Alana is probably the person I most want to interact with Bedelia post-canon, because they mirror and contrast with each other in such tasty ways.
Both psychiatrists, and both people for whom compassion and curiosity are a mixed bag, to say the least. Alana, by her own admission, struggles with porous boundaries regarding her professional responsibilities and personal relationships; Bedelia’s approach to care is extremely mercy-kill oriented, if her conversations with Will are anything to go by. Alana is decent enough and self-aware enough to recognize the way her “professional curiosity” about Will would be detrimental in a relationship between them, but that curiosity is still a temptation that she has to resist. Bedelia arguably gets herself into hot water because of her curiosity about Hannibal (and by extension, the fascination that violence holds for her, if only in the abstract).
Notably, Alana turns against Hannibal when she discovers what he is, while Bedelia opts to go on the run with Hannibal around the same time he takes off his “person suit” - imo both out of self-preservation and the pull he holds for her, that she can’t quite shake. Alana’s compassion for Hannibal melts away right around right around the time when Bedelia takes up the full-time mantle of Hannibal’s therapist/partner, expending the most compassion and effort to understand another person that we ever see from her, something Will calls her out in with “why is one patient worthy of compassion and not another?” Also worth noting is that season 2A features both of them manipulating dangerous men under the label of “therapy” - Bedelia trying to influence Hannibal to kill Will, and Alana using the mantle of her role as Mason Verger’s psychiatrist to assist him in capturing Hannibal.
The most major distinction between them is, of course, the fact that Alana is invested in altruism, sometimes at the expense of her own happiness and safety, whereas Bedelia seems largely unconcerned with any higher causes than her own survival. Alana having to make the decision to set Hannibal free, thus putting herself at risk, in order to prevent collateral damage and save Will, was a pivotal character moment for her in season 3. But the back half of season 3 actually allows her to balance both her concern for the common good with her concern for her own safety - taking on the role of Hannibal’s jailer is both a public service and one that keeps her and her family safe (her line about holding all five keys to him scans to me as implying both motivations).
But post-canon is where things gets interesting for Alana in this regard, imo, because she’s in a much more perilous position, one where she has to face the consequences of her choice in a way she was temporarily insulated from. The question of how far she would go to preserve her safety and protect those close to her, how much she would have to compromise her morals for that, what it would take to push her into throwing an innocent person under the bus for her own safety (her complicity in the Chilton thing late in season indicates she’s already willing to accept collateral damage, but how much of that kind of thing would wear away at her?)… that’s what I’d love to explore with a post-canon Alana.
That’s where Bedelia comes into the picture - someone who has very little compunction about collateral damage and sacrificing others to survive. In a post-canon scenario, she would function as a dark mirror to Alana - someone Alana doesn’t want to be like, but sees some of the worst possibilities for herself reflected in.

Scent Freak Hannibal (Holes in the Floor of the Mind)

Hannibal is 10x more freakish about smells in the books, and it manifests in some subtle ways in the show.
Hannibal's characterization as a lovable serial killer is a brilliant literary feat. Part of what makes him so likable is how receptive he is to sensation. He's almost childlike in how he experiences the world. His narration is so vivid with description that it makes him seem more alive, more human, than the other characters, whose inner voices are dull and flat by comparison. He is powerfully influenced by sights, sounds, textures, and especially smells, all leading to memory. It's very Proustian and psychological.

Red Dragon
Aside from the iconic aftershave dig, Hannibal uses scent to decide to get Will's home address. This is the very first peek into Hannibal's POV we get in the series:

First mention of Hannibal's nemesis: the toilet (more on that later). They cleaned his toilet with Clorox -> bleach -> semen -> irritating man scent -> Will Graham
Will smells like teaweed, which grows in the southeast US -> Hannibal is thinking about where Will might live (Florida). (Like how Hannibal smells pine on Will in the show.)
Hannibal can smell Will's thoughts which are warm and brassy
Will's warm, brass thoughts are incorporated in the show! Will's silver pendulum, as it was described in the book, was changed to yellow. In season 1, whenever we enter his crime scene reconstruction POV, the lighting completely changes and there's a warm filter:

