Vegetarian Shiitake Mushroom Burger. The Root Cafe. Little Rock, Arkansas. 12.12.2023.
NOTE TO SELF: I didn't want anything to heavy, so I went with this. The mushrooms themselves were good, but I the sandwich lacks something to hold it all together -- physically, as well as culinarily speaking. Maybe I should get it with cheese. Between the garlic vinaigrette on the salad and the garlic vinaigrette on the sandwich, I was garlic vinaigrette'd out.
I miss the way I used to feel about The Root Cafe, and I still love the concept, but these menu items just aren't doing it for me anymore.

The figs were added to a medium-hot pan with garlic and shallot cooked until fragrant, along with fresh rosemary and sage, the gills from one portobello mushroom cap, and a drizzle of balsamic vinegar - then they were just cooked until gooey, tossed with honey and salt and pepper, and set aside.
The mushroom cap was brushed with olive oil and cooked over medium until it was softened, then sprinkled with salt and pepper and set aside.
To assemble, I spread goat cheese over one side of a brioche bun, added the mushroom upside-down, filled the mushroom with the figs, and topped it all off with prosciutto, avocado (optional, but I had one I needed to use and it worked fine), and arugula.
Not my usual post, but among one of the other creative outlets I have, is cooking.
And for the past... Almost two months now, I've been tweaking a mushroom burger recipe. And I'm really proud of it!
And I wanted to write it down anyway for myself and family. So I figured I'd share it for y'all here!!
I have no idea about calories, just as forewarning. I tend to just eyeball a lot of it until it "feels right" ya know? But this is the best I could give for rough estimates.

They're all so expensive. And of course, my dream 'shroom burger is one of the most expensive ones.
I'm a struggling artist, if anyone could order a commission from me just so i could eat that one burger and get a little drunk, i think it would be awesome.
This post got really away from me... I was just going to moan and complain and cry but it turned into a commission add or how you kids call it
you know im a simple woman who likes the classic american breakfast but vegan. tofu scramble with fried tempeh and some shitty pancakes made with a mix combined with oat milk and egg replacer :)
