Lemon and Mint Creamed Cucumbers

A fragrant and refreshing Summer Salad, these Lemon and Mint Creamed Cucumbers can be eaten on their own, as a side to ss with toasts, or as a side to grilled meat!
Ingredients (serves 2):
1 large Green Onion
half a dozen large leaves fresh mint
half a large lemon
a pinch of salt and freshly cracked black pepper
1 1/2 tablespoons canola oil
2 heaped tablespoons sour cream or crème fraîche
half a large cucumber, rinsed
Finely chop Green Onion, and add to serving bowl, saving a bit of its green part for garnish.
Roll mint leaves together, and chop finely. Add chopped mint to the bowl.
Grate in about two teaspoons lemon zest. Season with salt and black pepper.
Stir in canola oil, mixing well.
Then, add sour cream, and give a good stir.
Finally, thoroughly squeeze in the juice of the lemon halve, stirring until well-combined.
Cut cucumber into thin slices. Add cucumber slices to the bowl, tossing well to coat generously.
Place in the refrigerator, to chill, at least one hour.
Serve Lemon and Mint Creamed Cucumbers cold, sprinkled with reserved chopped green part of the Green Onion.

For lunch today I consulted my list of restaurants I want to try. It’s snowing pretty steady here. Sometimes I enjoy driving in it. Just another good reason to go out.
This place pictured above is a nice, food court-like place called North Loop Galley. Inside are four chef run restaurants with counter service. There’s a big bar next to them and plenty of tables.
Today’s choice was Ottimo. I ordered the smashburger and fries. They were excellent. Adding to my enjoyment was the low price: $12 for the sizable burger AND fries. I told the cashier I had never been there before and asked if I waited for my food or if it gets brought out. (After placing an order you get a number on a metal stand. An employee brings out the order when it’s ready.) The employee who helped me seemed glad I was trying the place. When he smiled and said, “You get the family and friends discount” I thought he was kidding around. But he really did give me a discount.
I ate the burger all by myself as I read a newspaper and listened to the mostly younger crowd around me at the bar. If Sheila had been able to join me I would have been happy splitting the burger. It was a late lunch. I’m so full I don’t think I’ll want dinner tonight.
As I waited for my burger and fries I watched the bartender pour a light green beverage for another customer. I asked and learned it was Matcha Green Tea Cider (5.5% ABV) from Minneapolis brewer cidery Sociable Cider Werks. I selected one too, having made my decision solely on the color of the drink. It was refreshing and tasty as well.
Next time I go to the Galley I’m getting the highly regarded, Detroit-style Wrecktangle Pizza. I saw several pizzas get served and darned near ordered one to take home. There are two more restaurants there too, meaning I’ve got at least three more trips to make to the Galley.
One last morsel of happiness: I got rock star parking: Few on-street spaces were available. I lucked out and got one at the front door of the building!

Smoked Salmon and Green Onion Sandwiches

"Oh, they are so good!" said Ava, biting hungrily into these Smoked Salmon and Green Onion Sandwiches, as we were having a picnic on Cheltenham Beach in Devonport. "I can't believe you put so much flavour into something you whipped up so quickly!" I was more than a little bit chuffed, but I must say, they are really good, especially if you intend to eat them on a beach! Happy Saturday!
Ingredients (serves 2):
3 heaped tablespoons sour cream or crème fraîche
1 teaspoon dried tarragon
1/2 teaspoon freshly cracked black pepper
1 large Green Onion
4 large slices Wholemeal Loaf
1/2 tablespoon unsalted butter, softened
abou4t 60 grams/2 ounces Smoked Salmon 
Spoon sour cream into a small bowl.
Add dried tarragon and black pepper, and give a good stir until well-blended.
Finely chop Green Onion, and stir into the cream mixture. Place in the refrigerator, at least half an hour.
Toast Wholemeal Loaf, and allow to cool completely.
Generously spread Green Onion and tarragon cream onto two of the toasted Wholemeal Loaf slices, and butter on the two others.
Lay Smoked Salmon onto the buttered Wholemeal Loaf slices, and close sandwiches together. Keep in the refrigerator until serving time.
Cut Smoked Salmon and Green Onion Sandwiches in halves, and wrap in cling film if bringing on a picnic!

served cold on toast with ricotta, flaky sea salt, and dried oregano. also works on crackers or crostinis, and tastes great with gravlax.
these are weird because they're so perfect and refreshing for the hottest days of late summer to cool you off, but also for the bone-chilling midwinter temperatures of minnesota's january and february, when your nose hairs freeze on a sunny, -10° day after a fresh snow.
