One liberty I take from the canon is Muzan's killing of the doctor. With my interpretation of Muzan, the killing happens later, after Muzan had begun his transformation.
The doctor took great interest in observing how Muzan's blood affected animals and even plants, as they seemed to echo whatever condition his patient had found himself in, indicating that as a result of his treatment, Muzan's blood had developed special properties that warranted observation
He was fascinated with the way that his body would heal almost immediately from any injury. I can imagine that when Muzan transformed and freed himself from his bindings, shortly before he was killed and devoured, the doctor sincerely believed he created some sort of god.

Can the demons in jttw eat other demons to gain longer life spans? Or like people too?
To my knowledge, this doesn't happen in the story. Just think about all of the times that Zhu Bajie (Pigsy) is captured and almost eaten. None of the demon kings involved say anything about the possibility of his flesh lengthening their lives. Also, think about all of the times that demons eat (or talk about having eaten) people throughout the story. It's nothing special.
The only reason that Tripitaka is much sought after is because he has refined his spirit over many lifetimes, making him a walking elixir of immortality. For example, chapter 33 reads:
The second demon said, "Here comes the Tang Monk!" "Where is he?" asked the various little fiends. The second demon said, "Auspicious clouds will alight on the head of a virtuous man, whereas the black ether emitted from the head of a wicked man will rise up to the sky. That Tang Monk is actually the incarnation of the Elder Gold Cicada, a virtuous man who has practiced austerities for ten existences. That's why he is encircled by these auspicious clouds" (Wu & Yu, 2012, vol. 2, p. 105).  
Monkey even mentions the grandeur of his master's aura in chapter 80:
We tell you now about our Great Sage, who somersaulted into midair. As he paused in his cloudy luminosity to look back, he saw that the pine forest was veiled by hallowed clouds and auspicious mists. So moved was he by the sight that he unwittingly blurted out, "Marvelous! Marvelous!"
Why did he say that, you ask? He was giving praise to the Tang Monk, you see, and recalling to himself the fact that his master was verily the incarnation of the Elder Gold Cicada, a good man who has practiced austerities for ten incarnations. That was why his head was surrounded by such an auspicious halo (Wu & Yu, 2012, vol. 4, p. 66).
