Also me here thinking about Mc and Cam sneaking a ton of chili powder into Chris and Jades food and watching their tongues catch fire. 😈
I'm doing well anon thanks! Below the cut ~
❤️ Cam - He is a food lover so he enjoys sweet and savory. Cam also likes spicy food, the hotter the better in his opinion. His favorite meal has less to do with the food and more to do with the experience. Cam and MC make homemade pizzas together quite often. Because of that, pizza is his favorite. When it comes to snacks, Cam isn't picky.
💙 G - They prefer savory, and they like spicy food but it's not the best for their digestive system so they tend to go a grade above mild. G has a few favorite meals and is actually a good cook. Currently, their favorite is Jajangmyeon and yangnyeom (seasoned chicken). Snack wise, G's favorite snack is Kkwabaegi (a Korean donut). You will find them making them from time to time, and happily eating them.
💚 Kara - She like's sweet over savory but will eat both. Kara can't really handle spicy food but enjoys eating it. Tough battle for her, her spice level is mild. Kara is good at baking, not so much at cooking. Her favorite food is quesadillas, mainly chicken. Her favorite snack is ice-cream. There is a reason I use a green heart for Kara, it could possibly be due to her love for mint chocolate chip.
💛 M - They like both. M isn't too picky when it comes to food especially since when they remember to eat is late at night when everything is closed. M likes spicy food, they prefer it to be hot, and enjoy that tingling sensation they get after eating it. M's favorite meal is General Tso's Chicken, the spicy the better in their opinion. Snack wise M loves Melon Pan. They can, and will make it for people.
💜 Isaac - They prefer savory over sweet. They enjoy spice though choose to treat spicy food like a treat. Their spice level is mild/hot. Isaac has one favorite dish, one their mom used to make. Now Isaac's favorite dish (only because their mother is no longer alive), is a stromboli. Isaac's favorite snack is any type of donuts.
🖤 Ardent - He prefers savory, though his niece will feed him treats from time to time. Ardent can handle spice but just doesn't really choose to eat it. If he had to choose he would go with a mild spice level. He has a few recipes up his sleeve, though his favorite meal is Souvlaki (gyros), he can and will make them and possibly get someone else to help as well. His favorite snack is Baklava (he has a killer recipe for it.)

you ever think about what your ocs like to eat? do they have favorite dishes?
Honestly not a lot, because while i love cuisine and eating out, i'm not very good with deducing food tastes in people and i'm rarely the kind of person to go "yeah my blorbette would like this" while eating something haha... I need to get better at this if i want to draw food scenes
Honestly as far as i can tell you:
Olympia would be a big pita gyros/souvlaki girl and make pork gyros with extra tzatziki sauce, like her entire personality. I very much think she'd be super invested in street food and pretty much eats anything she can, which also means she often will eat something bad without knowing it bc she thinks too fast.
Yuzuki is a horrible cook and shouldn't be trusted in a kitchen. She does feel right at home cooking and she enjoys the act of it, but do not trust her with anything... Please. She will burn the noodles in boiling water. As for her actual tastes, she is pretty eclectic though she prefers soups and fish-based dishes.
Akira loves spicy food and curry of any kind. Though when she says "spicy" it is like, "mild spicy" she means. Give her something spicy spicy and she will go "oh. oh this is. this is strong. oh." and refuse to drink water to not make you think she's a wimp. But she enjoys strong spicy food.

I personally know too little about Athens, I am afraid. I could recommend some based on critics and articles etc but I don’t even know when the borders will open and how much things will have changed since then so... I’ll just give you some general tips to make safely good and budget friendly choices all over Greece because I’d hate to leave this completely unanswered.
How to find Cheap and tasty food in Greece
First things first, odds are in your favor. You might not be lucky enough to find the best place ever in the first try but finding truly bad food in Greece is not common.
Greek restaurants are cheaper than Western Europe’s and maybe a little more expensive than Eastern Europe’s. Depends on where you go too, obviously, but overall prices are very reasonable and portions tend to be large.
If you come with a tourist group, avoid the restaurants where tour guides take you and tourist traps. They offer mediocre stereotypical dishes accompanied with stereotypical music and the slightly cringey obligatory plate breaking. I mean, we don’t do that in normal everyday dining, so it’s cringey to me. Run away and make your own choice. Important: choose places that target Greeks, not tourists! Found a place that doesn’t even have menus in English? Honestly, even better!!! This means the restaurant targets Greeks who know well what to expect. Go there and ask for their specialties. But if the English menu is first or more showy than the Greek menu, run away.
Don’t buy Greek salad in hopes of getting something cheap. Greek salad is expensive because of its reputation and the huge chunk of the trademarked feta cheese. You can buy a tasty main dish with as much. Also, I think if you order an “Agourodomata” salad and a feta cheese seperately you basically get the same stuff for a little cheaper. But also, try other salads too. Or appetizers (orektika) instead of salad. Trust me. 
Tripadvisor is a good friend and also ask random locals for recommendations.
These are the most common / basic kinds of shops that offer Greek food :
tyropitadiko - snack / Greek pie shop
souvlatzidiko - Greek fast food restaurant
psistaria - grill restaurant
taverna - traditional tavern
ouzeri / tsipouradiko / mezedopolio - sea food & fish restaurants and appetizer restaurants
estiatorio - restaurants / fine dining
In a tyropitadiko you can eat and get completely full for 2 euros. A Snack / pie shop offers traditional Greek pies, many cheese pies, the spanakopita (spinach pie), other vegetable pies, mushroom pies, chicken pies, ground beef pies, sweet pies like milk pie and bougatsa, other snacks like koulouri and drinks etc. *Greek pies are different from pies in the west
Souvlatzidiko is a souvlaki / gyros / pita place. They also offer burgers and stuff like sausages, patties, chicken nuggets, kebab, fillets. The key here is pita. As long as you order everything in a pita (or a bread), you can get more than full and happy under 3 euros.
If you eat meat, in a psistaria you can have the best food experience ever or a disappointing one. It’s a bit of a hit or miss. But if you find a place with good reviews, definitely give it a try. Prices there are mostly cheap and most dishes cost under 9 - 10 euros. Also, you can share a dish with somebody else and if you get too full, you can ask for a package to take the rest of your food with you. This is perfectly acceptable in Greece (except in very fine / prestigious dining places) because it means you loved the food so much that you don’t want to leave any of it behind.
A taverna has similar prices and offers a bigger variety of Greek dishes, ideally resembling home cooking, for all tastes, especially meat / fish / vegetable based. Some of them can be tourist traps but the good Greek-targeting ones are a dream. You can also ask for a package for the rest of your food (I’m repeating this because you can save money this way).
From the appetizer shops, Ouzeri and tsipouradika focus on seafood and fish, while mezedopolia on meat based appetizers. The portions there are smaller but IMO these often offer the most tasty things. Depending on what you order, prices might be lower than in the psistaries and tavernes but of course they can also go much higher if you order fresh fish and big seafood dishes. However, if  you like fish and seafood, you should experience it at least once in Greece. We are a nation of the sea, after all. A package is acceptable but more rare here because portions are smaller by default.
In estiatoria, prices can easily go over 12 euros for a dish but that’s not always the case. They all offer a few more budget friendly choices.
So, if you want to exclude estiatoria, my suggestion is this: based on your personal taste, find the best reviewed places for these types of shops or ask locals for all types you are interested in and then make a mix of all of them where in the most pricey ones you can share with your co-travellers and take packages with you for the evening if you like the food but left some.
This is my recommendation because while all these are very tasty, I see most of the time tourists only eat a Greek salad throughout their trip or spend all days and nights with a souvlaki and... I mean, that’s not enough to experience Greek food, you know?

