Do not slander the mac n' cheese 🤬
people are saying mac and cheese is not very satisfying on it's own but
put on a pot of salted water to boil for macaroni
2 tbsp of butter in a pan on medium until it's melted (you can brown some fresh minced garlic in this butter before the next step if you like toasted garlic better than dried)
whisk in 2 tbsp AP flour then cook on medium while stirring constantly until the roux begins to toast slightly
by now your macaroni water should be boiling so put the (italian I beg you please don't buy catelli. pasta is so cheap just get the good stuff) macaroni in to boil and set a timer
add whole milk or cereal cream to the pan about a half to a quarter cup at a time while whisking vigorously and ensuring you both beat out all lumps and return to a simmer in between adding liquid and repeat until you have a white sauce about the consistency of light cream
add some garlic or onion powder to your own taste (i put like a half tsp of each if I was lazy with the fresh garlic)
fresh rosemary is also a good choice
mix in about one cup of shredded (at least) two year old Cheddar and about one cup of shredded fresh Parmasan and whisk until fully melted
at this point it may be a little bit too thick for mac and cheese so thin it with a little bit of cream until it's the right consistency
or if it's too thin or bland add more cheese!
drain your macaroni and put it back in the pot you cooked it in
add the cheese sauce to the pot and mix well
serve immediately
I guarantee you this will be filling and satisfying in a way no box mac 'n cheese could ever be

so i saw some Fucked Up ice cream at the store today and against my better judgement i bought a bunch of them to try out of morbid curiosity. after i taste test them all, i will report back later with my findings.
(the espresso flavor is obviously pretty normal, i got that one be kind to myself and have something nice at the end of this experiment)