(I also like to interpret the shift in warmth as Will feeling more alive when he's closer to a killer's thoughts, but that's just me)
The Stool Pit
One thing the show didn't explore was Hannibal's worst sensory nightmare: feces. For him, stool is closely linked to both prison ("watching the diaper cart go by") and the horrific death of his sister. In Hannibal, the scent of a soiled diaper on a airplane gives him a traumatic flashback dream about Mischa:

The "holes in the floor" of Hannibal's memory palace are oubliettes, dungeons where he stores all his bad memories to forget about them:

Even though Hannibal probably didn't see Mischa's teeth in the stool pit in the show (since his backstory was changed), it's alluded to with Alana's threat to take his toilet (his entire toilet, not just the seat like in the book).

This line is mostly a quote from The Silence of the Lambs, except for "the company of the dead" addition. It leads straight into one of Hannibal's flashbacks about Abigail. Based on how the lights black out, I can only assume Hannibal's memories about Abigail are negative. Is he falling down the rank oubliettes of his mind when he thinks of her? Does he regret killing her at all? We can only guess.

Knowing this, the proximity of the toilet to his prison bed is crazy. They had a huge room to put his bed anywhere, and they chose to put it right next to the toilet? Lol.

Cleanliness
Clean smells are Hannibal's favorite thing, hands down. They are in direct opposition to the stool pit, and a metaphor for innocence, purity, washing away sins, etc. The first thing we see him do after killing Abigail is take a shower, washing blood from his skin, washing away the past...
He loves the soap and lotion store in Florence (the Farmacia di Santa Maria Novella), "one of the best-smelling places on Earth," because it takes him away from bad memories.

Just now noticing and appreciating how will, Jack, abigail, bedelia, alana, and even dolarhyde have all had onscreen dreams and/or hallucinations with intense visuals to show us their minds and perspectives, but to my knowledge we have seen none for hannibal, nothing offering us insight to his thoughts.
(I know we've seen his memory palace, but I'm strictly talking weird visions like the ravenstag, things he has no control over)

‘Ello! I’m at the beginning of a long fic project: writing season four, in prose, inspired by how the cast and crew say a season four would go. It will be in thirteen installments, structured to feel as episodic as the thirteen parts of each season.
This means it won’t just follow Will and Hannibal. We’ll see other characters returning too. There will also be A LOT of mind palace stuff. The pasts of these characters, the before yous, and after yous will both be included.
Anyway, since I’m at the beginning of outlining I wanted to see what people in the fandom would really want to see included or avoided in this fic. Are their questions you want answers to? Characters you want to see again? Ways in which you think Molly and Walter should be included or left alone, ways Alana and Margot can be honored (since there’s a lot of misogyny against Alana in the fandom), or ways you want Abigail to be incorporated?
Mathew Brown will be in this fic, though if you’re a Brownham fan, don’t get your hopes up too too high. And call backs to imagery, dream sequences, and moments from the books and show will be incorporated but I think it will be more fun to write (therefore giving me more motivation) if it involves more interaction.

