Thank you for asking! Because one thing about meeeee? I loved Deadman Wonderland (as featured on this list). There are a few aspects that ultimately drove me to read the manga for a sense of resolution and, since I can't be sure what you liked most about the show, I've included a mixed bag that I hope you'll like! Since this is a specific request, some suggestions may be longer than the bite size recs I typically post.

Elfen Lied (series)

Coming out the gates with an Elfen Lied recommendation is probably ill advised given the controversial way the series has aged (I had to save it for last on this list). But if you're looking to sate the need for gratuitous blood and shock value from the new and interesting fates suffered by prisoners and Deadmen alike, this is probably the way to go. The story follows an escaped survivor of inhumane experimentation who leaves behind a trail of bloody and decapitated bodies. Such is the revenge of Lucy, the Diclonius female lead, who, in her great escape, suffers a debilitating injury that causes an interesting divergence in personality.

Blood Blockade Battlefront (series)
If you liked the idea of the Deadman Wonderland fights spawned from the bloody extension of each fighters' body? Might be worth checking out Blood Blockade Battlefront. Not quite as dystopian as DW (and subsequently a bit more lighthearted), BBB takes place in what used to be New York where magic and monsters are policed by an underground crime fighting organization known as Libra. Members of the force tend to have supernatural powers that make them uniquely qualified to keep up with the nefarious forces that operate just below the surface of Hellsalem's Lot.

Danganronpa (series)
Admittedly, Danganronpa can be a bit confusing to watch. You're just kind of dropped into the middle of the story and have to watch as a group of people (in this case, students) are forced to kill one another for the sake of living to see another day. Sound familiar? Without spoiling too much, I think Danganronpa shares a few other key ingredients with Deadman Wonderland which include fatal punishments, sensationalized violence (arguable), and an inescapable game.

Ajin: Demi Human (series)
Deadman Wonderland is interesting because there are several levels of conspiracy. Immediately, you have the POV of the everyday person who can spectate the prisoners at Deadman Wonderland. Then you drop down a layer and discover some of the dead or missing prisoners are actually in a fight to the death as Deadmen, something even high level prison guards aren't aware of but enjoyed, nonetheless, by elite members of society. Without spoiling too much for readers who haven't finished DW, we see, deeper still, there's an even more nefarious plot at play. It compounds the hopelessness the Deadmen feel as, how can you get help for a situation most people don't even know exist? It takes morality out of the equation when all those imprisoned are presumably guilty of crimes. It's why the spectacle of their suffering can be enjoyed by general onlookers. The Deadmen in G Block serve a "life sentence" for possessing a Branch of Sin, regardless of the crime that got them there which almost supports the idea that their power makes them too dangerous to be released. Subsequently the violence of their game and general treatment are considered in line for someone already dead.
I think Ajin hits a few of these notes by begging the question: what does it mean to be human? Similar to Deadman Wonderland, you see an overpowered derivative of the human genome that is oppressed by the larger, weaker population. Their humanity is in question but the cruelty of the other humans toward them show that anyone is capable of being a monster. I think Ajin: Demi Human explores different cause and effect of this phenomenon on human nature through the motivation and journey of each of the main cast of characters, notably: Kei Nagai, Satou and Kouji Tanaka.

I know you didn't ask for live action but, if you haven't seen this cult classic, watch this too. Battle Royale walked so The Hunger Games could run and earned the stake of its own genre by the same name. I enjoy it so much that I included it even though it kind of broke my blue/red aesthetic for the list.

