Lemon and Tomato Pasta (Vegan)

Fragrant with bright flavours, this Lemon and Tomato Pasta makes a hearty lunch, exactly one one needs after spending a sunny morning pottering in the garden. Happy Thursday!
Ingredients (serves 2):
2 cups short pasta (like fusilli or penne)
2 tablespoons olive oil
½ large Green Onion
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 1/2 lemons
1/3 red chili pepper
2 small, ripe tomatoes, rinsed
a pinch of fleur de sel or sea salt flakes and freshly cracked black pepper, to taste
2 teaspoons caster sugar
3 leaves Garden Basil
2 1/2 tablespoons Limoncello 
In a pot of salted boiling water, cook fusilli according to package’s direction, usually 9 to 11 minutes until al dente.
While the pasta is cooking, heat olive oil in a large, deep, nonstick skillet over medium heat. 
Finely chop the Green Onion and stir into the skillet, saving a bit of the green part. Cook, a couple of minutes until softened.
Add dried oregano, dried basil, and grate in the zest of a whole lemon. Fry, a couple of minutes more.
Thinly slice red chili pepper, and add to the skillet; cook, 1 minute more. 
Roughly chop the tomatoes, and stir them into the skillet, along with their juice. Increase heat to medium-high, and simmer, 4 minutes, stirring often. Season with fleur de sel and black pepper, to taste. Then, stir in caster sugar until dissolved. Thoroughly squeeze in the juice of the lemons, and cook, 1 minute more.
Then, drain fusilli, saving about 1/4 cup of its starchy water. Stir both into the skillet, coating the pasta in sauce. Give a gentle stir until the sauce beautifully coats the pasta.
Finely chop Basil, and stir it in, along with Limoncello, and remove from the heat. 
Serve Lemon and Tomato Pasta hot, sprinkled with reserved green part of the Green Onion, with a glass of chilled dry white wine, like a light and citrus-y Chardonnay or Sauvignon Blanc.

Chicken Carbonara

Ingredients
12 oz fettuccine
4 slices bacon
3 garlic cloves, minced
1 boneless skinless chicken breasts, cut into strips
Kosher salt
4 large eggs, beaten
3/4 cup shredded Parmesan
3 tbsp dried parsley
1 1/2 tsp onion powder
1 tsp dried oregano
1/2 tsp dried basil
1/2 tsp dried thyme
Instructions
0. Cut your chicken breast into strips (across)
1. In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain, reserving 1/2 cup pasta water, and return to the pot.
2. Meanwhile, in a large skillet over medium heat, cook bacon until crispy. Transfer to a paper-towel lined plate.
3. Add chicken to the skillet and season with salt. Cook, flipping halfway through, until no longer pink, about 10 minutes.
4. Add minced garlic and cook until fragrant, about 1 minute. Turn heat to low.
5. Crush the bacon into pieces. Return bacon to the skillet. Add cooked pasta and toss until combined.
6. In a small mixing bowl, beat the eggs
7. To the eggs, add Parmesan, parsley, onion powder, oregano, basil, thyme, and a dash of salt. Stir until combined
8. Pour egg mixture over pasta and toss until coated. Add a couple tablespoons of the pasta water until creamy.
Add more pasta water by the tablespoonful as necessary.
9. Serve warm