For Jay the worst part about quarantine wasn’t being locked up with Will, it was being away from Hailey. Intelligence had heard from her just as it was starting to get bad, that because New York was a hot spot, Hailey wasn’t going to be returning to Chicago for a while. This spiralled him into a mood, he was pouting all the time, looking at Hailey’s desk longingly, glaring at the temp. Jay had been staring out of the window, looking like a kicked puppy, and Kim was done. “Okay, that’s it!” Everyone in the bullpen turned to her, confused as she whipped out her phone and started facetime someone.
“Hi Kim, how’s-”
“Jay’s moping. Fix him.” Was all she said before tossing her phone to Jay. “Jay?”
He straightened his shoulders and his expression softened out the creases made by his constant frowning. “Don’t listen to Kim, I haven’t been-”
“Yes he has.” No one in Intelligence even had to look up, each and every one of them completely over his kicked puppy routine.
Hailey quirked her eyebrow at him in the teasing manner he loved so much. “Okay, so maybe I miss you a bit.”
He was met with a chorus of scoffs and eye rolls. “... Or a lot. It’s just not the same without you here, and you were supposed to come home a week ago. I know that it because of the pandemic and all...”
“Don’t worry, Jay I miss you a lot too.”

“Do you know a guy who goes by ‘OA’ from your Ranger days?”
“Yeah, we weren’t in the same regiment but we were in specialized training together. Why?”
“He’s the guy I’m partnered with. He’s nice, but he’s not you, so I didn’t really want to talk about him. But today we were talking at lunch, and I guess I’ve been pretty standoffish with him, so he thought that talking about himself first would help, and I guess it did. He told me that he was a Ranger and I asked if he knew you and he remembered you vaguely too.”
“What regiment was he in?”
“27th.”
“Zidan?”
“Yes!”
“Oh, yeah, I remember him, he was skilled, focused, but he got a lot of shit because his family’s middle eastern, I can’t remember the region or country, but I don’t know if I was ever told. I didn’t ask. He was there for the same reason we all were, and I had respect for him we just didn’t work together much. So he’s your new partner?”
“Temporary partner.” Jay took a relaxing breath. Knowing that she meant it, she was going to come back.

“So you talked to OA.” Jay felt a little guilty, but not much. He’d called some people, who called some people, who were able to give him OA’s contact info, and then he gave OA a call. It was nice to catch up but Jay was honest with the reason he called. OA had chuckled, “don’t worry Halstead, I’ve got your girl’s back.” Jay hadn’t corrected him, he was just relieved to put a face and name to who was working with Hailey. OA had teased him a bit, but overall just nodded at the worry in his voice and said “don’t worry, man. She’ll make it back to you safe and sound. She’s a great cop. She was a little rough around the edges when she got here, weighed down by something, but she’s evolved in such a short period of time. I’d vouch for her. I even heard my boss wanted to offer her a spot,” Jay sucked in a breath as his body went numb and started to sweat, “doubt she’ll take it though. She misses Chicago, her friends, and her family. She misses you.”
“Yeah, well, I needed to make sure that he knew what would happen if he didn’t keep you safe.”
“You didn’t have to do that for me.”
“I did have to do that, just not for you. For me. The world has gotten a heck of a lot more dangerous pretty damn fast, I needed him to know that you have to come home to me- us. That you’re needed here.”
“Okay.”

“Tell him to stop yelling at officer River.” Is the only greeting she gets from a visibly cross Voight before the phone is straight-up thrown at her partner. “Hey there troublemaker.”
“He’s exaggerating, Hails.”
“I’m sure he is.” The sarcasm dripping off her lips was practically visible. It took Jay a moment to realize that he’d been staring at them and wondering how they’d feel against his or if he brushed his thumb across them, he shook his head before looking into her concerned, soulful eyes.
“How are you doing?”
“Pretty good actually, I mean I still miss you and everyone else like crazy, but because of the pandemic we were able to get a lot more intel on some of the perps we were after and less resistance because so many people in their circles are getting sick. We’ve even been able to make a bunch of high-profile arrests.”
“That’s great, but, uh, you’re not having too much fun in NYC are you?”
“Not even remotely. I can’t wait to get home to you.” His heart skipped a beat and then began to ache for her more. “Seriously, as proud as I am with my accomplishments at the FBI while I’ve been here, I’m really starting to resent this city. I just want to be home. With you.”
“I feel exactly the same way, I promise.”

“Upton, something’s wrong with Jay.”
“What do you mean?” Hailey looked terrified, the last time something was wrong with him he ended up getting kidnapped and shot. “Someone facetimed him earlier, and at first we all thought it was you... But then his face just changed, it became cold, unreadable. He answered the call in the break room, but he shut the door and the blinds. Ever since he’s been walking around like a zombie.”
“Pass him the phone.”
“Hey Upton.”
*Okay, he called me Upton, not a good start.* “What’s up, Jay?”
“Did you know that Erin was working in the same building as you?”
“I haven’t seen her at all, but I’d have to imagine that she at least works in the vicinity of the headquarters.”
“Well, she’s seen you. And, uh, apparently, she was going to talk to you but then your phone rang, it was last week when Adam-”
“Bought the wrong kind of chocolate for Kim, yeah, that was actually pretty funny. Sorry, continue.”
“Well, she uh, she stuck around and just eavesdropped on the whole call. It didn’t sit well with her apparently, because she called me this morning. She was I don’t know- unhappy? Pissed? But it was all just really weird, because of how she and I left things, and she said that she’s going to be keeping an eye on you. And not in a ‘hey your friend is visiting my city? Yeah, I’ll keep an eye on ‘em, don’t worry’ way. It was in a ‘I don’t trust this girl around my boyfriend’ kinda way. And I know that she’s fluent in Voight, so she’ll figure out pretty damn quick why you’re there, if she hasn’t already, and I’m just really worried for you.”
“That’s not all you’re worried about. I can tell. Spill it, Jay. You know you can talk to me.”
“She was acting like I cheated on her. And she said she still loves me, and I’m just upset she thought it was okay to talk to me like that, about that. I know I made some pretty big mistakes in our relationship, and I know that at least half of the fault falls on me, but it just made me feel dirty, and angry.”
Hailey’s face had softened, and honestly, it just made Jay’s day a thousand times better. “I don’t know if this will make you feel any better, but my time at the FBI has come to an end, and I’ll be getting on a plane to Chicago tomorrow afternoon. I mean, I’ll still have to self-quarantine when I get back for fourteen days, but at least I’ll be home.”
“... So what you’re saying is I won’t be able to see you in person for another two weeks?”
“Sorry, Jay.”
“Damn, just when I think my luck has changed.”

“I feel bad.”
“Don’t. Vanessa is fine, she’s been a good buffer between Atwater and Jordan, and Vinessa likes having another girl around. Plus there’s the whole Vinessa, Vanessa thing. They’ve been having fun.”
“I still feel bad.”
“Do we need to call her and ask her if she’s mad at you?”
“... No, she’d just yell at me for feeling guilty over nothing.”
“See? Nothing to feel bad about. How are you holding up?”
“I am bored out of my miiiiiiiinnnnnnd.” She groaned and fell back against her couch, pouting at Jay. He smiled softly, giving her a sympathetic and sad look. He knew how bad she felt, he wanted to see her too. He wanted to wrap her in his arms and just hold her.
“I’ve been taking the time to learn how to cook. Mostly with my grandmother’s cookbook, but I found some recipes online, maybe I could drop off some food for you.”
“What does Will say about your cooking?” She was smiling, knowing Will’s opinion on Jay’s cooking.
“Hey, hey, hey now, this conversation isn’t about him.” Jay was laughing, Will’s rants about his previously shitty cooking were widely known among their social circle. “I have gotten much better, I promise. I, uh, I’ve been learning some recipes that I really think you’ll like.”
“I look forward to it Jay, I really do.”

