I made the Fiber Fueled Red Lentil Curry Soup again tonight. This is still our favorite recipe. We live an hour and half from town (three hours round trip), so it's slow going on stocking my pantry and kitchen for the Fiber Fueled Cookbook. I'm steadily working at it. I bought the Fiber Fueled Book and now have the Fiber Fueled Cookbook as well. They're both a great investment. I've already seen positive changes (and drastic ones too) in my health. I was telling Tom that I needed to find the book holder that I know I have...somewhere. Tom ran to get a music stand for me! Plant diversity for gut health. Each plant food has its own mix of different types of fiber that feeds its own unique set of microbes housed in the gut. This allows our microbes not only to grow, but to thrive. And when our microbes thrive, our health thrives.💚 Eating a diversity of plants = Getting a variety of different types of fiber into the diet = Increased growth of healthy bacteria species = A healthy microbiome = Increased production of short-chain fatty acids = Better overall health! I know sometimes we get comfortable eating the same foods over and over again. But I encourage you to each week when you are doing your groceries get out of your comfort zone and choose 2-3 different veggies/beans/grains/nuts or seeds. My Sunday Brunch at home today. I have been off-track with taking care of my health lately, so I'm choosing to practice self-compassion and self-care, starting with a fiber-filled brunch, which consists of banana, kiwi, raspberries, blueberries, gala apple, and mixed nut butter; in the Christmas Yoda mug is Trader Joe's Maple and Brown Sugar Naturally Flavored Instant Oatmeal with diced apples on top and one tablespoon of ground flaxseed. Getting some fiber and some plant biodiversity in for the day.
