Mushroom Bangers and Mash

Ava and I skipped lunch today, for we had a proper breakfast this morning: toasts, scrambled eggs, bacon, sausages, the whole lot. And we had a great dinner in Ponsonby. But, if you have room for a hearty, tasty Sunday Lunch, without the hassle of a full-on Roast Dinner, these Mushroom Bangers and Mash are what you want! Happy Sunday!
Ingredients (serves 2):
1 tablespoon olive oil
1 (400-gram/14.10-ounce) good quality Toulouse or Cumberland Sausage
1/2 red onion
1/2 teaspoon dried thyme
1/2 tablespoon unsalted butter
8 large button mushrooms, dusted
1 large garlic clove, minced
1/4 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1/2 tablespoon plain flour
1 1/2 tablespoon good quality White Port
1/3 cup Beef Broth, warmed
1 tablespoon demerara sugar
freshly made hot Potato Mash, to serve
Heat olive oil in a skillet over medium-high heat. Once hot, add the Toulouse Sausage, and cook, about 4-5 minutes on each side until well-browned. Transfer the Sausage on a plate, leaving its fat in the skillet. Set aside.
Peel and finely slice red onion, and add to the skillet. Cook, 3 minutes until tender and just starting to brown. Stir in dried thyme.
Then, add butter to the skillet.
Cut button mushrooms into thick slices. Once the butter is just foaming, stir in the mushrooms, and cook, shaking the pan often until they take a nice golden colour.
Reduce heat to medium, and stir in garlic. Cook, 1 minute. Season with fleur de sel and black pepper.
Sprinkle in the flour, coating the mushrooms and onion. Cook out, 1 minute. Deglaze with White Port, and then, gradually stir in warmed Beef Broth, until sauce beautifully thickens, coating the spoon. Add demerara sugar, and cook until completely dissolved.
Return Toulouse Sausage and its resting juices to the skillet, and cook, about 2 minutes on each side to warm through.
Make sure the Potato Mash is well-warmed too.
Cut Sausage in half and serve Mushrooms Bangers and Mash hot, with a glass of robust red wine, like a French Corbières or Australian Shiraz.

1. Zombie deer. I moved to a place with a lot of deer and I made this on Halloween. I really oughta go over it in ink sometime but I don’t have access to a photocopier so I can’t right now
2. Portrait of Zuko (the plant). For a while this was hanging directly above the real plant, like that meme where a guy is sitting beneath his own portrait and they look exactly alike.
3. Portrait of Mewtwo (the plant) and a different plant whose name I can’t remember. The second plant has since died, but Mewtwo is still going strong (Mewtwo is the one on the right).
4. Art class assignment. We had to draw a crumpled paper and the light kept changing so I couldn’t get a consistent model. Class ran out of time before I could finish
5. Hand with mushrooms. I actually made this way earlier in the year when I was bored in class.
6. This is actually based on a real photo of my dog on her birthday. I made her a “cake” made out of meatloaf and mashed potatoes.
7. This one makes me mad bc I messed up the perspective and it’s way too wide. Ironically, I think I drew it just to prove to someone that perspective drawing isn’t as bad as everyone makes it out to be. But yeah I was on a lemon demon kick so that’s Cabinet Man
8. The most recent in my plant tarot series. These are just little doodles I like to do in class, bc I usually can do them without a reference. The chariot is Himalayan blackberry and the tower is based on a real poison hemlock plant that I tried and failed to destroy.
9. The magician. I originally wanted to use a lichen as the magician bc they’re an amalgamation of a lot of wildly different things that come together into one much stronger thing. But I couldn’t figure out a way to draw a lichen that would be recognizable, so I just went with plants, fungi, animals, and earth. The mushroom is a destroying angel.
10. The fool. Idk why but I’ve been kinda obsessed with the idea of a dandelion as the fool. Something about it coming up in the harshest of environments and thriving anyways. Idk. It’s very messy but it’s fun to make.

Today is my golden birthday
I'm 24, on March 24th, 2024
I'm going to celebrate it by making a hobbit-esque feast tonight with my family. Gonna have bangers and mash, glazed mushrooms, a charcuterie board, sparkling cider, and some type of cake and tea. I'm so excited!

The sausage was flavorful and slightly gamey, and the escarole had a nice grilled smokiness. For brunch I ordered the bangers and mash (grilled pheasant sausage with mashed potatoes and grilled escarole). It is a green tea with petals of chamomile, rose, jasmine, and lavender. The tea list occupies its own separate menu, and I decided on a tea called Snow Mountain. The inside was nearly as lovely as the outside, with detailed tile ceilings, but since it was nice day, we opted to eat outside. The teahouse itself was beautiful, with decorations in hues of blue and rose. It's called The Boulder Dushanbe Teahouse, and the decorations were made by artists in Tajikistan, then imported and assembled. On the last day, I went with one coworker to a restaurant I had read about before leaving for Colorado. I recently returned from a trip to Boulder, CO, for some training for the company I work for.

Scotch Eggs

So please skip this ask unless it finds you in the right mood, but Im enamored with the food in your writing. Something about it makes it feel so magical. So my question is, what are some of Sirius and Remus’s favorite foods? (Any AU.) 🧁
Thank you dear! I do love writing about food. I think because my characterisation is so (purposefully…) inconsistent from story to story, their favourite foods would vary from story to story too. Statten Park Remus (Pot Noodles) and A Brief History of Dragons Remus (porridge with honey) and Beneath a Big Blue Sky Remus (bangers and mash) all have very different palates. Further thoughts ahead - although I only seem to know Remus’s favourites, not Sirius’s. He never tells me.
Hollow Places Remus: leek and potato soup, wild mushrooms fried in butter on sourdough bread, pine needle tea, biscuits baked with cinnamon and nutmeg, blackberries drizzled in honey.
A Brief History of Dragons Remus: porridge (not too hot), Yorkshire Tea (decaf), brown toast (butter and honey on the side).
Beneath a Big Blue Sky Remus: sausages, big blousy Yorkshire puddings with beef gravy, Hope’s apple crumble and custard, roast potatoes cooked in goose fat (the goose had it coming), tea and plenty of it.
Crowns & Coffee Cups Remus: black coffee, pineapple on birthday pizza, chocolate with popping candy (“That can’t be good for your headache, Remus”), olives, pho with extra chilli, cheese on toast with Marmite.
Statten Park Remus: Heinz tomato soup, Quavers, Sirius’s coq au Riesling, bacon sandwiches with ketchup, chocolate Digestives, Robinson’s orange squash with lemonade, and absolutely no prawn sandwiches.
My best friend once described my palate as “half Henry VIII, half a small child in the 90s” and the joy of writing so many AUs is that I get to explore every facet of this wide and varied spectrum. Why shouldn’t I have Lucky Charms for breakfast followed by a whole Camembert for dinner? x
