As usual, I started focaccia and figured out what to eat with it later. I felt like a lentil soup when the time came and I found this instant pot soup that had potatoes and carrots as well, which sounded cozy on this rainy day. I wanted to use green or brown lentils but it turned out all I had were red, so I went with it. The soup has a nice soft texture with chunks of vegetables. Vegetarian Dublin Coddle for St. Patrick’s Day. I was looking for something that wasn’t stew but had some of the same qualities. I came across a vegan recipe for coddle and then liked the look of it. I looked up the regular meaty recipe as well and decided to combine them. I used vegetarian bacon and vegetarian breakfast sausage. I used the quantities from the meaty recipe. I used vegetable broth (vegan) instead of water. And I baked it in the oven (meaty) instead of on the stove (vegan). I added some dark beer at the end after taking it out of the oven (meaty). It turned out really well. Everyone ate some and liked it, a rare occurrence. Happy Pi Day! We had potato pie for dinner and cherry pie for dessert! I used a homemade crust from the freezer for the savory pie but I bought the cherry pie crusts from @markethallfoods. The boy has been into plain macaroni with butter after having it at his auntie’s house. So I satisfied his desire then made this with most of the rest of the pasta. I was watching the Spring Baking Championship this morning and one of the contestants made something called butter swim biscuits. Of course I had to try that. The crust on the biscuits was amazing, but I think I underbaked them just a little. Still, biscuits is better than no biscuits. I would make them again but bake them longer. It’s a very easy recipe.