Hailey’s quarantine was almost over, and Jay was buzzing on the edge of his seat. Before work he’d dropped by with a bag filled with numerous containers of food. Most of it was old traditional Irish food, but he’d tried his hand at a few Greek recipes, hoping to impress Hailey. So when her bubbly face popped up on his screen, he jumped up and took the video call to the breakroom. “Hi Hails-”
“I love you,” his heart actually skipped a beat and his nerve endings heated up “so much right now. This food is AMAZING. And you made Greek food. Keftethes, Souvlaki, Spanikopita, and Baklava. This was so sweet, you didn’t have to do this for me.”
“It, uh, it wasn’t anything special. Really.”
“Thank you Jay. And, I meant it. I love you, Jay.”
“I love you too, Hailey. More than you know.”

Voight?” They shook their heads, wondering if Ruzek had finally snapped after all the pressure they’d been under because of their suspension and involvement in the Black Lives Matter movement.
“Hey, hey, everyone, I just heard Hailey and Jay talking about how they love each other over the phone!”
“Finally!”

~ In which a humble gardener has dinner with a daring pirate…

I had so much fun writing this fic with @dreams-of-the-arcana’s Tikos the pirate! So, technically this is Tikos and Kipling’s third date, which *cough cough* usually means….

Kipling Bronne is about to board a ship set to sail for Nevivon. She’s traveling on business to pick up a shipment of a rare ivy that doesn’t export outside of the port. To Kip’s surprise, the captain of the ship has hired a certain blond pirate and his crew for security.

“No wonder the tickets were so cheap,” Kip grumbled.
Tikos the pirate tossed his head back and laughed good-naturedly. He casually threw his arm around her shoulder and steered her up the ramp onto the deck. 
“Kip, come on. You have nothing to worry about! Think of my presence as nothing but a small insurance policy. Trust me, these trips are so standard that the chances of us running into petty thieves is slim to none.”
His words caused Kip to relax a little, but being out at sea still made her nervous. She hadn’t been on a boat since she left her island more than a decade ago. Tikos may not have known the source of Kip’s unease, but he was quick to detect it. So he turned her until she was facing him and asked, “Would you like to join me for dinner tonight, Bee? I’m making it from scratch.”
For a moment, Kip forgot about the past and looked up at the pirate. The midday sun reflected sharply against his bleached curls. That combined with his tapered ears and swarthy complexion made it easy to believe that he was born from some pirate fairy tale. 
“You can cook?” Kip covered her mouth at the rude slip. But Tikos merely laughed as he drew her in by her waist. 
“I love to cook.”
Kip felt her face grow warm at the close contact. Tikos didn’t seem to care that they were in plain sight of the ship’s crew and passengers. Kip lightly rested her hands against his ribs, hoping he would wait until they were below deck before making another move.
“What are you going to make?” Kip asked, trying not to lean too much into his strong chest. 
“That, my sweet honeybee,” he gently lifted her chin, “is a surprise.”

Rich, pearly light shone down on the ship’s passage over dark, warm waters. Kipling stood outside of Tikos’s cabin in a dress the same color as the moonlight. The garment fit snugly above her waist before it flowed and rippled loosely about her frame. Kip checked and smoothed it down for the millionth time before knocking on the door.
When Tikos opened it, his radiant smile slipped. “Kipling, you look –”
“Too formal?” Kip blurted. “Or not formal enough?”
Tikos shook his head as he stepped through the door and pulled Kipling against him the same way he had that afternoon. Only this time when he lifted her chin, he gently muffled her questions with a slow kiss. Though this wasn’t their first time, Kip’s eyelids drifted shut and she let herself get lost in the moment. Tikos always made it so easy to do so.
“You’re too beautiful,” he said as he pulled away, “that’s all.”
Kip blinked herself back to reality. She suddenly noticed the rich scents wafting out into the hallway.
“T, that smells incredible.”
Excitement took over Tikos’s face as he tugged Kip along. “I made souvlaki!”
Before Kip could even ask what that was, Tikos guided her to a small bistro setup in the center of his cozy cabin and pulled out a chair for her. Kipling nearly fell speechless at the sight of the rustic, yet elegant spread of mezes, quartered lemons, and of course, the entree – a combination of skewered meats and vegetables. After they both took their seats, Tikos started to pour the wine. “The souvlaki is made with–”
“Wait! Don’t tell me!” Kip held up her hand. “I want to see if I can figure it out on my own first.”
Tikos’s smile nearly took over his whole face. He hardly paid attention to his food as he watched on while Kipling slowly savored each bite and worked through all the possible flavors in her head. Most of her guesses were correct, though Tikos teased her a few times to see if she would second guess herself. 
Eventually, their game evolved into more mature conversation. Kipling took a sip of her wine and asked, “Does it make you uncomfortable to talk about your eye?”
The pirate’s gaze turned sly. “What would you like to know? It’s brown like yours and looking at the most enchanting lass it’s ever seen.” He propped his chin on his fist and deliberately fluttered his eyelashes.
Kip tried to stifle her laugh behind another sip of wine. “I meant your other eye.”
Tikos pushed some of his hair back to show off the full patch as well as the scar snaking out from under it. “There is no other eye, Bee. It’s all just glass now.”
The wine suddenly tasted sour.
“I’m sorry.”
Tikos let his curls flop back into place. “I’m not. People wanted me dead. Did everything  they could and all they got out of it was a useless eye.” He stretched his arms above his head as he leaned back. “Meanwhile, I inherited the sea, the gales and the winds, the fish and all their kin.”
Kipling smiled. “Sounds like you found all the treasure a pirate could ever need.”
Tikos came out of his stretch and leaned over the table until he was face to face with Kipling.
“Exactly.”
Before long, they were sharing soft, savory exchanges, tinged with wine, lemon, and heat from the spices.
“Kipling,” Tikos whispered against her lips, “would you like to stay for dessert? And then, maybe you wouldn’t mind staying a little longer…?”
Kip met his steady gaze, but before she could answer, the door to the cabin burst open.
“Bandits! Above deck!”
Kipling felt her veins turn to ice, but Tikos grinned as he rose to the challenge. Brandishing his sword, he offered his other hand to Kipling.
“Come with me.”
Kip kept close to Tikos’s side as he whisked her down the hall and onto the deck. It wasn’t quite pandemonium to Kip’s relief. The invading pirates wanted to steal rather than harm, but they still had weapons and wouldn’t hesitate to fight off those that got in their way.
Kipling hung back while Tikos pursued those trying to take off with the most valuable cargo. The gardener clung to the side of the ship and did her best to keep track of Tikos with nothing but the moonlight to assist her.
How could he manage to smile and laugh at a time like this, she wondered. The pirate’s blade caught and tossed the light as he entered a complex sword dance. He spun, leaped over steel, and somersaulted away from some potentially fatal blows.
“Tikos – watch out!”
The pirate defended himself in time, but not without taking a hit. Kip ignored the danger and ran to his side. Luckily, the last of the bandits were retreating and Tikos’s crew were crying out in victory. By the time Kip reached her pirate, he was trying to hide his flesh wound so he could celebrate with the others.
Kip took it upon herself to tuck his arm around her shoulders and encourage him to lean on her as she guided him below deck. After she helped him out of his shirt and wrapped the wound in his side, Tikos simply couldn’t help himself.
“Sorry our dessert got ruined.” He smiled at her from where he rested on the cot. “I suppose you won’t want to have anything to do with me for the rest of the evening.”
Kipling got on her knees and came up beside him. “Oh, I want something to do with you.”
For the third time that day, Kipling kissed the pirate. But there was something more restless and urgent about it than before. When the things they both wanted couldn’t be any clearer, Kip drew back and glanced at his shirtless torso in concern.  
“What about your ribs?”
Tikos gave a lazy shrug. “I’ve been in worse shape while having, uh… quality time.”
Kip snorted and shook her head. But she took Tikos for his word and easily slipped out of her underwear before carefully straddling him so he wouldn’t have to move.
“I’ll go slow anyway,” She mused, dropping her gaze in order to focus on unfastening his belt.
Tikos sobered a little, a faint blush spreading over his freckles as he watched. “That is… much appreciated.”
Making sure that she didn’t jostle him, Kip leaned over Tikos and kissed the scar by his patch while she made herself snug and comfortable around him. Tikos grunted in amusement and then again in excitement as Kip eased into a rhythm as natural as an ocean wave.
The pirate’s hands drifted up her thighs and under her dress, resting around her waist. He held firmly to her warm curves, encouraging her with light squeezes whenever he needed a change in pace. 
Kip kissed him one last time before positioning herself upright for better control. Usually she would have let go of the shyness by now, but it was hard to do so with Tikos. She closed her eyes off from his low, teasing gaze and simply concentrated on showing him a good time.
Tikos, meanwhile, never stopped looking at the gardener. His breath hitched at the sight of her pierced nipples tenting against the cotton of her dress. His hand drifted up and touched one, which caused Kipling’s hips to buck unexpectedly.
“Oh,” Tikos gasped, barely noticing the stinging in his side. “Can you do that again, Bee? It felt good.”
Kipling opened her eyes. Her cheeks were warm with sweat and lingering blush. Some of her concentration broke as she chuckled nervously. “T, I don’t know if that’s such a good idea.”
Tikos couldn’t resist teasing her. “Please?” He pushed the fabric of her dress back and brushed a sea-weathered thumb across her turquoise stones and hardened bead of flesh. 
“I know you want to.”
Kipling gasped and leaned over him, her hips bucking impatiently. Tikos rushed to kiss her. Kip moaned into his mouth and then into his shoulder, unable to hold back now. She didn’t want to hurt him, but she didn’t want to stop either.
“Tikos, I’m –”
“Mmmm,” Tikos hummed, “me too.” He captured her hips between his hands and held fast as they both lost a little of themselves to the other.
When their bodies finally let them rest, Tikos helped Kipling snuggle in between his good side and the wall. The food, wine, and not to mention all that action above and below deck was more than enough to send Kipling directly to dreamland.
Tikos, however, lay awake for a while, watching the humble gardener’s breath rise and fall against his tanned chest. He read the spaces between her freckles and springy curls like they were bedtime stories. Because he was a pirate and the sea was his only constant, Tikos committed Kipling’s features to memory. Then he let sleep take him to the same place as his humble gardener.