Hii I am new to the Hannibal fandom and I think u understand the show and the actors and Bryan alot . But there are some things that are worrying me . I read about Ur speculation of Hannibal s4 and I agree with it even tho it's almost impossible now to get a season but my mind can't find peace if I don't get some answers so I hope u won't mind me asking you about your thoughts and what the plot will be for S5 as Bryan wanted to include sotl and what he means by Will being "happy" only in s5.
Will he Leave Hannibal or something??
Hello! Welcome to the fandom!)) Now, what I think makes sense and what Bryan could have planned might be different things, but if to combine them... first, here are my predictions for the potential S4 in case someone is interested and hasn't seen them.
According to Bryan’s words ever since the show ended, this is what had to be present:
1) Will being behind the veil with Hannibal, firmly turning away from the ‘light’ side once and for all.
2) Will and Hannibal being in Cuba and having “adventures” as well as going after Margot and Alana together.
3) Mind Palace, hallucinations, and search for self.
4) Will being out of his mind.
5) Hannibal manipulating Will.
As a theory: Will is going to feel drunk on his newfound darkness and freedom. He was repressed for so long that now that he Became, he’ll be losing his focus and drowning in his own preferences, forgetting what they were and turning into a much more vicious monster any of us expected. He’ll be chasing the high he felt from killing Francis and failing to find it. He’ll be surrounded by blood, his past victims (hence the return of everyone dead, like Bryan mentioned), and more madness. A part of him will want to impress Hannibal, to prove that he’s a worthy partner (which is supported by Will seeking Hannibal’s approval throughout the show - the way he glances at him after biting Cordell is a good example; the way he has low self-esteem and knows Bedelia failed Hannibal’s expectations). So he’ll be acting more and more violently.
Hannibal will see that Will is losing himself in a new way. He won’t want to start a physical relationship with him (which Bryan mentioned) because he’ll be afraid that it isn't for the right reasons, that Will is too far gone to made decisions. So, he’ll feel like the best therapy would be to push Will even more and make him realize that he’s approaching their new life from the wrong angle, to make him figure out that this isn't the kind of killer he wants to be. To do this, Hannibal’s manipulation will entail them going after Alana and Margot.
Will won’t be fond of the idea but Hannibal will manipulate him into accepting it, intending it as a test that will finally make Will snap out of his state. So Will will initially help hunt them down but then he’ll realize this isn’t what he wants to do. Hence finally getting his mind back, which creates the ground for his happiness.
Him being happy in S5 is another thing Bryan mentioned. We also know he wanted to do SOTL.
Personally, I don't think this show needs Silence of the Lambs with Clarice and Buffalo Bill at this point because it has already incorporated major elements from it. Clarice has been divided between different characters; we had a plot with Randall, who didn't feel comfortable in his body, didn't find acceptance from society, and evolved in his own murder-y way. I feel like this echoed the events of SOTL in a way that paid homage to it but remained unique and non-repetitive.
But Bryan does want to film his version of SOTL, so it is what it is. Why I don't think he would break Will and Hannibal up, even though it's purely subjective:
1) He said Hannibal wouldn't want to initiate sexual contact with Will as long as Will is out of his mind in S4. This implies to me that the idea is potentially in the cards for S5.
2) Bryan loves the books and pays respect to them in the most relevant ways. I think he wouldn't want to go against the ending where Hannibal finds the love of his life and enjoys his beautiful freedom. The specifics might differ, but Hannibal would still get his happy ending.
3) The ending of every season supports this notion further. Each one ends with Hannibal's victory, it's a narrative pattern, and breaking it would feel jarring (looking at 'Merlin' here).
4) Bryan is always promoting Hannigram in very positive, life-affirming ways. Here's one quick example of him confirming a fan's question if they can believe that Will and Hannibal are happy somewhere out there. There is a million more examples, and I am skeptical that he'd be doing things quite like this if he planned some ultimate tragedy between them.
About S5 plot: Mads said that Clarice wouldn't be Hannibal's love interest while Bryan said she wouldn't be Abigail #2 for Will and Hannibal. So I assume her role would entail either becoming a reluctant ally or a clever nemesis. Perhaps she decides to seek Murder Husbands out because she feels like they would be the best bet at solving some crime, and they feel amused enough to enter a chase with her; maybe Will and/or Hannibal are imprisoned again, so she comes to consult with them. Maybe Hannibal is imprisoned while Will creates the persona of Buffalo Bill to make people like Clarice talk to Hannibal in their desperation for insights while staging his escape.
I like the first and the third options most. Though since Bryan mentioned that he might push SOTL into flashbacks, like it occurred during the 3-year gap in S3, I really don't see the point of this story-line. Introducing major characters so late in the game is a very bad idea.
In short, I believe that the ending for Will and Hannibal is planned as happy, and I'll keep thinking this until proven otherwise (hopefully never)).