As for your question...
Man, that's tough. I have a hard time picking one thing---I mean, *gestures to all the fic* you know? But I can narrow it down to a couple of scenes/elements:
The fact that a romanced Fenris still calls you "my friend" even after the act 2 romance scene. This is just...the bedrock of their relationship to me. Yes, that night went very poorly (understatement, I know), but at the core they are friends and he trusts Hawke in a way he's likely never had the cause or opportunity to trust someone before. I believe he never stopped loving Hawke, and it was a matter of laying those feelings out and understanding them one at a time. Romantic love not replacing platonic love or eclipsing it, but building or twining together is just... *chef's kiss* that's the good stuff.
The moment during the romance conversation in Act 3 when you can see Fenris go from hoping (painfully hoping!) that there is still some way he and Hawke can be together to actually believing it will happen. There is a shift in his body language that I could watch (and...have) over and over.
The element of choice? This is not going to be coherent, but the fact that he is learning for the first time what it means to have options and preferences, and he spends a lot of time exploring and understanding himself...and after all of that, the thing he keeps coming back to is Hawke. I think it's gorgeous. A song with refrains of pain or fear and choruses of decision and hope. He's loyal to a fault, in many ways, but understanding how much of himself exists to share and then still choosing to share it is just...man. I said this wasn't going to be coherent lol, so there you are. "If there is a future to be had..." like he doubts its existence but he's willing to chance it for Hawke. Man.
But, honestly? I've played DA2 a lot of times and never romanced another character, even though I've played through multiple romance storylines in each of the other games. I can't shake the Fenris romance. Every time I open a new playthrough, I tell myself that this is the time I'm going to romance Isabela, and every time Fenris rips that dude's heart out and I just......alright, yeah. Okay. Here we go again.

Expect a grab bag of the supernatural and/or explorations into the innate wickedness of man. In addition to including slightly longer recommendations than my normal lists, below specifically focuses on titles with a scene(s) that elicits genuine shock for the viewer regardless of whether the overall series was good or not.

Humans won't always be at the top of the food chain and Tokyo Ghoul takes naive Ken Kaneki and exposes him to the dog-eat-dog world that writhes just below the surface of his everyday life.
The WTF moment? Let's just say, I hope you don't have a fear of bugs.

Suppose, at the edge of reason, you suspected that you or your loved ones were damned to die gruesomely because there was someone in your presence who simply refused to move on? When in the proximity of certain death, how far would you go to balance the scales to maintain your hold on life as you know it? Class 9-3 clings desperately to the hope that they'll survive the school year and stave off the Calamity but it doesn't take long for despair to bleed into mass hysteria.
The WTF moment? As tension mounts, all hell literally breaks loose in a crescendo of gore. This show makes the list for that WTF but also because I genuinely recommend it for anyone into horror thrillers. The rise in tension is very reminiscent of that of Battle Royale (another fave).

Akame Ga Kill (series)
Filed under: “I love the kind of woman that will actually just kill me.” “Don’t get too attached” and “That first episode tho 👀” and also included on this list.
Perhaps the best instances of horror are those that peel back the veneer of seemingly decent people and reveal how positively insidious they are. Monster themed scary movies never really compelled me as much as supernatural or plain and simple human antagonists because the latter always felt more possible than a werewolf or vampire.
The WTF moment? Akame Ga Kill accomplishes the above, if I recall, in the very first episode.

Attack on Titan (series + ovas)

This is the main departure included on this list despite its long run, also, it's so popular, why include it? BECAUSE, the exposition of this story creates so many WTF moments. One, big human-like monsters eating life-size humans (who can sometimes be monsters).
The WTF moment? How to narrow down? The first episode, the introduction of Zachary's chair (the purpose for its inclusion was never satisfactorily explained except to highlight how twisted people can be), half of season 3 and half of season 4 like - just when you think you have the world figured out, there's another curveball. While most on this list are included for a singular moment within the series that grabbed and held my attention, AOT is a good watch for anyone interested in action, gore, or drama.

Ninja Scroll (series + movie)
In the Ninja Scroll series, Jubei went through it and mans really couldn't catch a break despite his ultimate goal really just being to take a nap. He remains unreasonably calm (and punny) despite his lack of rest and in the face of constant supernatural adversity. The design and body horror illustrated by the opponents he comes across are definitely a part of what makes this series so over the top as is the violence against a certain character which I found unnecessary and drives us to our WTF.
The WTF moment? Episode 7, that's a particularly unsettling way to pass a stone IMO.

Elfen Lied is definitely one of those series that shocked people at the time for its gratuitous blood and violence if only for the sake of gratuitous blood and violence. When you consider the premise of the plot, I suppose it's not without purpose per se but, I think there were a few things that were just included for the shock value.
The WTF moment? Amidst sprays of bloods and exploding bodies, the biggest WTF is actually not even shown and will linger with you regardless.