1. top 3 ships: uhhhhhhhh, im gonna say currently rather than all time, glimmer x adora x catra, idk lol its a cute idea and theres a bunch of cute art of them together lol. ive been rly enjoying my next life as a villainess, the mc, catarina, doesnt realise she has at least 2 girls in love with her with a 3rd on the way. i wish i could believe it will resolve in polyamory but. maybe we'll at least see her get a gf. bc. its been very blatant about her friends being in love with her. one of them, mary, has been in love with her for years and is trying to sabotage anyone else falling in love with her, and the other, wont say who bc spoiler, is her reincarnated best friend (its an isekai show) but doesn't realise it, and in the last episode some magic made her speak without inhibitions, and the first thing she does is tell catarina she loves her in like, the romantic way. so you know, fingers crossed. other than thaaaaaat... uhhhhh.... oh i guess poppy and barb from trolls 2. i like that movie. wish it was as gay as it clearly wants to be. also i need to keep watching rwby, ruby/weiss/penny is rly cute.
2. last movie i watched: i watched. half. of osmosis jones with friends earlier today. very gross movie. last complete movie was probably the cgi tintin movie..?? good but idk. before that was trolls 2, for the 2nd time. those movies are great.
3. last book i read: i cant read. well i have adhd so i dont read much anymore. i miss novels but i do listen to audiobooks. currently listening to interesting times by terry pratchett with my gf. last physical book i read was uncaged vol 1, a book of queer dnd adventures with a focus on like, uhhh, monstrous women iirc. its good. def recommend. havent read the whole thing tho.
4. food im currently craving: idk how to answer this lol. i could rly fuck with some mcdonalds or burger king. anything salty spicy and deep fried.. im a glutton and i have sensory issues with food. i tend to eat mostly comfortable or safe foods with good textures and tastes. anything outside my comfort zone usually bad stims me, which is like. horrendous. it makes food hard but also like. good food is rapturous. i like stir fry a lot. my gf cooks stir fry a lot and i always love it. and i like putting condiments on things. bbq sauce, soy sauce, and like, if i can get it theres this rly good peri peri salt they sell at nandos. god i love salt and spicy things. i had a korean burger once that was so spicy i couldnt finish it in one sitting and god i want another. it had a black bun and the chicken was bright red with spices, it was great i miss it. theres this spicy burger mcdonalds did once that had like. battered and deep fried jalapenos on it and spicy salsa and chicken and it was godly. oh and the spicy shaker fries. miss those. dream burger would be something like, korean spicy chicken with some kind of sweet tangy spicy sauce, battered jalapenos, bacon, salad, and a hashbrown coated in some kind of spicy salt. i used to like subway a lot but idk now. i also love donuts. and pastries. and oranges and citrus fruit in general. pears are great too. im not usually into like, candy or chocolate tho its too sweet. oh i love chinese food. noodles and rice and meat and vegetables and sauces, all packed with flavour and amazing textures... chinese food is so good. sushi and japanese food in general tends to be my jam too. most things with rice are rly good. not curries tho i cant eat many curries, i like butter chicken tho thats always good. i could keep going lol i love food. oh turkish food is good. and greek? lots of good meats. tho i cant deal with uhhh... tabouli, parsley kills me on contact idk. and cilantro. but i love souvlakis those are great. pasta is alright, i like tortellini and ravioli and gnocchi with lots of cheese. oh and pizza. with everything on it. especially anchovies. i love anchovies and olives and feta... and pepperoni... and garlic bread. cured meats in general are very good. root vegetables too. capsicum and chillis are yummmmm. im sure i could go on... food is. so good. its euphoric. oh i love ramen too! and uhhh, ramyun i think its called?? i think its korean? its spicy and very good. thicker noodles too. anyway i should stop this is too much lol.

