat. Try to not eat for as long as you can handle after you cheat to allow your body some rest and to burn the glucose and glycogen that may be still in your system.  If you feel good enough some cardio or lifting may help to get you back in faster. Ultimately, if keto is a lifestyle for you, remember that life happens and its ok to be human, and eat things that are unhealthy as long as its not the normal.  Remind yourself that you deserve to be happy as well as healthy and balance that in your mind.  Being positive and recognizing this will help you to not fall off the deep end either way, by being too strict or completely abandoning keto, which often in the early phase will lead you to gaining all that weight you lost back. Carb cycling is a form of keto diet for athletes or very physical people who benefit from a quick carb before intense activity in order to feed their muscles or whatever but as I am not one of those people, I just stick to my higher carb fruits and veggies when I think I might go for a run or walk, or drag my ass down the road, whatever you'd like to call it. >_>
Things to avoid that are a waste of money Don't buy "exo ketones" or "Keto drinks" or powders, anything "bullet-proof" is basically bullshit, you can make the same things for zillions of dollars less and it will taste better as well. Keto urine strips are pretty much just a waste of money, they aren't really indicative of where you are at. Expensive "keto" supplements aren't necessary, take your multi and drink your electrolytes and you should be good to go.  Keep in mind if you are an intense athlete I am not so like talk to your doctor or coach dude.

Not a single day has passed by with the vision of myself as a junk food vegan prior to my dietary changes. Until now. Me, the most headstrong, discipline and will-powered individual that I personally know, one who lost more than thirty pounds, survived a juice cleanse and exercises 99% of the year, became a junk food vegan. If it happened to me, then it happens to nearly every single vegan newcomer.
The question is, why did it happen to me? The answer is relatively easy, actually! First of all, being introduced to the college lifestyle ignited me to avoid the Freshman 15 at all costs. No Waffle Wednesdays. No free pizza. No late-night beer. No Red bull. And avoiding all of that was darn easy, not just because they weren’t vegan, but because even if vegan options were offered, I couldn’t afford to let myself go at such a time.
My diet was based off of completely whole foods. Lots of vegetables, sweet potatoes, beans, tofu, whole grains, leafy greens, nut and seed products, and some vegan treats that were used as condiments rather than snacks or desserts. My college town in itself has a limited handful of vegan restaurants and options that my schedule never allowed me to visit. Studies kept me on my toes, completely occupied from even thinking about visiting the newest vegan hotspot in town. This path undoubtedly led me to success. However, the anticipation for returning home, the city of vegan abundance, could not be stopped.
Stepping off of the train and feeling my feet touch the concrete of Los Angeles felt like the equivalent of dipping my feet in a warm fish pedicure bath where the garra rufas eat the dead skin, tickling away and away. Nothing felt more amazing. Finally, vegan heaven, I have returned. I instantaneously pulled out my restaurant bucket list and set eyes on the most practical destination.

Restaurant hopping began the next morning. I drove straight to one of my favorite vegan-friendly Indian buffets and stuffed my belly with the most delicious soy chicken tikka masala, chana masalas and eggplant curry–three times in a row. Inevitably, I dragged myself into food baby mania and got stuck with a Buddha belly for several days. One restaurant off the list, complete.

The preceding two days were a little better because I ate more fresh vegetables, sweet potatoes and home-cooked meals. However, right after, I hopped back on the fast food wagon and ordered vegan Chinese takeout, which by the way, is always covered in heaps and heaps of salt and oil. Indulging in vegan kung pao chicken was already incredible, but the veggie “chicken” drumsticks was a completely separate sensation in itself. The thickness, chewiness and umami qualities of the “meat” felt so satisfying to bite into and I yearned for more.
Of course, I had to annihilate the rest of the drumsticks for dinner the same evening!
And it doesn’t stop there. I had vegan soy pumpkin-flavored frozen yogurt the same day. Nothing sugar free, fat free, or carb free. Totally full fat, sugar-laden, calorie dense, soy ice cream based froyo with The Lion’s Pack edible cookie dough, dark chocolate gingerbread Bark Thins and Trader Joe’s pecan praline granola. Still regretted nothing.
And let’s not forget my visit to Cafe Gratitude, shall we? If you haven’t read or recalled the recap, I heartily enjoyed the restaurant’s Serene cinnamon roll for my pre-brunch treat. Sure, I could release some off the guilt because I split it with my sister and we had leftovers to take home, plus the brunch components themselves were quite healthy being full of plant-based whole foods. But I could have easily passed.

