“But what do you eat?” It’s fascinating to me when someone (typically a stranger) finds out that my husband and myself eat plant based/vegan, and they ask that question. Literally, we eat everything that they do except meat, dairy, eggs and other animal products. There is a plethora of vegetables, fruits and grains out in the world, so many other hearty and delicious protein sources, that we really don’t need to take in anything created by or from animals. These photos are a sampling of what we ate in 2021. There is spaghetti pasta with vodka sauce, Belgian waffles with maple syrup, falafel with hummus and lettuce wrapped in a pita, Chinese food consisting of lo mein noodles, broccoli and a vegetable egg roll, my husband’s famous lentil curry over rice, as well as my homemade minestrone soup, and of course, s’mores from over the Summer when we had fires in our backyard. It’s not hard to eat well, eat healthy and eat vegan, you just have to care.

Spicy Cream Pasta

Have you ever created a sauce that you purposefully make extra of just so you can toast a few pieces of bread to soak up the rest at the end? Well I have and I did today. When people tell me that they think store bought pasta sauce is just as good as homemade, I try not to make fun of them. Instead, I invite them over for dinner. Today I made pasta for my mom and I. I used large spiral noodles that were perfect for absorbing all of the homemade delicious vodka sauce. I have made vodka sauce countless times but today I choose to tone down the spice and add a bit more butter. This will not be a sauce I will make every-time but if i am in the mood for a creamy indulgence this will be my go to. My favorite type of bread to soak up this pink sauce is called “miche” if you do not have that at your grocery store or bakery then substitute a bread of your choice. Buttering your bread pre sauce dunk is a must! My mom is sick today so I did not want the flavors to be overwhelming. I wanted them to be comforting and delicious. I handed her a bowl of the pasta and she nodded and smiled. My mom always does such a good job at taking care of me when i’m sick so I always like to do the same. I encourage anyone and everyone to try out this recipe and to let me know what you think!

(experimentation with measurements is encouraged!)

olive oil

1/2 shallot

3 cloves garlic

1/4 cup sun dried tomato paste

2 tablespoons titos vodka

1 cup cream

3-4 tablespoons kerrygold (BRAND CRUCIAL) butter

1/2 cup Parmesan 

salt, pepper, and chili flakes to taste!

A brief description on how to make the sauce...

coat your pan in olive oil, then cut up your shallot and garlic and place in the hot oil. Cook this until you can smell the goodness! Then add in your sun dried tomato paste and mix until incorporated. Add the vodka and stir until most of the oil has left. Then whisk in the cream until your sauce is a beautiful pink color. Finally season and add your pasta butter and parm until the flavors are melting on your tongue!

This sauce is bomb sauce.