Grecian (Ret)Urn
After much deliberation we had decided that 8 days back near the beach and in the sun was our preferred way to end the hols (apart from 3 days in London at the very end). We left the Helka at around 9.15 in the morning. It was close to the metro and our advice had been that metro (1 stop) to the railway station and then train to the airport was the way to go. Cost us the princely sum of 5 euros each vs taxi of 25. It went like clockwork. We were at the airport just after 10.00 for a 12.40 flight.
Next leg of around 3.5 hours to Istanbul also went to plan. A 3 hour wait in Istanbul though we found some reclining lounges so a nap was on if you chose. Another hour + to Thessaloniki. Liz had contacted the hotel and they said to call when we landed and they would send someone to pick us up. That went well too. A day of travel we got into our room at around 9.20pm ie 12 hours on but all went to plan. We are fans of Turkish airlines our experiences with them have been good.
The hotel Avalon was just a resting point for the night. We didn’t want to go into the big city of Thessaloniki with so few days left so had hired a car from the airport and needed to pick it up the next morning. Hotel did the job and sound breakfast thrown in. I was still getting everything together at checkout time and Liz went downstairs with her case to pay. When I arrived it was to the smirks of the receptionist. Liz had obviously informed her that I can dot the i’s and cross the t’s when packing up (and rumour has it more generally) so hence me bringing up the rear.
At 10.30 we were at Avis taking the keys of the car. A Fiat Panda. Small but a bit of grunt and importantly takes our two cases. These are soft bags quite large but also frustrating as they can be tough to zip up (as ever we have more gear than we need). Also their capacity is less than the lightweight American Tourister bags we used for several years. However you can compress them enough to fit into small boots like the Panda and Fiat Punto we hired. More rigid bags would have been no chance. Also a strong preference is not to have a bag on the back seat which might invite thieves.
We are heading for the Halkidiki area which is basically three peninsulas south of Thessaloniki. Our first stop is a place called Nea Moudania just shy of the Kassandra peninsula which is the westernmost one. Also being the closest to Thessaloniki it is the most built up and touristy. This has pros and cons but we are at the height of the tourist season so very booked out all over. Liz did her usual poring over travel info and booking.com and somehow plucked out N. Moudania. It’s 75% research and 25% intuition and her intuition has served us very well.
We seemed to get into the last room available (regularly) and the hotel Sokratis was another little gem. We parked up outside and Liz went in to investigate while I unloaded the bags. When I rolled up Liz was in animated discussion with the owner, the redoubtable Theodora. This lively, animated and friendly lady could not do too much to help you, had plenty of opinions and was effusive and basically all over you. And this was the impression after 2 mins. She had obviously asked Liz where her husband was and continuing her theme of the day Liz said that basically I was faffing about outside and buzzing around like a fly. She also mentioned that unlike most families I take more time in the bathroom than her (surely that’s normal?). Theodora was hugely amused by this and of course when I walked in said is this “The Fly”. Many guffaws all round.
Theodora advised us of which beach to head to and off we trundled. About a 15 minute walk but it was worth it. Relatively small area of umbrellas. Nothing to pay for them just buy a drink or snack from the local bar/cafe. Sandy beach. We settled straight in. Nothing much to report we just took it easy, had a toasted sandwich and ice cream, lazed, swam and read.
One slightly embarrassing moment was when I went looking for the loo. Direction at the cafe was its behind to the right. I missed the little outhouse and headed towards the apartments at the back where people seemed to be milling about in loo waiting style. Marched through a likely door only to hear the melodic tones of my countrymen as this lady shrieked something like “Oi Dave some bloke just walked into our room”. Turns out they were apartments though no number on the door. “Dave” was sitting outside at some tables and gave me a quizzical look. I apologised and said I was looking for the loo which he directed me towards. He seemed amused by the whole saga. I scurried off.
Stayed on the beach to around 7.00. Temperature about 30 so very easy. Then headed for home. Theodora had recommended some restaurants - 1 for fish the other for Gyros/souvlaki. We went for the fish. Got there around 8.30 and snagged a nice table at the front of the restaurant in the open air. We were close to the water though a small car park/road (with very few cars) in front of us with water behind. Just off the main drag so tranquil and pleasant. We each had a Dorada which was well cooked and tasty.
A walk around the centre of town post that and a very ornate church there which looked middle eastern almost mosque like in style but closed of course at that time. Town was fair rocking with plenty of cafes, restaurants and bars with outside areas close to the water so quite atmospheric. We were glad we were in the quiet end for dinner but Liz has pulled it off again a nice blend of calm and a bit of action.
Breakfast at the Hotel Sokratis the next day was a copious affair. Stronger on the sweet than the savoury. Plenty there. Theodora was floating around and halfway through our breakfast she brought us a local delicacy a filo pastry filled with custard a bit like a vanilla slice. We are not huge eaters at the best of times and a re-calibration of selections was necessary to fit the latest offering in so as not to cause offence. It turned out to be no great hardship, though we did waddle away fairly full.
Liz headed for the beach straight after breakfast though did get a quick briefing from Theodora on other spots to visit in the Halkidiki region. I followed on and we returned to the same spot as the day before for another relaxed day of reading, blogging, swimming, eating and snoozing. It was manageable. I was hoping not to bump into Dave and family from the previous day (“not that geezer again”) which I think I did late in the day but I looked the other way and so did they. We headed home around 6.00. Liz stayed an extra half an hour while I cleared the shower (only just enough time).
We had managed to find a small bottle of vodka at the local supermarket so we sat on our balcony with Liz downing a vodka and tonic and me on a local ale. Very relaxed. No big plans for dinner as in where to go. Rain was threatening and there had been a few drops. We had enjoyed the previous night’s restaurant so headed for that. With rain threatening even a thunderstorm and plenty of black clouds around there were no uncovered outside tables set up. There was a quasi outside area with roof only where all tables were full or you had to eat inside. We didn’t want to sit inside and they wouldn’t let us risk outside even though we said we would cart our food in if it rained. They were nervous that others would want to do the same which could be a schmozzle of people and waiters ferrying food and drinks if it belted down. Chances were it would. They were not very proactive in terms of options but we said we would wait for a table to free up in the semi outside area and after about 15 mins one did. We just shared some grilled sardines with a Greek salad and bread. Not shoot the lights out stuff but did the job. They don’t spare the onions in the salad in this neck of the woods and a little less marinated than elsewhere which is not ideal. Liz won’t really touch a raw or near raw onion so I came to the party and duly reeked as I was advised thereafter. Another difference is they are using white not red onions so a bit harsher.
Again went for a little stroll around town, a bit quieter tonight as cooler. Headed for home after Liz had vainly tried to buy a new beach cap. Hers has had its ten year anniversary. Not an easy task to find one that works for her little head. Opposite to mine possibly in every sense.
Next morning it was time to move on from Nea Moudania. There was more peninsula to discover. After another hearty breakfast this time augmented by another Theodora specialty cake. This time a sort of chocolate cake. It did not seem to involve much sponge though Liz advises there was a base of it. Above that was chocolate mousse and on top of that about 2 cms (looked like 3) of whipped cream. My heart sank about the only thing that I found appetising about that was the sponge which was thin on. Cream and my digestive system are not a happy partnership. Liz had to pull her weight for two of us. She did admirably but was defeated about half way through.
I was beginning to understand why the sweet section of breakfast was more extensive than the savoury one. Clearly Theodora had a sweet tooth though the spanakopita was excellent, flaky and very tasty and she said was her favourite. Time for us to move on and Liz bade farewell to Theodora which apparently involved a big hug to her ample bosom. I did not know this at the time but as I separately went to say my farewells and thanks I stuck my hand out and was on the end of a Lathamesque fist pump (preferable). Apparently Theodora gave some last pieces of advice to Liz on destinations but finalised with “after a couple of days, if it’s not working you can come home” ie to the Sokratis as she had rooms coming free. It felt a bit like home too. She had set a new benchmark.

Pork Souvlaki with Tzatziki

If you are a fan of me then you know I’m a fan of Ina Garten, known to television viewers as the Barefoot Contessa.
She creates easy recipes which are packed with amazing flavors,  presented beautifully and all the while makes it look so simple.  
She uses basic ingredients, nothing too exotic, which makes it doable for even the busiest home cook and/or baker.
These same qualities carry over into her table decor.  She has a knack for setting a table which regardless of the occasion is stylish and welcoming, yet  never overdone.
Her current cooking series on the Food Network called Cook Like a Pro, has just begun a new season recently.  I look forward to it every Sunday.  
I have many of her cookbooks, but I do enjoy watching her at work, In fact, it shouldn’t even be called work because she makes it look easy and fun!
The recent episode Pork Souvlaki with Radish Tzatziki inspired the dinner above.  I followed the recipe for the pork substituting pork tenderloin for the pork shoulder, but must confess I am partial to my favorite tzatziki.   
I do love how Ina puts a twist on older traditional recipes at times, and I might just change things up and try the radish tzatziki another time.
For your convenience I have posted both recipes below.
Pork Souvlaki with Tzatziki (4 to 6 servings)
(adapted from Pork Souvlaki with Radish Tzatziki from Ina Garten,The Barefoot Contessa)
Ingredients
1 pork tenderloin, about 2 pounds, trimmed, about 3/4-inch diced
1 red onion, cut in 1/2-inch wedges through the root end
1 large yellow bell pepper, seeded and cut in pieces
Grated zest of 1 lemon
1/3 cup freshly squeezed lemon juice (2 lemons), plus extra 
Good olive oil
3 garlic cloves, grated on a microplane zester
2 tablespoons roughly chopped fresh oregano leaves
2 teaspoons roughly chopped fresh rosemary leaves
Kosher salt and freshly ground black pepper
6 warmed pita breads,  for serving
Directions
Combine the pork, red onion, bell pepper, lemon zest, lemon juice, 1/3 cup olive oil, garlic, oregano, rosemary, 2 teaspoons salt, and 1 teaspoon black pepper in a large (1-gallon) plastic storage bag.  Press out the air, seal, and set aside at room temperature for 30 minutes or refrigerate for up to 12 hours.