Will Graham: ‘I know who I am’

One of the most interesting things about the Hannibal series is that although it is named after Hannibal Lecter, it is actually the story of Will Graham. This whole film is about him, all the events are tied to him and centered around him. Will is both the main point of meaning and the point of the big bang from which the story is born. As the first season progresses and beyond, it becomes clear that it's not just Hannibal who is in love with Will—the writer and directors also are.
And this is no coincidence. Good storytellers (and all readers) know that a story doesn't need a villain or a conflict, although it's good to have both. A story needs a hero, a main character who is interesting to watch.
And Will is interesting to watch. When I tried to watch this series for the first and second time, I made a mistake—I looked at Hannibal. And, of course, I was disappointed. Because there's nothing to see there. Mads Mikkelsen is wonderful, he is good from any angle and in any pose, but the character of Hannibal ceases to amaze after five minutes. I'll say a terrible thing, but by about the third episode he is perceived as furniture. Everyone, absolutely all the characters beat Hannibal one-handed. The entire Jack Crawford team, from Alana Bloom, to the wonderful pair of forensic scientists Zeller and Price (it's hard to resist the assumption that this is a reference to Webber and Rice) and the beautiful and smart Beverly Katz, is amazing. So are the restless and youthfully cynical Abigail, the buffoonishly sassy Dr. Chilton and Freddie Lounds—a red-haired paparazzi with no brains, but with ambitions. What a delight! And in the middle of it all is Will. It is simply impossible to tear yourself away from him.
He is so smart, warm, lively. So different from any mold, cheerful, talented, kind. Perfectly aware of his limitations and aware that others are unlikely to understand that he understands. Irritated not because the people around him are stupider than him, but because he sees the beauty of the world, which cuts him with its sharpness. Everyone is drawn to him, everyone wants to be friends with him, everyone is literally fighting for his affection and attention. They don't even notice how, by his very existence, he does what Hannibal desperately strives for—conquers people.
The first and third seasons are very clearly contrasted. The first is about Will and, so to speak, shown ‘from Will’. This season is light, breathing, open. The third one is extremely decorative, artificial. It is made up of exquisite and ‘expensive’ parts, like puzzles, which in the end do not fit together into anything. The third season is about Hannibal. It is told through the eyes of a psychopath and about a psychopath. In a certain sense, this season is the most boring, because, moving inside the maniac, we discover that there is nothing there—just gilding on a door that leads nowhere. It is the eternal threshold—like the entrance to the palace of the mind. A chapel, but behind it there is no palace. We don't get there not because we're not allowed to, but because there's emptiness there.
Throughout the series, we see Hannibal trying to become the protagonist of the story. It seems to him that if he pulls the strings, then he controls the lives of others, he weaves fate, weaves webs for others. But he simply sews an eye from the dead, because he himself is internally blind. And he understands this.
There is insight where there is another. This is the only way to go beyond oneself. Hannibal is looking for this way out, habitually tightening the noose on one neck of the other. Until he discovers that he pulled it on himself. And only then does he give up.
Do you know what else is needed to get out and be free?
Free will.

based on that interview with hugh + all info they gave us so far, what do you think s4 would be like?
From what I recall what we got was:
Will's mind is broken; lots of mind palace stuff; Alana and Margot would be major characters and would be the vegan lesbians changing the Verger business; s4 could be defined as "lurid erotic intimacy"; no going back or backtracking on hannigram's intimacy; a mirror of season 1 but with reversed roles and a different format; relationship between will and hannibal would be completely different than the other seasons; possibly cuba runaway murder husbands; if it happened back then, hannigram would not have sex because hannibal wouldn't want to do that while will is out of his mind; but if it happens now this could change (fuller said the only thing that changed from back then to now is that it would be more explicit/whatever word he used to say he wouldn't hold back on their relationship).
I think that's it, if you guys remember more, let us know!
Based on that I'm guessing Will using Hannibal's affection for him to kill people. We saw the Bedelia scene and I think that was 100% Will's idea and desire, and he wanted H to do it to "prove" she wasn't as special to him as Will was. Lots of Will being blood-thristy, hallucinations ("broken mind"), season 2 sex appeal elevated to the max, elevated to lethal levels lol. Hannibal as the little bitch we know so well in fanfic. He'd be eating at Will's hand. But would eventually clock the manipulation, and shit would go down. I don't think Bryan would be repetitive to make them fight and separate AGAIN, so perhaps they just accept the insanity and toxicity of their relationship and go along with it instead of trying to get away or rejecting etc.

