Banana Chocolate Chip Bread
Makes about 12 slices
This is a great recipe for using up those ripe bananas.  Baking this bread makes your house smell great and who wouldn’t love the smell of chocolate? This bread provides you with the taste of bananas and chocolate chips.
Ingredients
1/2 cup unsalted butter, softened (1 stick)
2/3 cup granulated sugar
2 eggs, room temperature
3 ripe mashed bananas, medium size
1 teaspoon vanilla extract
1/2 teaspoon banana extract (optional)
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup of semi-sweet chocolate chips
Directions
Preheat oven to 350°.  Spray a loaf pan with nonstick spray.
In a mixer cream the butter and sugar until light.  Beat the eggs lightly, add the eggs, and blend well.  Beat in the vanilla and banana extract. 
In a separate bowl mash the bananas with a fork.  Mix in the mashed bananas until blended. 
In a separate bowl combine the flour, baking soda, and salt.  Gradually add the flour mix to the batter until well-blended.
Carefully stir in ¾ cup of the chocolate chips.  Pour the batter into the prepared loaf pan.  Then use the ¼ cup of chocolate chips remaining to put them on top of the batter.
Bake at 350° for 50 to 55 minutes or until a toothpick inserted into the center of the bread comes out clean.  Let it remain in the loaf pan for about 10 minutes then place on a wire rack to cool.
Notes:   Ovens vary in temperature so check your oven to make sure the batter is baking okay and not burning.  An oven thermometer would come in handy.

Peanut Butter and Chocolate Chip Banana Bread

A slice, or two, of this beautifully moist and delicious Peanut Butter and Chocolate Chip Banana Bread makes an indulgent afternoon treat for the weekend. Happy Saturday!
Ingredients (makes 1 loaf):
2 tablespoons unsalted butter
2 large, over-ripe bananas
1 teaspoon Vanilla Extract
1/3 cup demerara sugar
1/2 cup natural peanut butter
1/2 cup plain yoghurt
2 large eggs
1 cup plain flour
1 cup wholemeal flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
70 garms/ounces dark chocolate
Butter and line a loaf tin with baking paper. Set aside.
Melt butter in a small saucepan, over a low flame. Once melted, remove from the heat; set aside.
Peel bananas and place in a medium bowl. Thoroughly mash them with a fork until just a little chunky. Stir in demerara sugar and Vanilla Extract until well-blended. Stir in peanut butter and yoghurt until well-combined. Whisk in the eggs, one at a time, whisking well after each addition. Set aside.
In a medium bowl, combine plain flour, wholemeal flour, baking powder and bicarbonate of soda. Give a good stir; set aside.
Using a large knife, roughly chop dark chocolate into morsels. Set aside.
Then, gradually fold flour mixture into banana mixture with a rubber spatula until just blended, making sure no pockets of flour remains. Fold in melted butter and dark chocolate morsels.
Pour batter into prepared loaf tin, and place in the middle of the hot oven. Bake, at 160°C/320°F, 45 minutes, until a toothpick inserted in the middle of the cake comes out clean.
Remove from the oven, and let cool slightly before lifting cake out of the pan.
Let Peanut Butter and Chocolate Chip Banana Bread cool slightly or completely before serving, with a cup of tea or coffee.