Preheat one very large(14-inch) or two medium (10-inch) dry cast iron (or other good quality which conducts heat well) skillets over high heat for 3 minutes. 
Add the pork and vegetables, including the marinade, spread out, and cook without stirring for 3 minutes.  
Continue to cook over high heat for 7 to 8 minutes, stirring occasionally, until the pork is cooked through, but slightly pink in the middle. Don’t overcook the pork or it will be dry!

Place one warmed pita on each plate. spoon the pork and vegetables on one half of the pita and place 2 rounded tablespoons of tzatziki on the other half.  
Sprinkle with mint, lemon juice, and salt and serve hot.  
Serve sliced ripe tomatoes, crisp cucumber slices, and Calamata olives on the side along with additional tzatziki.

Tzatziki (Sheila’s favorite)
Cool and creamy, this tangy cucumber dip flavored with garlic is the perfect complement to grilled meats and vegetables.  It can be served on the side with warm pita bread triangles for dipping, and is also used as a condiment for souvlaki.
Ingredients:
3 -4 garlic cloves, minced finely
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 cup Greek yogurt, strained
1 cup sour cream
2-3 cucumbers, peeled, seeded and diced (I prefer Persian cucumbers)
1 teaspoon chopped fresh dill
3 tablespoons extra virgin olive oil
1 tablespoon white wine vinegar
Directions:
Combine olive oil, vinegar, garlic, salt and pepper in a bowl.  Mix well until combined.  Using a whisk, blend the yogurt with the sour cream.  Add the olive oil mixture to the yogurt mixture and mix well.  Finally, add the cucumber and chopped fresh dill.
Chill at least 2 hours before serving. Garnish with a sprig of fresh dill.
Ina’s Radish Tzatziki
6 medium radishes, scrubbed and trimmed
2 garlic cloves, grated on a Microplane zester
1 and 1/4 cups plain whole milk Greek yogurt (10 ounces)
1 tablespoon good olive oil
1 tablespoon freshly squeezed lemon juice
1/4 cup minced scallions, white and green parts (2 scallions)
2 and 1/2 tablespoons julienned fresh mint leaves
Kosher salt and freshly ground black pepper
Directions:
Grate the radishes on a box grater.  Place radishes in a paper towel and squeeze out the liquid in a medium bowl, combine the radishes, garlic, yogurt, olive oil, lemon juice, scallions, mint, 1 and 1/2 teaspoons salt, and 3/4 teaspoon pepper.  Cover and refrigerate for at least 30 minutes or up to 12 hours.

Food From Around the World - Week 3
Akrotiri and Dhekelia
It was hard finding recipes for this place. But here they are anyways.

Day 1 - Ginger Beer: You can buy this pretty much wherever alcohol is sold even though there’s really no alcohol in it. It’s basically a stronger, more gingery tasting ginger ale. As I like the taste of ginger this was pretty good stuff. 
Day 2 - Pork Souvlaki with Tzatziki: Very similar to a gyro, but with pork instead of lamb or beef. It was good but I wish I had bought the tzatziki sauce instead of trying to make it from scratch as I used way too much cucumber. 
Day 3 - Village Salad: I didn’t want to buy a whole lot of white wine vinegar as i so rarely use it, so I wound up buying a premade Greek salad and just added the tomato and cucumber to it. It didn’t taste bad persay, it just wasn’t my thing as I prefer sweeter salads usually. I gave the left overs to my sister-in-law as she and the kids love that sort of cuisine and they ate it right up. 
Day 4 - Fish and Chips: Ok, I admit it. I cheated on this one. Thing is it was just cheaper, easier, and more practical to buy take out from Captian D’s then to fry a whole batch of fish up just for myself. It was delicious though. 
Day 5 - Osso Buco: It’s hard to find veal where I live. I had to use some pre-seasoned ground veal steaks instead of cooking it on the bone like the original recipe called for. I personally enjoyed the dinner myself, but my parents, who joined me, said I used too much lemon. Oh well, I ate it all anyways. 
Day 6 - Pita Bread with Sweet Tahini and Fried Halloumi Cheese: I couldn’t find an actual dessert so I made the tahini sweet by adding honey, cloves, and lemon to it. It tasted a lot like peanut butter, but it had a bit of a bitter after taste to it so most of it got thrown away. The cheese however was a much bigger hit and paired well with the pita bread. Think of the mozzarella cheese sticks you buy in the store only grilled.That’s how halloumi tastes. 
Day 7 - (Good Eats) Mashed Potatoes: Loaded mashed potatoes actually. I used cheered cheese and bacon as my chosen toppings. Once again my parents joined me and this dish went over much better with them. 
Finial Thoughts: I enjoyed everything, save for the salad, and the perpetration was easier than last week’s. However it was a really expensive week to cook so I probably won’t go back most of these meals.

Monday Late Afternoon Thoughts 💘; 2/22/2021.
Good Late Afternoon Everyone!
SoO I am back to blogging/writing part 2 of this blog. How is everyone doing? Hope you all are doing ok & feeling good. Will be doing part 3 better known as the final part of this blog till tomorrow. This became like my blog on Saturday, a trilogy of blogging lol!, it finally stopped snowing here in NY, I wouldn’t be surprised March will have the grand finale of the snow lol! Cause my late grandma used to say “March goes in like a lion & out like a lamb”. Perfect weather lore to describe March. Lately she been heavily on my mind, cause of two reasons. March 11th would be 7 years of her passing & I found an old selfie of myself back in 2013, almost 8 years prior in April. That I took with my vintage old iPhone 5S. It was on the day of the Boston Marathon Bombing. My long hair was flowing in a black Brooklyn Net slouchy beanie. My hair was newly dyed back to medium brown, that I picked up box dye from my local Walgreens cause that Friday I had to attend a family party for my cousins son for his first holy communion. I had on a grey vintage graphic tee shirt that had characters from the Justice League, a pair of black yoga pants & high top Converse sneakers. An oversized pair of Bvlgari sunglasses. I was going with my mom to pick up my late grandma who was on dialysis. She went to dialysis 3x week. After she passed away, I got a tattoo in my inner finger, which means “ vivere “. Which means to live in Italian. She lived her life to the fullest. After her dialysis treatment, generously she used to take me for a slice of pizza & mozzarella sticks w/a can of cherry Coke. I always offered to pay, though she refused which explains why I used the term generously. She was selfless & always put her children, grandchildren & whoever else crossed her path, before she did for herself. She was kindhearted, loving, caring & always SO grateful for everything that life had to offer her. I definitely do have those traits from her, as I will always cherish too. I also have her traits on baking too. My youngest cousin Alexis, has her trait on cooking various dishes for breakfast, lunch, dinner & brunch. As I am doing this blog, my cat Sparkle is laying on my hoodie, taking her afternoon nap. Living her best life as an indoor cat, compared to a stray. I refused that life for her. When I rescued, adopted & saved her back in October of 2015. Was going to listen to music, to pass the time, but my headphones are in my hoodie pocket. Still didn’t order my brand new AirPods from Apple. Earlier I ordered the son of the baconator from Wendy’s, on Uber Eats, kudos to my friend Joann, telling me it’s really good & now she got into eating this lol! It’s like your usual fast food burger with gooy American cheese, (yellow American cheese) smoked bacon, ketchup & mayo. Definitely would have it again in the future! Highly do recommend it! SO worth the price!, I remember when I went to LA back in the summer of 2019, I had In & Out Burger for the first time. Wish, hope & pray that they will open one here in NY, now that would be ideal! But that’s more like saying wishful thinking lol! Though we do have Shake Shack which is good too. Been there a few times, I do want to go to Smash Burger one day too! Been to Five Guys a few times too. If I had to pick my favorite place for a cheese burger, I would say New Parkway diner, near me. In the heart of Dyker Heights, my family & I been going to that diner ever since I was a baby. Their food is always fresh & always SO flavorful! Definitely worth it! Like they have American & Greek food. Best of both worlds, love Greek food too! If I had to pick what I love from Greek places to dine I would say the chicken Souvlaki, spanakopita & hummus. Lol! Spanakopita is the American term from spinach pie. What is your favorite cuisine? do feel like I wrote a lot, like I always say in every single entry of these blogs. Lol! If you live in Astoria, you are no doubt familiar with BZ Grill. If you are not familiar, let this be an introduction to one of the best sandwiches in the city — if not the best gyro in New York.
BZ Grill’s pork gyros are made from actual cuts of marinated pork—not one of those rotating logs of mystery meat. The cuts are placed overnight in a mixture of Greek spices before being stacked on a spit in the morning and loaded into the gyro cooker for their slow-motion merry-go-round ride.
The sandwiches I’ve had here have always been good, but if you come at the right time (between rushes), you’ll get the best gyro you’ve ever had. That’s because, in addition to the moist, tender meat from the interior of the stack, you’ll be treated to slices that have spent enough time on the exterior of the spit to become extra crisp.