So after my 50th time rewatching the "I need you Hannibal" scene I've gotten so obsessed I'm doing a close analysis. Also I'm procrastinating. Yes I purposefully subtitled Hannibal with a black box and Will with a white one, because symmetry.

So firstly, I love how the first shot is Will walking towards the open gates in Hannibal's mind palace that he symbolically opened to leave in the previous goodbye scene.
It's noteworthy that Hannibal says 'goodbyes.' He's not just referring to Will's previous conversation with Hannibal, but Will saying goodbye to Jack, Alana, and this old life.
The response "we have one last good bye between us" is, like all things in this scene, dripping with subtext. On the surface Will is saying, 'we're not finished yet, we have to do one more thing' but I almost think, subtextually, he's not referring to saying goodbye to Hannibal at all, but the one last goodbye from them to Jack and Alana. Will has fallen, Hannibal has spent enough time playing with them, it is time for them both to leave. For good.

I think this shot is really cool. It shows that, in the current dynamic, Will is essentially coming back to grovel to Hannibal. He is looking up at Hannibal in the shot. Hannibal is physically higher.
Hannibal's dialogue is also really interesting here. He is desperate for Will to apologise to him, yet he won't fully admit his vulnerability. He feigns ignorance of what exactly will says. He's trying to mock Will for having to come back and grovel without admitting that he was hurt.

This is the first closeup of the scene and it's powerful. It shows us Will's hesitation as he repeats it. Yet also the camera has a slight upward tilt; this isn't him grovelling and saying sorry. He's stating a fact. I've seen a lot of metas about this scene which say this is Hannibal regaining control by getting Will to say please, but I really don't think it is. This is them becoming equals. This is Will saying: I can hurt you, but I need you, so you can also hurt me.

Hannibal WINCES. Like the significance of Hannibal being so hurt by just hearing Will say that again that he winces and drops his superiority act. This is Hannibal expressing vulnerability. And this expression drops the mind palace, the make pretend that Hannibal is looming over Will. They're in reality now.
Ignoring how jarring it is to hear Hannibal say 'mic drop', Hannibal mimics Will so many times during this exchange. I'll point the other out as they happen, but I think this is the first time . I think it's such a weird but fun role reversal, we see Will mimic Hannibal many times during the show, as he feels the lines between them blur. The beginning of Will's villain arc is him getting all groomed and suited up, having cannibal dinners, echoing Hannibal's behaviour. Now, Hannibal is locked up like Will was, and he's mimicking his slang. It's kinda like how whenever they did the mirror effect between Will and Hannibal in season 3B Will is projected over Hannibal. It's like how Hannibal betrayed Will and ran off to get married, and then that's what Will did to Hannibal. Will blurred with Hannibal, Hannibal is now blurring with Will.
It zooms to a contextual shot as Hannibal acknowledges that Will has come back, after such an epic goodbye. Will is vulnerable, just like Hannibal is. They're at equal standing, and this is shown.

Will isn't going to apologise to Hannibal. Like Hannibal was never gonna apologise to Will. But Will is gonna do what he wanted Hannibal to do in season 2: he's going to admit his behaviour. Which is a big deal for one these emotionally constipated gays. Hannibal tries to prod Will into admitting his manipulations in their previous conversation, where Will responds "Are you accusing me of something?" Will never admits his behaviour. Even his 'goodbye' isn't an admission, it's just a statement that Hannibal wouldn't of turned himself in if Will hadn't of rejected him. Not that Will knew and planned it. But this is an admission.
But Hannibal, who is clearly smiling and impressed, still needs more. His 'and you did' prods Will. I have admitted I need you. Admit that you need me. Stop dancing around it.

