Super Super Bowl Recipe - Air Fryer Salmon Bites with Homemade Ranch Dip
When I first saw this recipe,I knew I would be trying it because as you’ve probably figured out…I love salmon! I also don’t use my air fryer as often as want to and this was the perfect opportunity to put it to use and make something delicious! The only thing I would strongly recommend is having your fish monger take the skin off of the salmon for you because it’s such a pain to do it yourself!
This recipe comes together in a blink and I promise if anyone is home when you make it, they’ll be standing around waiting to eat a fresh, warm, delicious salmon bite as soon as they come out of the air fryer! I’m usually not a ranch lover, but making a homemade ranch dip is a game changer and so easy that I’m sure I’ll never buy ranch in a bottle again! These salmon bits are perfect for any occasion…I even served them with coconut rice (my go to) and avocado last night for dinner because I made so many! When I first saw the recipe I thought it would be great for a Super Bowl snack, but be sure to make plenty because these delicious little nuggets go quickly! A squeeze of fresh lemon makes these bites even more irresistible and I sprinkled a little of my favorite Honey Aleppo Seasoning over the entire platter. This is entirely optional, but very delicious! I use this seasoning on everything…there is nothing like it!

Air Fryer Salmon Bites
Salmon Bites have been on my to-do list for some time. I finally did it and the results did not disappoint. The crispy morsels of salmon were delicious hot and cold for lunch the next day! i love cooking a big batch of meatballs to eat in sandwiches, over rice, or with cheese and veggies throughout the week. they’re also super convenient to pack my husband for lunch. i don’t love pasta too much but i’ll fuck up some meatballs any day.

if there is orange juice in my fridge im making this damn near daily (i always have tofu and soy sauce on hand - they’re essential like water). literally it’s too easy to make and so fucking good. orange juice, soy sauce, maple syrup, a splash of vinegar. you’re doing yourself an injustice if you don’t try this.
popcorn chicken salad

my favorite way to utilize seasonal vegetables is to chop them real small, oil/season them, and throw them in the air fryer until the toasty. then dump them over various dark greens with some popcorn chicken, a creamy dressing, and maybe some nuts or chopped apples and goat cheese. so filling, easy af way to get a variety of veg in one meal.

my husband wakes up for work at about 5 every morning, so i get up with him and make us breakfast. neither of us eat until much later but having it ready makes the morning go by so much smoother and having a guaranteed breakfast is a lifesaver. this is protein filled and always tasty. i just do eggs, tons of spinach, potatoes, sausage, and bell pepper. the key is to dice everything super small so every bite has everything! i don’t add cheese (the pic is from pinterest), i add sriracha to mine
sweets are essential

i try to always have what i call a “breakfast sweet” (although they’re really midday snacks for us) on hand or else we get peckish and make poor snacking choices. our current faves are chocolate chip muffins and apple cinnamon muffins. everything from scratch, always!

Mix 'n' Match Meal Prep
I've been trying a different "mix and match" method of prepping food for the week. You cook a few components like proteins, vegetables, and sauces, and then reheat and rearrange them to create different meals. Here's my method, inspired by the Downshiftology approach:
Pick 2-3 proteins, a few vegetables, and at least one sauce to prepare. I also like to bake a snack.
On Sunday, do your cooking.
During the week, eat one protein, some vegetables, and some sauce with a starch. Change up the starches and proteins to create variety.
Meal plans so far:
Week 1
Cooked: Greek sheet pan chicken with roasted potatoes and vegetables (sheet pans are the ultimate meal prep hack), salmon bites, crispy air fryer chickpeas, tzatziki sauce, chocolate chip cookies.
Dinners: chicken and potatoes, salmon and fries, chicken and pasta, salmon rice bowls, chicken and rice.
Lunch: chickpeas with salad and focaccia.
Week 2
Cooked: Instant pot ground turkey, sheet pan vegetables, cubed sweet potatoes, morning glory muffins.
Dinners: Ground turkey and pasta, ground turkey and mashed potatoes, ground turkey and nachos, tinned fish and pasta, burgers from the freezer.
Lunch: Black bean and sweet potato rice bowls and burritos.
This week I made balsamic chicken (pictured) and vegetables, plus marinated tofu to air fry another day, and blueberry muffins. I really appreciate how flexible this approach is. A protein / pantry staple like black beans doesn't need cooking -- just opening a can. I can also switch to a store-bought sauce when I have less time. There's less waste, and it's a relief not to worry about what's for dinner.

Sunday's meals plan:
Coffee!! ☕ ;
Bread - cheese, salmon & herb butter;
Pita - shredded cheese, last bit of spicy salami we brought back from Italy;
Leftover chicken & rice from yesterday;
Snack a Jacks rice crisps (100kcal);
One bite air fryer snacks (8);
Banana.
My stomach is going absolutely crazy over tonight's snacks. Today I allowed myself more leniency; no shakes or meal plan, as long as I stay under 1500kcal (which I did). I feel like craving less-than-ideal snacks is a bad habit that needs scratching every once in a while. I'm trying to teach myself it's okay to have snacks too, but after this week I just feel sluggish. I'm glad I got it out of my system (the munchies are sponsored by mother nature's period prep) and I'm looking forward to get back to my shakes tomorrow!