The resulting gyro sandwich ($5.97) is a pork-lover’s dream—although it ostensibly includes lettuce, tomato, and onion (along with tzatziki sauce, of course), it’s essentially a warm funnel of pita bread wrapped around a massive amount of the perfectly cooked meat.
In truth, it might actually be stretching it to call this thing a sandwich, since you may need a fork to make a dent in the gyro meat before you can pick it up. But I think you’ll forgive me for sticking it in the Sandwich a Day series after you try it. Try to spy someone else’s sandwich before you order, and if you think you’ll have room, order an appetizer of grilled haloumi. (The Greek fries are good, too.)

This is one of my 2 most beloved dishes when I was growing up. The other one is Chicken Avgolemono Soup. This amazing recipe belongs to my Mama, of course, and she used to prepare it quite often at home. When I was sick as a child, I would eat only Chicken Avgolemono soup (check my separate recipe). The moment I started feeling better and needed that extra energy boost she would prepare Meatball Burgers-Biftekia for me and serve them with mashed potatoes. Deliciously combined tastes that helped me get better and on my feet in no time! If you haven’t tried biftekia before, then try this simple, delectable recipe and find out what I am talking about!
INGREDIENTS: 350 gr. / 12.3 oz Ground Beef lean 2 slices stale Bread   Note: For a gluten free diet, please replace stale bread with gluten-free bread 1 medium Egg 1 small dry Onion finely chopped 150 ml / 0.6 cup Water 1.5 tbsp. dry Oregano   3 tbsp. Lemon Juice About 120 ml/0.5 cup Oil suitable for frying Salt & ground Pepper

METHOD: A. Prepare the biftekia mix: 1. In a bowl filled with plenty lukewarm water, soak the stale bread for 2'-3'.

  2. TIP: If you don’t have stale bread, you can use breadcrumbs instead. In that case, use 2/3 cup breadcrumbs and add 1/4 cup lukewarm water. 3. Use disposable kitchen gloves (to avoid cross-contamination). 4. Remove the bread's crust and squeeze some of the water out (wet stale bread should still have some water, to help biftekia stay moist). 5. Throw away rest of the water from the bowl and place the wet bread back in the bowl. Place the ground beef in the bowl as well. 6. Crack the egg and add in the bowl. 7. Season with Salt and Ground Pepper, to taste. 8. Next, mix the ground beef and soaked bread with chopped Onion, half of the Oregano and 1/2 of the lemon juice.

9. Knead all ingredients together until thoroughly blended!!

10. Take a handful of the mix and shape it into a round patty with your hands. 11. Repeat the process, taking care to make all patties about the same shape, weight, size. You should get about 8 pieces.

12. Let biftekia rest and set in the fridge (covered) for 30' before frying. B. Frying biftekia: 13. After 30', heat oil over high heat in a large non-stick frying pan. 14. When oil is hot, add the meatballs and shallow-fry them gently in low heat until golden brown.

15. Pat them to flatten them a bit. 16. Turn the meatballs regularly to allow for the meat to cook through. 17. They should be fried in about 10' or 5' per side. 18. Pat them also with your spatula to help them get cooked through.

19. Remove them from the pan, placing them in a platter.

20. Don’t turn off the heat, just lower it. C. Prepare the sauce: 21. While oil is still hot, pour in gradually the 150 ml water, rest of lemon juice and oregano. 22. Season the sauce with salt and pepper. 23. Let the sauce simmer in low heat for 2'-3', scraping the bottom and sides of the pan, to mix in the sauce all the delicious ground meat remnants.
EXTRA TIP: If you are looking for a more gravy like sauce then add 1 tsp. corn flour and/or 30 ml single cream to the sauce!

24. When the sauce is ready, drop the meatballs in the pan and shallow fry them gently in the sauce. 25. Leave the meatballs to simmer for 2'-3', so that they can absorb most of the wonderful lemony sauce, turning them gently around. 26. Shake gently the pot around to help the sauce cover all meatballs, but be gentle, you don't want to break them. Or tip the pan on one side, collect some sauce with a ladle, and pour it over the biftekia. 27. Turn off the heat. 28. The juicy and zesty biftekia are now ready to be served! Yummy!

D. Serving suggestion: 29. Serve biftekia while still hot, with mashed potatoes (check my separate recipe) pouring some of the sauce on top.

Accompany them with fresh, homemade, tangy Tzatziki dip (check my separate recipe) or plain Greek yoghurt and lots of bread to sop the beautiful sauce!

30. Note: They can be stored in the fridge for up to a week. They can also be stored in the freezer for up to a month. 31. A new guaranteed family favorite!
Alternatively, you could add in the sauce 200 gr/ 7 oz chopped Mushrooms and 0.5 cup/ 120 ml Single Cream. That will give you a creamier, filling sauce for your meatballs!

E. Greece Travel Tip: The Greek word "bifteki" derives from the French word bifteck i.e. beef steak. Biftekia are the Greek version of patties to American hamburgers. Same main idea but adding extra ingredients and spices to keep the ground meat moist and amplify its taste. Greeks love biftekia so much, that you can find many variations in different regions, most common being: bifteki stuffed with feta cheese or wrapped in pita bread like souvlaki (check my separate recipe).

You will find biftekia baked, fried or barbequed all over Greece. But one of the best places to taste them is in the Glyfada area, Athens. That's where you will find many renowned restaurants serving them! Glyfada is a beautiful suburb by the sea. Visit the place for a swim and a bite.

Το άλλο είναι η Κοτόσουπα Αυγολέμονο. Αυτή η εκπληκτική συνταγή ανήκει στη μαμά μου, βεβαίως, και την ετοίμαζε αρκετά συχνά στο σπίτι μας. Όταν ήμουν άρρωστη μικρή, έτρωγα μόνο Κοτόσουπα Αυγολέμονο (κοιτάξτε τη ξεχωριστή συνταγή μου). Τη στιγμή που άρχιζα να αισθάνομαι καλύτερα και χρειαζόμουν επιπρόσθετη ενέργεια, μου ετοίμαζε Μπιφτέκια τηγανιτά με σάλτσα και τα σερβίριζε με πατάτες πουρέ. Απολαυστικά συνδυασμένες γεύσεις που με βοηθούσαν να γίνω καλά και να σταθώ στα πόδια μου σε χρόνο μηδέν! Εάν δεν έχετε δοκιμάσει μπιφτέκια ποτέ, τότε δοκιμάστε αυτή την απλή, απολαυστική συνταγή και θα καταλάβετε για τι ακριβώς μιλάω!
ΥΛΙΚΑ: 350 γρ. / 12,3 oz άπαχος Κιμάς μοσχαρίσιος 2 φέτες Ψωμί μπαγιάτικ�� Σημείωση: Για δίαιτα χωρίς γλουτένη, αντικαταστήστε το ψωμί, με ψωμί χωρίς γλουτένη! 1 μέτριο Αυγό 1 μικρό ξερό Κρεμμύδι ψιλοκομμένο 150 ml / 0,6 φλι. Νερό 1,5 κ.σ. ξερή Ρίγανη 3 κ.σ. Χυμός Λεμονιού Περίπου 120 ml / 0,5 φλ. Λάδι κατάλληλο για τηγάνισμα Αλατοπίπερο

ΜΕΘΟΔΟΣ: Α. Ετοιμάστε το μίγμα για τα μπιφτέκια: 1. Σε ένα μπολ γεμάτο με πολύ χλιαρό νερό, βουτήξτε το μπαγιάτικο ψωμί για 2'-3'.