I'm crying. Hugh Dancy is such a great actor oh my god. Will hesitates for quite a moment. He doesn't want to admit it. When he actually says the phrase 'I need you' he can't even meet Hannibal's eyes. Given how much eye sex Will and Hannibal have, when they break eye contact it's a big deal. Will breaks eye contact another time in this scene as well, in the next big statement, and I think it's important to consider that Will sees eye contact as distracting and overwhelming intimacy. He barely makes eye contact with Hannibal during his first prison visit in a desperate attempt to close that intimacy between them.
If I'm right Will does not call Hannibal by his first name at all in season 3B. Hannibal comments "are we no longer on a first name basis" and Will emphasises that he doesn't want to be personal. Will calls Hannibal his name twice in this conversation. The last time he called Hannibal by his first name was when Will rejected him. It is such a manipulation technique by Will yes, emphasising their connection, but it's also an acknowledgement of their intimacy. We are on a first name basis.

The second example of Hannibal mimicking Will! Directly repeating Will's slang from their last conversation. Also Hannibal looking so pleased with himself. It's a lot. This scene is like my favourite scene. I'm emotional.
Okay so the next bit is, in my opinion, two conversations. One for the listeners and one between Will and Hannibal. I'm going to say my interpretation of the secret conversation.

I have been contacted by the dragon, he wants to meet you. There's no way Hannibal didn't get that from the 'maybe.' Will never says 'maybe' if he's profiling. He's been contacted.
I am serious about this. I rejected you before. I have come back. i am staying back. This is a serious invitation. I'm interpreting this because Hannibal's previous 'ding dong the dragon's not dead' is somewhat mocking Will's previous certainty the dragon died. "You were wrong. And now you're wrong you're so quick to turn back to my help." Will's responding "I'm not being hasty. I need you. What I'm planning, I can't go back. This is a serious offer."

If Will wasn't being clear enough that he has another plan, the 'personal ads' reference was a straight communication. When Will accuses Hannibal of communicating with Dolarhyde he says "How do you think I'm doing it? Personal ads?" It's a clear point of mockery: so boring, so obvious.
Another important aspect of this is that Will doesn't say after we fake the escape. If you didn't know the context, you'd think he was talking about a real escape. This is a purposeful choice: We're escaping. Dolarhyde knows this.

3rd time Hannibal mimicks Will in this scene! Will raises his head, Hannibal follows suit. It may seem small, but this is a large part of what Will would do to Hannibal in season 2. They'd be sipping wine, Hannibal would take a sip, and Will would mimic Hannibal swallowing has he did. It plays into the 'doing the same thing at different times' 'you and I are beginning to blur' symbolism.
Also this conversation has turned to entirely subtext. Hannibal understands the plan. This is a discussion:
'He won't go near a mail drop': You're expecting me to meet Dolarhyde with you when he wants to change me?
'He might be curious enough to look at one, see if you sold him.': Aren't you curious what will happen? Aren't you curious if I'll let him? The use of curious clearly shows that this exchange is about them. It is the documented reasoning behind Hannibal's plans, he's curious. Curious as an adjective are only used to describe Hannibal, or by Will to describe his reasonings when he begins his villain arc. Aren't you curious if I sold you? Essentially.

'That sounds weak to you, even as you say it': How did you convince them of this? It sounds weak. Hannibal doesn't need to call out that Will is lying. He knows this. That's why he's so intrigued. But Hannibal loves asking Will how he manipulates people: it's enjoyable to him. 'What a cunning boy you are.' etc.
I honestly don't have a very convincing interpretation of this next part. If anyone else has some ideas? But I really like 'You're our best shot Hannibal.' It communicates: They're desperate enough for this. They need me, so they need you. Also it's the second time he uses his name in this discussion.
Will's expression at the end, with the raised eyebrow. Firstly, this is the closest I come to be sexually attracted to someone, flirtatious fucker. Secondly, it's such a clear: you in? Like, Hugh Dancy, how are you this good!?

This, despite being a clear, I'm always a slut for murder, is also so clearly: Will, I had a request.
Also! The change in perspective to over the shoulder blocks out the people in the background, which shows the growing intimacy again. In their heads, they're now the only ones in the room. The person suit for listeners conversation is over.

Firstly, very whore of him to move closer and whisper the please. This is such a clear flirtation. The whisper also makes it more personal, not for those watching, just for them.
Yet, despite the intimacy, Will can't meet his eyes. He still shies away from these very vulnerable requests. Another interpretation I have seen is that he is teasing Hannibal, not looking him in the eyes, clearly not desperate with his please, as if: make me mean this. Which is also very Will. So I'm on board with that. Especially with him backing away with the expression: is that good enough? Definitely very: you want me to beg, put some more effort into this and slay the dragon with me.