  Drumroll, if you please, for the grand platter that landed me the title of a junk food vegan: Vinh Loi Tofu‘s vegan nuggets and tofu french fries! As much as I wish they did, the tomato and butter lettuce could not cancel out the oily deep-fried coating of the nuggets as well as the corn syrup from the ketchup. Driving in the windy cold to purchase my food was indeed quite the hike, but after first bite, I had no regrets whatsoever. The nuggets tasted miles and miles better than any other chicken nugget I’ve ever had in my life, plus the tofu fries yielded the perfect texture and flavor with the ketchup and Sriracha sauces, especially when wrapped in the butter lettuce! Any McNugget had NOTHING on these bad boys. I mean, I could say that this meal was packed with protein, but it was also packed with a crazy amount of oil and added salts!

    Wait a minute. The Beyond Burger counts as a healthy meal if you take off the bun, right? Cancels out the Follow Your Heart American cheese, house made sauce and sweet potato fries that I pulled from my dad’s plate, right? No? Well then, that still doesn’t change the fact that upon slicing into the Beyond Burger patty, I was absolutely shocked that the texture resembled the meaty tenderness of actual beef, not to mention that the taste and the flavor scared me out of my pants silly because I thought that I was being fed the REAL DEAL. Same story with the American cheese too!
What prompted me to stop bouncing off the streets of Los Angeles, might you ask? Well, for one, my parents bought groceries that needed to be eaten. But for the other, my taste palette became more and more desensitized as I consumed stronger-tasting and heavily refined foods. What I thought was sweet became duller and I needed more Stevia to feel satiated. My usual level of saltiness experienced the same decline as I upped my salt intake by storm. But most of all, the aftermath of eating such unhealthy dishes gradually hit me blow after blow, whether it was an uncomfortable wrench in my gut or a food coma that lasted for hours.
Yes, I admit that I went a little crazy, maybe a whole lot of crazy. Yes, I admit that I regret going after all of the restaurant food at such a fast pace. Yes, I didn’t like that I started breaking out on my face and holding extra water weight. Yes, I felt quite sick and sluggish after the heavily-oily meals. But no, I didn’t suddenly view myself as a failure of a vegan, let alone a fit and healthy person. I have no qualifications of identifying myself as the “perfect” fit girl or health nut, and I’m about to break a major misconception: health nuts crave junk food too! Heck, most vegans, a ton of which identify themselves as raw foodists, fruitarians, juice-cleanse regulars and whole foods plant-based vegans, still crave junk food! I think anyone would have to be awfully special to have never desired a not-so-healthy meal at least once in their whole lifetime.
Here’s a common question that non-vegans and even fellow vegans ask each other: why do we even crave junk food? Well here’s the deal. All human-beings alike evolved from our Paleolithic ancestors, who obviously did not have the same diet as we currently do today. Everything was primarily based off of whatever they could find in the wild, whether it be berries, nuts, seeds, herbs, fruits or vegetables along with trace amounts of meat and insects. With the agricultural era came the evolution of growing crops, domesticating animals and attempting to produce food for a larger population. Eventually, we hit the Industrial Revolution, which prompted the need for convenient, quick, easy and cheap food, thereby initiating the birth of functional and processed foods, widening the food production scale, increasing the use of quick-working factories, and stretching the consumer’s knowledge of where his/her food comes from.
Despite this dramatic evolution, we humans have retained the primal instinct and sensitivities to hunger as well as the need to satiate that hunger for survival. However, a hunter-gatherer reaching for a piece of fruit in the wild will not experience the same post-meal sensations as an office job-worker reaching for a candy bar. Clearly, one of them will gain a wide array of health benefits and the other a sugar spike. But with convenience and cheapness by our sides, how could we resist a $1 chocolate bar while organic strawberries can cost up to $8?
To put it, I never knew was that one day, I’d become addicted to trying new unhealthy junk foods. Alternatively, the abundance of creative vegan meals in Los Angeles, especially at restaurants, always enticed me to go restaurant hopping every weekend. I couldn’t resist everything: sweet potato fries. Vegan chicken sandwiches on wheat buns. Raw vegan pizza. Dairy free ice cream with sprinkles and caramel sauces. Cheeseless macaroni and cheese. Silky coconut milk ice cream. Pad thai noodles with loads of hot sauce and peanuts on top. All of my old naughty favorites that sounded so good I’d want to cry.
At the end of the day, I, along with many other junk food fanatics, am aware of what I put into my body. On the other hand, I personally have enough knowledge about my health and well-being, and have lived too rigid of a routine full of exercising religiously, stuffing greens in my stomach like squirrels collect acorns in trees for the winter, and have been too deprived of time from studying and working to miss out on anything. By the beginning of my winter quarter, I’ll be back to square one. Hit the gym every other morning. Eat salads and sweet potatoes. Sneak in +20K steps a day. Shove my fist in the air and say: I fucking killed it.