2. ΣΥΜΒΟΥΛΗ: Εάν δεν έχετε μπαγιάτικο ψωμί, μπορείτε να χρησιμοποιήσετε φρυγανιά τριμμένη. Σ αυτή τη περίπτωση, χρησιμοποιείστε 2/3 φλ. φρυγανιά τριμμένη και 1/4 φλ. χλιαρό νερό. 3. Χρησιμοποιήστε γάντια κουζίνας μίας χρήσης (για να αποφύγετε διασταυρούμενη μόλυνση). 4. Αφαιρέστε την κρούστα από το ψωμί και πιέστε τα να φύγει το περισσότερο νερό (το μπαγιάτικο ψωμί θα πρέπει να κρατάει ακόμα λίγο νερό, για να βοηθήσει να είναι ζουμερά τα μπιφτέκια). 5. Χύστε το υπόλοιπο νερό από το μπολ και τοποθετήστε μέσα το υγρό ψωμί. Τοποθετήστε και τον κιμά μέσα στο μπολ. 6. Σπάστε το αυγό και προσθέστε το. 7. Αλατοπιπερώστε. 8. Στη συνέχεια, ανακατέψτε το κιμά και το ψωμί με το ψιλοκομμένο κρεμμύδι, τη μισή ρίγανη και το 1/2 από το χυμό λεμονιού.

9. Ζυμώστε όλα τα υλικά μαζί μέχρι να ανακατευτούν καλά!

10. Πάρτε μια χούφτα του μίγματος και πλάστε τη σε στρογγυλή μπάλα με τα χέρια σας. 11. Επαναλάβετε τη διαδικασία, φροντίζοντας να κάνετε όλα τα μπιφτέκια το ίδιο σχήμα, βάρος, μέγεθος. Θα πρέπει να φτιάξετε περίπου 8 κομμάτια.

12. Αφήστε τα μπιφτέκια να ξεκουραστούν και να δέσουν στο ψυγείο (καλυμμένα) για 30' πριν το τηγάνισμα. Β. Τηγάνισμα: 13. Μετά από 30', ζεστάνετε το λάδι σε ψηλή θερμοκρασία σε ένα μεγάλο, αντικολλητικό τηγάνι. 14. Μόλις το λάδι ζεσταθεί, προσθέστε τα μπιφτέκια και τηγανίστε τα σε χαμηλή φωτιά μέχρι να ροδίσουν.

15. Πατήστε τα από πάνω για να γίνουν πιο επίπεδα. 16. Γυρίστε τα μπιφτέκια τακτικά για να βοηθήσετε να μαγειρευτούν μέχρι μέσα. 17. Θα πρέπει να τηγανιστούν σε περίπου 10' ή 5' ανά πλευρά. 18. Πατήστε τα επίσης με τη σπάτουλα σας για να τα βοηθήσετε να μαγειρευτούν.

19. Κατόπιν αφαιρέστε τα από το τηγάνι, τοποθετώντας τα σε μια πιατέλα.

20. Μην σβήσετε τη φωτιά, απλά χαμηλώστε την. Γ. Ετοιμάστε τη σάλτσα: 21. Ενώ το λάδι είναι ακόμα ζεστό, ρίξτε σταδιακά τα 150 ml νερό, τον υπόλοιπο χυμό λεμονιού και τη ρίγανη. 22. Αλατοπιπερώστε τη σάλτσα. 23. Αφήστε τη σάλτσα να σιγοβράσει σε χαμηλή φωτιά για 2'-3', ξύνοντας τον πυθμένα και τις πλευρές του τηγανιού, για να αναμειχθούν μέσα τη σάλτσα όλα τα ξεροψημένα υπολείμματα του κιμά.
ΕΞΤΡΑ ΣΥΜΒΟΥΛΗ: Αν θέλετε η σάλτσα να γίνει πιο πυκνή, προσθέστε 1 κουταλάκι του γλυκού κόρν φλάουρ και / ή 30 ml μαγειρική κρέμα μέσα στη σάλτσα!

24. Όταν η σάλτσα είναι έτοιμη, ρίξτε τα μπιφτέκια μέσα στο τηγάνι και τηγανίστε τα απαλά. 25. Αφήστε τα να σιγοβράσουν στη σάλτσα για 2'-3', έτσι ώστε να μπορούν να απορροφήσουν το μεγαλύτερο μέρος της υπέροχης, ξυνής σαλτσούλας, γυρίζοντας τα απαλά ανάποδα. 26. Ανακινήστε το τηγάνι για να βοηθήσετε την σάλτσα να καλύψει όλα τα μπιφτέκια, αλλά απαλά, για να μη τα σπάσετε. Ή γυρίστε ελαφρά το τηγάνι στο πλάι, συλλέξτε λίγη σάλτσα με μια κουτάλα και περιχύστε τη πάνω από τα μπιφτέκια. 27. Σβήστε τη φωτιά. 28. Τα ζουμερή και λαχταριστά μπιφτέκια είναι έτοιμα να σερβιριστούν! Γιάμ!

Δ. Πρόταση σερβιρίσματος: 29. Σερβίρετε τα Μπιφτέκια ζεστά, με πατάτες πουρέ (κοιτάξτε τη ξεχωριστή συνταγή μου) περιχύνοντας λίγη από τη σάλτσα από πάνω.

30. Σημείωση: Μπορούν να φυλαχτούν στο ψυγείο για μια εβδομάδα. Μπορούν επίσης να φυλαχτούν στη κατάψυξη για ένα μήνα. 31. Μια νέα εγγυημένα αγαπημένη συνταγή για την οικογένεια!
Μια επιπλέον ιδέα είναι να προσθέσετε στη σάλτσα 200 γρ/7 oz ψιλοκομμένα Μανιτάρια και μισό φλυτζάνι/120 ml Κρέμα Γάλακτος για μαγειρική, για μια πιό κρεμώδη και θρεπτική σάλτσα!

Ε. Τουριστικός Οδηγός Ελλάδας: Η λέξη "Μπιφτέκι" προέρχεται από τη γαλλική λέξη bifteck δηλ. μπριζόλα. Τα Μπιφτέκια είναι η ελληνική έκδοση των αμερικάνικων χάμπουργκερ. Ίδια ιδέα, αλλά προσθέτοντας επιπλέον υλικά και μπαχαρικά για να διατηρήσετε το κιμά ζουμερό και να ενισχύσετε τη γεύση του. Οι Έλληνες αγαπούν τόσο πολύ τα μπιφτέκια, που μπορείτε να βρείτε πολλές παραλλαγές σε διαφορετικές περιοχές- οι πιο συνηθισμένες είναι οι εξής: μπιφτέκι γεμιστό με τυρί φέτα ή τυλιχτό σε πίτα όπως το σουβλάκι (κοιτάξτε τη ξεχωριστή συνταγή μου).

Θα βρείτε μπιφτέκια ψητά, τηγανητά ή στα κάρβουνα σε όλη την Ελλάδα. Αλλά ένα από τα καλύτερα μέρη για να τα δοκιμάσετε είναι στην περιοχή της Γλυφάδας, στην Αθήνα. Εκεί θα βρείτε πολλά φημισμένα εστιατόρια που τα σερβίρουν! Η Γλυφάδα είναι ένα όμορφο προάστιο δίπλα στη θάλασσα. Επισκεφθείτε την για κολύμπι και ωραίο φαγάκι.