Rosemary and Butternut Osso Bucco

Fragrant, hearty and delicious, but a bit lighter than a classic Osso Bucco, this Rosemary and Butternut Osso Bucco is a tasty lunch on a chill Winter day! Happy Wednesday!
Ingredients (serves 2):
2 heaped tablespoons plain flour
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon Piment d'Espelette or Cayenne Pepper
½ teaspoon fleur de sel or sea salt flakes
½ teaspoon freshly cracked black pepper
2 tablespoons olive oil
500 grams/1.10 bone-in veal shin, cut into two thick slices
1 medium carrot
an onion
a few fluffy sprigs fresh rosemary
the bottom halve of a large butternut squash
½ teaspoon coarse sea salt
1 cup good dry white wine like Chardonnay or Sauvignon Blanc
3/4 cup water
Preheat oven to 160°C/320°F.
In a large, shallow plate, combine plain flour, dried basil and oregano, Piment d'Espelette, fleur de sel and black pepper. Give a good stir. Set aside.
In a large Dutch oven over a medium-high flame, heat olive oil.
Generously dredge veal shin slices into the flour and herb mixture, shaking off excess flour.
Add veal shins slices to the Dutch oven, and brown well on all sides. Once browned, transfer veal slices to a plate; set aside.
Peel and slice the carrot, and add carrot slices to the Dutch oven.
Finely chop onion, and stir into the Dutch oven. Cook, a couple of minutes until softened.
Add the fresh rosemary sprigs to the pot, and give a good stir.
Seed, peel and cube butternut squash. Stir into the pot, coating in oil and herbs.
Season with coarse sea salt.
Return veal shin slices and their resting juices to the Dutch oven.
Deglaze, gradually stirring in dry white wine. Bring to boil.
Once boiling, cover with the lid, and place Dutch oven in the middle of the hot oven. Bake, at 160°C/320°F, at least 1 hour and a half.
Serve Rosemary and Butternut Osso Bucco hot, on its own or with rice or pasta. It pairs nicely with a nice, robust and woodsy red like a Chateaugay Côtes d'Auvergne or a chilled dry white like a volcanic Puy-de-Dôme Chardonnay.

Breakfast Hash Brown Nests
Chef’s Note: They look adorable and are a very fun take on breakfast. The mushroom mixture tastes SO good. It’s really surprised me how much the egg and potatoes mix well. You cannot have just one. It’s not long/hard, I just separate into easy steps

Makes: 12 breakfast cups
Ingredients
3 bacon strips, cooked and crumbled
bacon fat (or, if not using bacon, 2 tbsp butter)
8 oz sliced baby bella mushrooms
1 shallot, chopped (~1/4 cup)
1 garlic clove, minced
1/2 tsp salt
Dash cayenne pepper
2 tbsp sour cream
1 tbsp minced fresh basil OR 1 tsp dried basil
~ 3 cups frozen shredded hash brown potatoes
7 large eggs
1/4 cup shredded Swiss cheese
(optional) 1 green bell pepper
Instructions
0. Place frozen hash brown potatoes on the counter to let them thaw.
if you really want to, you can cook the hash browns, but I think it’s fine if they are just thawed. They won’t be colored though
if your bag is larger than 3 cups, try to take out 3 cups. most bags don’t like you re-freezing potatoes
0. Chop shallots. Slice mushrooms, if not already sliced. Mince the garlic clove
1. In a large pan, fry the bacon on medium heat until crispy
2. Remove bacon and place on a paper lined plate. Leave bacon fat in pan
3. Preheat oven to 400°F
4. Add the mushrooms and shallots to the pan. Saute on medium-high heat until tender
5. Add garlic, salt, and cayenne pepper to mushrooms. Cook, stirring to mix, for about one minutes
6. Turn off heat. Pour the mushroom mix into a small bowl. Stir in the sour cream and basil
7. Grease a regular sized muffin tin (12 muffins)
I used cooking spray
8. Press about 1/4 cup of the hash browns into the bottom of the muffin cups
This is between 1/2 and 3/4 of the way full. I just eyeballed most of them
9. Crack eggs into a bowl. Lightly beat eggs to mix the yolks and whites
10. Fill each muffin cup with about 2 tbsp beaten egg
I just had the tbsp measure over the muffin cup and poured from the mixing bowl, measuring as I went
If you have a bit leftover, just add to tins with what looks like “less egg”
11. Spoon mushroom mixture evenly among the cups
12. Cut up / crumble the bacon. Scatter across muffin cups
13. Top with shredded Swiss cheese
14. Bake until eggs are set, 15 to 18 minutes
15. If you want a side of bell pepper, chop up the bell pepper into pieces (not small, but like, into quarters and then slices). Saute on medium heat in your mushroom pan in the remaining bacon fat until tender
Or, if you need more fat, add 1 tbsp butter
16. When the muffins are finished, let stand and cool for 2 minutes. Help wiggle out the muffin with a plastic utensil. Serve warm
Muffins should come out easily.
I decided to serve with some sauteed green bell pepper