This is contentious shot. This is the main shot that metas have based their interpretations that this ends with Hannibal's victory. And in a way, it does. Will had admitted he needs Hannibal, and has asked Hannibal to run away with him, with a please. Yet this whole scene is much more than this shot, and most of it is equal. This shot, I think, with Hannibal's smile, does show that Hannibal has gotten what he wants. His happiness. But so has Will. They're equal.

Rookie Questions: Why is Hannibal willingly surrendering to the police? Love? Wanting to show Will that he can't live without him? Is the memory palace strong enough for him to live peacefully in prison? What is it all this for?
Okay very good question. I was going to make a post about this topic but it's even better that you asked.
So the main focus of my answer will be the idea of impulsivity. And now you can say "what? But Hannibal is the least impulsive chatacter." Well, yes and no.
Hannibal plans every single little thing. Think about how he got Will in jail. Every day he planted little evidence to frame him. He slept with Alana so he could have an alibi in case Jack suspected him. Hannibal is incredibly manipulative and intelligent and cunning and composed, that is, most of the time.
There are however, two moments when he acts out of impulsivity. And these moments have something in common and I will explain that later in this post.
1) Mizumono

The plan wasn't to kill Abigail, nor to try to kill Alana and to stab Will as much as possible and make a mess and then run away heartbroken. The very calculated plan was to run away with Will and Abigail. And to bring Abigail back in Will's life. To turn back the time for Will. The plan was to kill Jack with Will's help.
But this changed when Hannibal realized Will betrayed him. He is so hurt he can't take rational decisions. He acts out of pure raw feelings. He is in so much pain he tries his best to hurt Will the way he did too. And he does that by killing Abigail in front of him. And then by literally stabbing him. And then he runs away. The gif i attached screams impulsivity.
Hannibal is no longer calm, quirky, composed, elegant. He is a force. A furious, hurt and angry force.
2) The moment he surrenders

Exactly the moment you chose. Again, this time, the plan was to save Will from the Vergers and then to leave together after he would bring Will home. Hannibal doesn't expect Will to be so angry and done. The plan wasn't to surrender in front of Jack and the FBI for sure.
But he didn't expect Will to "break up with him". Will literally tells him that he doesn't want to think about him anymore. And says fucking goodbye. And Hannibal is hurt. You can see that on his face when Will says that painful stuff.
And now to answer your question, in this episode, Hannibal does the same thing he did in the end of season 2. He knew that Will would search for him in Florence because he told Will about how much Florence means to him, right? Like Bedelia says "you made sure he would know where to look for you". Telling Will about Florence was somehow his backup plan "in case" something went wrong. In case he would have to run away without Will. But trust me, Hannibal wasn't counting on this in Mizumono. This was his "worst case scenario" You can see the surprise on his face when Will calls and says "they know". Hannibal could have ran away from the moment he felt Lounds' scent the day before. But he didn't. He really put all his trust in Will. And he shattered it.
However, when it came to running away to Florence, he wasn't giving up his freedom. Now, when he surrenders, he does. He is so hurt and surprised by Will's "walls" that the first thing that comes to his mind is to disrespect Will's boundaries and force him into knowing where he can find him.
Hannibal is a very confident guy. He is very confident in his mind. And memory palace. So living in prison wouldn't have destroyed him cause he has an amazing emotional and mental strength. What would have destroyed him however was "not having Will in his life". That's why his options are: prison or never see Will again. And he chooses prison. Yes, because he loves him.
And now i will explain the connection between the two scenes. Hannibal acts impulsive and makes radical decisions only when he is hurt by Will. Because he loves Will. So yes, he surrenders because he loves Will and decides that he is more precious than his freedom. And of course, there is some pettiness here as well cause Hannibal has a big ego.
He wants Will to feel a bit guilty, like "you don't want me? Fine then. Look at me surrendering and giving up my freedom." Cause it's not really freedom if the person he loves is not part of his life. So running away makes no sense.

