Beyond Thankful
I got a surprise package today that floored me. At this age, the only things I expect to be delivered are the bills. What was sent to me was most certainly not a bill.
Recovering from chronic homelessness is more difficult than I thought it would be. We lost a lot of our possessions due to rodents and water damage and many items were just broken.
We are having to replace what we lost which will take time. However, one of the victims of the homelessness was my mother's crock pot. My mom had a cool crock pot. It was a 6 qt white crock pot with a blue removable pot. It was oval and I loved the heck out of it. When mom passed away, I inherited it.
So, I made a wishlist on Amazon and put a new crock pot on it. I never thought anything would come of it, but as both of my offspring have said, it never hurts to try.
Someone bought me the crockpot. When I opened the box and saw what it was, I started to cry. @helly-watermelonsmellinfellon was watching me. She knows I never bawl and when I do tear up, I try to ignore it. I was full on blubbering.
I did what any sane person would do and immediately put some chicken and dumplings in the crockpot for dinner. It's been cooking away for 2 hrs and it smells great. There are so many dishes i can make, and the crock pot will help me.
Thank you so much to the lovely lady that gifted it to me. I cannot express in words how much it means to me. Having physical limitations is difficult and I try to push through anyway. But this crockpot will help me to make sure there is dinner for my family.

no more doomscrolling im going to share my chicken and dumplings recipe! You can probably make this vegan/vegetarian im not sure 100% but yeahh its below cut sorry its scuffed its inspired from my moms:
1: in a crock pot/slow cooker put some chicken in there. you can do a whole chicken, breasts, or thighs. i think thighs are the best so thats what ill be describing here. I had like 5 thighs.
2: season the chicken with salt and pepper and under the skin esp (esp for whole chicken)
3: put in the crock pot on a bed of 1 thick cut onion, like some chopped carrots, 5 cloves of garlic minced. no real measurements here okay you just gotta wing it.
4: add chicken or vegetable stock until everything is covered and add the following seasonings to the stock: salt as needed (dont taste it there is raw chicken in there...to avoid this you can add the chicken after seasoning if you need to taste it), pepper, smoked paprika, thyme flakes (fresh or dry), 2 bay leaves, rosemary, and coriander powder.
5: cook on high for 6 hours.
6: when it gets close to be done make dumplings. add flour and a little salt to a bowl and slowly add room temp to cool water until a workable dough forms (one that isnt too sticky and you can roll out).
7: roll out the dough and use a knife or anything to cut out little dumplings. they can be ugly who gaf.
8: when the chicken is done at this pt take out the bayleaves and then take out all the bones and cartilage (the meat should easily fall off if its fully cooked). and then strain some of the broth into a pot on the stove set to medium high heat. once the broth is simmering put your dumplings in until they float to the top/seem fully cooked ( i gen wing this every time).
9: as your dumplings cook shred the chicken.
10: when dumplings are done pour the broth back int he crock pot and then mix everything and then in a bowl put some dumplings in and serve your chicken broth mixture on top
there are many other veggies/variations you can do to this recipe its very open :) hope its enjoyable!

My Chicken & dumplings soup
Ingredients:
-1 can of cream of chicken
- 1/2 cup of Sherry cooking wine
-evaporated milk
-4 chicken breasts (I use bone in so I can use the bones to make chicken stock)
-1/4 of white onion, diced
-garlic powder, to taste
-ginger powder, to taste
-1 Clove of garlic, minced
-1 bag of frozen mixed veggies, thawed
-1 can of chicken broth, reduced sodium
-1 Maggi cube (I get these from the African market, but a chicken bouillon cube works the same)
-1 small can of biscuits, 5 count
-butter (I used garlic & herb butter from HEB)
-a shake of stew seasoning (I also get this from the African market)
1. Clean & season chicken as you see fit, I make mine spicy. Next, pour full can of chicken stock, pat of butter, Maggi cube and water in a pot big enough for all four chicken thighs. Bring pot to boil, add thighs, then simmer for 10-15 minutes.
2. In a Crockpot, add seasonings, sherry, a bigger pat of your butter, mixed veggies, onions, garlic and cream of chicken during your chicken simmer.
3. Once your thighs are done, remove them from the pot with tongs & pour stock pot liquid into Crockpot.
4. Using two forks, shred chicken thighs very well.
5. Add shredded chicken to Crockpot. Stir everything in the Crockpot together.
6. Open your biscuit can and break the bigger biscuits into smaller pieces. I roll mine into a ball, but you don't have to.
7. Put biscuits/dumplings back in fridge after rolling.
8. Close crockpot lid and press the slow cooker button for 2-3 hours on high.
9. Once time is up, add your dumplings and cook on high again for 45 minutes.
Serve & enjoy! Happy house spousing! ♡

Re-Inventing the Wheel
I'm not a huge fan of British TV chef Jamie Oliver, so it was interesting to read comments on his latest show about £1 meals. That's £1 per portion, not £1 for the whole dinner. I haven't seen the programme but I'll put my two-pennorth in anyway.
While it's good to be saving money in these trying times, the way to go is not as simple as "buy cheap", it's about making the food go further.
Yes, you can serve up a roast chicken dinner for £1 per person, but then any self-respecting cook would put the bones in the slow-cooker and make 5 litres of chicken stock; cool and strain and turn the stock into a week's worth of soups and sauces.
Like our grannies and mums did when times were hard and leftovers were served up again and again until everything was eaten.
They had respect for the food, for the farmer and for the animal that died so that they could eat. There was very little food waste. Food was too valuable. Even the peelings went on the compost heap to recycle in the veggie garden or were collected by the local milkman for his sideline in pigs.
Our grannies and mums were more "green" than today's crop of pontificating woke people who protest about climate change while demanding environmentally unfriendly imported vegan almond milk, avocado toast, weird "Meghan Coffee" and unseasonal salad. Where's the logic? I mean, genuinely, do these people not know how food works? Even one of my own sons asked me for asparagus the other day - hell, no! Not till May (or April if I get some nice weather), but even my own son, who loved to help me in the allotment at age three, is so used to seeing ever-ready supermarket vegetables he's forgotten that Nature has a big say in what we should eat and when!
I despair! I am a failed parent!
On a positive note, Princess Mad - who does all the cooking - bought the British equivalent of £10 of stewing steak and kidney last week, a bit of a treat as we (five adults) don't often eat beef. Day one, served stew and dumplings; day two made a steak and kidney pie; day three used the leftover gravy to make beef and vegetable soup; day four froze the last of the soup to use in a ragu later this week. No unseasonal asparagus involved! Fresh, local, seasonal!
To do anything less is disrespect.
Disrespect for the farmers, the cattle, the butchers and the grannies and mums who taught us how to be "green" before "green" was even invented!
