My favorite thing to do is to revamp dishes into gluten free vegan versions and sometimes on a budget. Today I reached out to one of my friends @mrlimthedynasty whose family owns an Asian restaurant and asked if there was an inexpensive dish he would recommend, and he suggested Pad See Ew. Let's get started! To make it vegan, I replaced the chicken and egg with turmeric tofu and Just Egg, and to make it gluten-free, I used rice noodles instead of wheat noodles. For the sauce I used @sanjtamari gluten-free Hoisen sauce. It turned out so flavorful and delicious, and I'm excited to share the recipe with you all! Also, I was able to make four large plates for $20!!! P.S. I couldn't find the Japanese broccoli so I used traditional broccoli. I hope you all give this recipe a try and let me know what you think in the comments! Pad See Ew recipe serves 4 people. Ingredients: 1 pound fresh wide rice noodles 4 tablespoons olive oil 4 cloves garlic, minced 1 cup sliced turmeric tofu 2 cups Chinese broccoli, cut into bite-sized pieces 1 bottle of Just Egg 1 bottle San-J sauce Optional toppings: green onion sesame seeds chili flakes Instructions: Soak the fresh rice noodles in warm water for 15-20 minutes until they are softened. Drain and set aside. In a wok or large skillet, heat the oil over medium high heat. Add the minced garlic and stir-fry until fragrant…happens quickly. Add the tofu to the wok and stir-fry for 2-3 minutes until browned and cooked through. Add the Chinese broccoli to the wok and stir-fry for 2-3 minutes until tender. Remove the broccoli and tofu and set aside. Add rice noodles to the wok and stir-fry for 2-3 minutes until heated through. Remove rice noodles and set aside. Pour Just Egg into the pan and let sit until it starts to thicken. At this point, toss everything back into the pan, now add the sauce mixture over everything and stir-fry for another 2-3 minutes until the noodles are evenly coated. Just because you don't have an oven, doesn't mean you can't make delicious gluten-free meals! The other day, I whipped up some gluten-free pasta in the microwave and it turned out great. I added some herbs, olive oil, and tomato sauce for my sauce, and topped it off with some vegan parmesan from @followyourheart. To round out my meal, I added a salad with an easy balsamic vinaigrette. Who says microwave meals can't be delicious and healthy? 🍝🥗 Ingredients: 1 cup gluten-free pasta 2 cups water 1/4 teaspoon salt Instructions: In a microwave-safe bowl, add the gluten-free pasta, water, and salt. Microwave on high for 10-12minutes. Check the pasta for doneness. Drain the past of excess water....leave a little in there to help the sauce. Then I added my tomato sauce spices olive oil stirred it in and microwaved for an additional 1-2 minutes. Serve and enjoy! Note: The cooking time may vary depending on the type of gluten-free pasta you are using and the wattage of your microwave. Just wanted to share my dinner from the other day! I was originally planning on making lentils with mushrooms in the instant pot. Two things happened: One I forgot to had enough water which means a lentils came out a little dry and number two: I forgot to add in the mushrooms. I realized my mistake and added water and fresh mushrooms to them them after they were done. And it turned out to be a great decision! I paired it with some avocado for a quick and easy meal. ¡Hola amigos! Growing up with a Mexican father and a Texas mother was an amazing experience, especially when it comes to food. We got to enjoy a lot of delicious Tex-Mex dishes, like the one you see here: huevos y papas con Chile negro. That's eggs and potatoes with a rich, spicy black mole sauce that's perfect for breakfast or brunch. But now that I'm gluten-free and vegan, I had to get creative and come up with a plant-based version of this classic dish. So instead of using real eggs, I used @justegg, a plant-based egg substitute. Topped it off for the little avocado pico de gallo mix. The result? Sometimes the best meals come from unexpected outcomes in the kitchen. Today, I had an idea to make some crispy spring rolls, but when I fried them, they burned and fell apart. 😅 But instead of giving up, I decided to improvise and ended up with a delicious stirfry dish that I never would have thought of otherwise. I sautéed the remaining spring roll filling with some veggies and added it to a bed of rice. 🌱🌮 GLUTEN-FREE VEGAN CHILAQUILES AT A HIGH-END RESTAURANT? 🤔 Challenge accepted! 😎 As a person who's passionate about food presentation, I love experimenting with different flavors and ingredients, and today I wanted to imagine what a fancy version of one of my favorite Mexican dishes would look like. So, I present to you my interpretation of gluten-free vegan chilaquiles, with a touch of elegance and sophistication. 🌟 First, I hand tore tortillas and fried them nice and crispy. Next I prepared some vegan eggs seasoned with sea salt, pepper, and red pepper flakes. Then, as the egg was nearing completeness I tossed in the tortillas to blend together. Then layered this nicely on a plate. Next, I added a pico de Gallo mix with creamy avocado, for a healthy and colorful twist. To finish it off, I sprinkled some Chile flakes for an extra crunch and a pop of color. And finally sprinkled some flavorful chipotle sauce, made with fresh ingredients. Just made the perfect gluten-free vegan pizza for that special someone for Valentine's Day. We used @schaerglutenfree pizza crust and @beyondmeat Italian sausage. So the other day one of my followers came to my house and dropped off this vegan cheese. I've been eyeing this @barillaus gluten-free noodles I've had in the cupboard for a few weeks... but then I didn't have any gluten-free cheese. but then I remember that my follower came over and earlier and dropped off some sliced gluten free vegan cheese. So I cut up the slices into small pieces, poured olive oil over everything and tossed it in the microwave. every 30 seconds I removed it and stirred it and then when it was melty enough I poured it all over my noodles.