will naming his bait as abigail + how it ties into his “blurring” with hannibal and eventual transformation
“name the bait on your hook after somebody you cherish. if the person you name it after cherished you, you will catch the fish".

when he says he named the bait after her interpreted as her not cherishing him, but i don’t think that’s it. i think the reason that abigail’s face falls here is because people using her as bait has negative connotations for her. who else used her as bait a lure? that’s right, garret jacob hobbs.

we see in season 1 that will takes pains not to cross boundaries with abigail; he thinks better of his gift of fly tying gear to her because it might remind her of her father.

but now in his daydreams he’s fishing with her and even using her as a lure. what changed?
will’s isolation, alienation from others and slow deterioration of his morals causing him to become like hannibal, that’s what changed. hannibal has no problem being another GJH or leveraging abigail’s relationship with GJH to further his bond with her; in Œuf he feeds her eggs and sausages, the breakfast she shared with her parents, and even gives her priscobilyn tea so that she hallucinates him and alana as her parents (the script tells us that it was actually will that was supposed to be at the breakfast-for-dinner, which makes more sense).
EDIT: i think there’s also instances where hannibal uses abigail as bait. in potage when set up the scene for nicholas boyle to go after her, and when he lets her distract beverly in takiawase when she goes down to the basement (bryan fuller confirmed that beverly saw abigail in the basement). there’s also mizumono where he sends abigail to disarm alana knowing alana won’t shoot at her, which echoes GJH making abigail befriend the girls to get them into a false sense of security.

in season 3, we see that will uses hannibal as bait to catch dolarhyde, and of course he catches the fish, because he and hannibal cherish each other. and in season 2, will names abigail as his bait, but he doesn’t actually use her as bait to catch hannibal in a way that was literal with hannibal and dolarhyde in season 3. so this might be a bit convoluted, but bear with me here - i think the way this is supposed to work is that will using abigail as bait = will acting like garret jacob hobbs which in turn = will acting like hannibal. in order to catch hannibal, will has to beat him at his own game, which means acting like him, which means manipulating, killing and cannibalizing.

this idea makes sense with what will tells jack in su-zakana. he heavily implies he will act as bait to catch hannibal. this means will is also the bait. so how can abigail and will both simultaneously being the bait be reconciled?
the way this can work is if we take it that abigail is not the bait in a literal sense; what is important here is what naming abigail as his bait means for will. it means that will is willing to turn into hannibal to catch hannibal. and will acting hannibalesque is the “live bait” that “moves and excites” hannibal to action, the one thing that he wants, despite everything he knows. (also emphasis on live bait - that can’t be abigail because will thinks she’s dead).

EDIT: more relevant scenes from trou normand. if feeling like garret jacob hobbs makes will feel like a killer, then the fishing scenes in his mind palace with abigail take on even more meaning.
we see other signs of the blurring between will and hannibal, the courtroom scene in hassun where they both dress up at the same time,

and as this post points out, the dream sequence just before this where we see will in a suit (reminiscent of hannibal’s attire) electrocuting the old will.

but for will the transformation is a painful one - his old self goes through the process of electrocution, he tears himself free and screams when he's reborn in ko no mono, and it also doesn't fully take place – the suit is ill fitting, and the ravenstag gives birth to someone who's recognisable as will, just with antlers, not the stagman’s twin. you can’t force a transformation, will has to grow into it in his own time. which he eventually does.
[on a sidenote - this is why i disagree that hannibal never wanted will to be like him. he did, the character development hannibal has to go through is accepting will is not like him and loving and wanting him anyway. we see glimpses of that when he is willing to run away with will even while having his “imago” or ideal of him shattered when he learnt he didn’t kill freddie lounds.]
EDIT: something i forgot to mention is how will gets found out by hannibal because he went to visit freddie, which he was only able to do because he didn’t kill her...and not killing her means that he didn’t turn into hannibal. will failing to catch hannibal is directly connected to him being unable to do what he set out to do with his luring expedition. and i’ve changed my mind to say that abigail not cherishing him back might have played a part in hannibal wriggling away. will and abigail were never especially close, except in will’s mind.
