Today I'm trying out a traditional Appalachian method of preserving string beans, called Leather Britches Beans! You string the beans onto a strong piece of thread, hang them up to dry, and...that's it:

In wintertime, you take them down, soak them in water, and cook with a ham hock or similar. My sources varied on whether it's best to hang them in sun or not-in-sun, so I did two short strings and hung them in different spots in the kitchen.
I don't know how well it'll actually work--I'm having visions of the beans just rotting up there--but I'm getting a lot of beans from the farmshare. Like, a lot. I already froze three quarts, and I have two more quarts (green and yellow) coming this Friday, so I figured I'd give this a whirl and see what happens!
Most of my ethnic foodways practices come from my Pennsylvania German heritage, but I'm Southern Appalachian on my mother's side, so it's neat to try something from that tradition.

Calendula Experiments: Calendula Tea
Note: I'm by no means an expert herbalist - please do your own research before consuming herbs. This is my experience learning to work with herbs.
It's Calendula season here in Southern New England and I've been eager to get to know this beautiful flower better.
I first met Calendula in the fields of my CSA (Community Supported Agriculture) farm share. I was immediately enchanted by its bright orange color (they seem to grow exclusively orange flowers) and cheerful appearance. I have been drying and using its petals in my magic to bring in happiness and solar energy for a number of years but I am very interested in its healing and culinary applications.

Calendula (Calendula Officinalis) is often called "Pot Marigold" but should not be confused with the very toxic Marigold that is often associated with Mexican folklore and the dead. It is edible and has a host of powerful benefits to the human body when applied topically or internally. Herbal Academy states that it is vulnerary (assists in promoting healthy healing of tissues), Anti-inflammatory, Hernostatic (staunches bleeding), Topically analgesic (pain-relieving), Astringent, Antiseptic, Diaphoretic (helps to promote sweating), Lymphagogue (support lymphatic health), Cholagogue (bile stimulating), and an Emmenagogue (supports menstrual health).
Last year, I tried to cook with it by adding it to a quiche but didn't notice a lot of perceptible flavors. That might be great if you want the many culinary benefits of Calendula medicine without any added flavor but for me, I like to taste my flowers.
This year, I decided to try a Calendula iced tea recipe that was suggested by a number of different herbalists on Insta. The recipe itself was simple - equal parts hot water and calendula, steep until the tea got cold naturally. I let the tea cool in the later afternoon sunlight on my working kitchen altar to empower it.

Finally, I got to experience its flavor! Calendula is a bitter flower (especially when you include the greens which is where a lot of the medicine is) and quite bracing. The flavor reminds me quite a bit of Genziana, an Italian liquor made with an infusion of gentian root. My partner really enjoyed it as ice tea (especially with a bit of forsythia syrup to sweeten it) but it wasn't tasty enough for me to repeat. At least as a fun and tasty afternoon tea.
Come cold and flu season, I may feel quite differently. I'll dry some whole flower heads just in case.

Today I am translating a Polish text for a friend. Tomorrow I am picking up another friend's surplus farmshare produce before he goes out of town for the holidays. A third friend is making me a beaded bracelet that says DYBBUK. I have put a lot of energy and effort into nurturing and maintaining interpersonal relationships this year and now in the waning hours of this annus horriblis I am looking around and finding myself, like, "in community" for the first time. Socializing yourself as an adult like a feral cat when you were isolated during formative developmental years and never learned how to have reciprocal interactions with other human beings...girl...it reaps rewards

thinking a lot about food (as I always am) on this fine april 1st, here's my runaway smash favorite from last year's farmshare box
Greens fritters (c/ o jubilee farm)
Toss them in a pita or wrap with hummus, more greens, hot sauce, tzatziki, something pickled (maybe those radishes!), roll it up and enjoy!
A bunch of greens, about 1/2 lb, the mustard mix or arugula is perfect here! But you could also do kale or chard or collards, just removed the tough stems first.
3 tablespoons olive oil or grapeseed oil
1 small onion, diced fine
Salt, to taste
2 cloves garlic, chopped
½ cup cilantro or parsley, chopped fine
1 tsp cumin
1 cup panko (or other) breadcrumbs
1/4 cup crumbled feta
1 or 2 eggs
Oil for frying
Pulse greens in a food processor or finely chop with a knife-they should be small but not puréed or mushy. Set aside. Heat a large skillet over medium-low heat and add the oil, onion, and salt. Cook, stirring occasionally, until soft and lightly browned, about 10 minutes. Add the garlic, cilantro or parsley, and cumin. Stir for 30 seconds. Add greens to pan and sauté for a minute or two, until they have wilted. Turn the mixture into a large bowl. Let cool for five minutes, then add the breadcrumbs and feta. Mix well, then taste for seasoning. Add more salt if necessary- this is your chance to get the seasoning right while the mixture is egg-free. Crack one egg into the bowl and mix with your hands to incorporate. Squeeze a small ball of the mixture. If it holds together, begin portioning out the remaining mixture into small balls. If it doesn't hold together, add another egg. I usually find one egg to be enough. Heat oil in a skillet over medium-high heat. Add balls to pan-they should sizzle when they hit the oil- then turn heat down to medium or medium-low. Cook until golden, about 2 minutes. Use a fork to flip the balls to the other side and cook for another 2 minutes or so. Serve immediately or at room temperature.
(additional hot tip: serve with kewpie deep roasted sesame dressing!!)

Another Friday, another farm box! This week I got strawberries, rhubarb, asparagus, radishes, carrots, microgreens, spring onions, and garlic.

I'm planning to make an asparagus risotto (asparagus, onions, garlic), salmon patties (carrots, onions, garlic) with a side of roasted root vegetables (radishes, carrots, bit of onion, a potato or two from the store), and rhubarb cake. I'm going to buy some chicken salad to make sandwiches to put the microgreens on, and the strawberries I'll eat plain or with ice cream.

almost signed up for a farmshare, but of the two affordable options, one requires pickup on saturday morning before 11 (i may be awake by then but i am simply not leaving my house that early on saturday), and the other doesn't start until june and also has to be every week (instead of every other week, which is what i want bc every week is too expensive). so no farmshare for me. i still really want to get myself to go to the farmer's market at some point. i think that at least goes until like 1 or 2pm on saturday so it is somewhat more feasible.
