Fried Chicken, Veggie Platter Leftovers Makeover

We hosted a barbecue this past weekend and we had a LOT of leftover fried chicken (like half the party tray) and vegetables from the veggie platter. My husband and I didn’t want to eat fried chicken for the rest of the week, especially since it gets greasier the longer it sits and we try to eat healthier during the weekdays. We seriously don’t like wasting food, so instead of letting the fried chicken sit there in its own grease, we decided to give it a little makeover. 

We’re all about making versatile meals that are easily microwaveable since we both work day jobs. That means if we can eat the dish in multiple ways to keep it interesting, then we don’t have to fuss about spending so much time cooking when we get home. 

I decided to go for one of my quick go-to’s when I was in college: chicken saute. It’s a really quick and easy dish to make in bulk and can be eaten in a variety of ways (I’ll get to that at the end). Also, because this is one of my college go-to’s, it’s basically a one-pan meal. 

Ingredients:

- Leftover fried chicken (removed breading and bones and shredded the meat)

- Leftover baby carrots from the veggie platter (diced)

- Leftover peppers from the veggie platter

- Leftover diced onions from the bbq

- Celery (staple item in our fridge) 

- Cilantro (staple item in our fridge)

- Garlic (staple item in our fridge)

- Cherry/grape tomatoes cut in half (from our garden)

- Chicken stock (staple item in our pantry)

- Seasoning: salt, pepper, paprika, ground cumin

 I start by seasoning and sweating out the vegetables until they’re translucent. Then I add in the cherry/grape tomatoes and the shredded chicken into the mix and season those as well. Since leftover fried chicken is rather dry, I rehydrate them by adding in chicken stock (about twice around the pan as an eyeball) and then cover the pan with a lid to let everything steam and marry. Basically, you’re waiting until the liquid evaporates. The cilantro is added at the end for a nice bit of color... and then voila!

We keep a batch of the chicken saute in a tupperware in our fridge and microwave one portion at a time. We have leftover lettuce from the barbecue so we can make lettuce wraps with the chicken. You can eat it with rice or cauliflower rice. You can also assemble it in a taco or make yourself a burrito - the limit is your imagination, really!
