Triple Ginger thumbprint cookies(Vegan)
¼ C. raw turbinado sugar
1 Tsp. ground cinnamon
2 C. Whole-wheat pastry flour
2 Tbsp. ground ginger
½ Tsp. baking soda
½ Tsp. baking powder
½ Tsp. kosher salt
1 C. sucanat
½ C. grapeseed oil
¼ C. blackstrap molasses
¼ C. non-dairy milk(rice would be perfect)
1 Tbsp. grated fresh ginger
¼ C. crystallized ginger, finely diced
(1)Preheat the oven to 350°F(180°C). Line two baking sheets with parchment paper.
(2) In a small bowl whisk together raw turbinado sugar and cinnamon and set aside..
(3) In a medium-sized bowl, whisk together whole-wheat pastry flour, ground ginger, baking soda, baking powder and kosher salt.
(4) In another medium-sized bowl, whisk sucanat, grapeseed oil, blackstrap molasses, nondairy milk, and grated ginger combined.
(5) Stir the wet ingredients into the dry. When nearly mixed, stir in the candied ginger chips. Refrigerate the dough for 15 minutes.
(6) Scoop up heaping tablespoon-sized balls of batter. Roll each ball in the cinnamon-sugar mixture, and place them 2 inches (5cm) apart on the baking sheets. Bake the cookies for 12 to 14 minutes or until golden brown.
(7) Cool the cookies on the baking sheets for 2 minutes before transferring to the wire racks to cool completely. Store the cookies in an airtight container at room temperature for 5 days.
Cook's Tip #1: These cookies are abit spicy from the ginger but might not last long so make a BIG batch of them.
Cook's Tip#2: Make sure you keep an eye on the cookies by setting a timer for the amount it specifies OR by half(depending on the strength of the oven.
