Recipe: Spicy Chicken Burritos (★★★★★)
Preparation Time: 45 mins
Welcome back to another recipe in Sagal’s Kitchen! This week we’re doing lunch and its spicy chicken burritos. Initially I saw this on ‘A Pinch of Yum’ as tacos, and it had massive reviews. I thought I’d change things up and create a burrito instead.
What you’ll need:
2 cups of Salsa (tomato)
2 tbsp of Taco seasoning
200 grams of chicken breast
1 ripe Avocado
Half a Red onion
1 Lime
1 Adobo pepper
Dr. Wills Vegan mayonnaise (as much as necessary)
2 tortillas

How to:
Start off by rubbing your chicken breasts in one cup of your tomato salsa and two tablespoons of taco seasoning. Let it marinate in the fridge for at least half an hour.
While the chicken marinates, you can start by finely dicing your red onion and half your avocado, then combine it in a bowl with 1 cup of tomato salsa. This becomes your salsa.
Prepare yourself a drink (my favourite is a virgin pina colada).
Once the chicken is marinated, place in the air fryer for 15 minutes (flipping both sides every 7 minutes to ensure its cooked thoroughly).
As your chicken cooks, place 1 adobo pepper, the juice of 1 lime, vegan mayo, and the remaining half of your avocado in a blender and blend until you get a smooth creamy consistency.
Place your tortillas on an open flame to get that Smokey flavour.
After your chicken is cooked, place it in the tortilla with your salsa and spicy avocado sauce and fold. Now enjoy!!!

This burrito is the perfect mix of Smokey and tangy flavours. I’m not usually a fan of spicy foods but 1 adobo pepper seems to really bring it all together. I think the spicy avocado sauce is definitely the star of the show and is so easy to make! I’m 100% going to make an entire squeeze bottle of it for next time.
I know lunch is a very rushed process for some (I know it is for me) and to save time I think the best tip is to probably marinate your chicken overnight instead as that is by far the longest part of the process.

Sometimes it’s nice to just melt your fucking face off. That is not, strictly speaking, a threat.
This blog is ostensibly me doing you—a lonely, divorced loser—the favour of learning some cooking techniques and basic recipes to save you time and money while you pretend to get your life back together. I am super noble.
But you can’t make an omelet without cracking a few eggs, and I’m aware that I have appropriated some cultures’ foods and used them in non-traditional ways. And I’ll do it again! Today! Sort of!
At some point in the last 5 years our monoculture adopted Nashville Hot Chicken as a thing. Has that brought attention to the history of Black cooking in the mid-South*?  Or has it just fed the insatiable Instagram-post maw by providing a new sub-category for middle class white women at bachelorette party weekends? Who’s to say.
The point is there’s a whole huge pile of Nashville Hot Bullshit out there. Let’s add to it!
Nashville Hot Chicken is basically just fried chicken with a morally ambiguous amount of cayenne-based spice. Crucially, there’s just enough balance from the other ingredients to heighten and complement the heat without muting the fury. This isn’t supposed to be moderate. It is supposed to taste like scorn.
We’re skipping the fried chicken. Why? Because you don’t have a deep fryer or adequate ventilation or a yard or, frankly, enough people to eat with that scaling a fried chicken recipe would make any sense. Stop whining. Join an Ultimate Frisbee team or something.
What we are going to make is a credible approximation of the spice rub that you can use on whatever you want. Probably lots of stuff.
First thing you’ll need is an empty spice jar.  Most likely ground coriander. That stuff goes quick. You could make this in any jar, but since old jars already have the perforated tops, they make for easier shaking. You won’t want to get this on your fingers.
Put some tape over the label so that you absolutely, under no circumstances, confuse this for whatever was in the jar before. Hellfire and damnation.
Into that jar add 2T plus 2t cayenne pepper. That’s a good start. Now ½t smoked paprika and ¼t each of onion powder, ground coriander, granulated sugar, sea salt and fresh ground black pepper. Cooking is easy.
Coat chicken breasts with far too much of it, bake and then slice into tortillas with a slaw of some sort. Holy shit that gets on top of you.
Or mix with oil and marinate and then air fry tofu. Add to sautéed green beans. Or try this:
Halve some new potatoes or dice a big potato into ½ inch pieces. Anything but red potato works here.
Make a pouch out of foil (look at you go) and place the potatoes in it with enough oil to coat. Season with salt and enough of this to scare you. Then a bit more.
Seal the pouch and put in a 300F oven for an hour or thereabouts. Listen to Everybody Hurts on a loop.
Or I guess you could generously add to frozen chicken fingers etc before you air fry them. French fries. Anything.
Nashville Hot Haddock Fillets, anyone? Probably. Just don’t say it out loud.

It’s so nice to eat on the porch and enjoy a leisurely dinner in the evening and my Curried Chicken with Coconut Rice is a fabulous dish to serve when there’s a chill in the air (or anytime really).
When I tell you that I make coconut rice at least once a week, I’m really not kidding! We love it with absolutely everything and I rarely make rice any other way because this rice is the best and it’s so good with Curried Chicken.
This recipe comes together quickly with very few ingredients, so make your rice in advance and put this together right before serving! Don’t be tempted to leave out the ginger because it’s such an important flavor in this dish and the longer you let it marinate, the better it will be! You can certainly play around with the amount of ginger you use (I like a lot) because everyone’s taste buds are different! Anyway you make it, these flavors are so good together so be sure to make extra for leftovers. I came home last night and was going to have a small bowl for dinner and it was completely gone except for a tiny bit of rice! Baldy ate four chicken thighs…I guess he like it but I was a little miffed!
It’s a bonus that this dish is so pretty when it’s plated, making it perfect to serve for a dinner party, special occasion or to make weeknight dinner special. Food should be a feast for the senses…
Add a squeeze of lime juice at the end to bring out the flavors in the curry!

Rosé is a great wine to serve with rich flavors and it went very well with this dish. You could also serve a more fruity Sauvignon Blanc or a Merlot.
Growing up, we didn’t eat very adventurously at all…the food my mom cooked was delicious, but there was a lot of repetition. When my children were younger, we did have some things on repeat (like my homemade pesto), but I loved to try new dishes and introduce them to new flavors. Today, this curry doesn’t seem very much out of the box, but it would have been very unexpected to have been served this as a child! Just an observation as I was writing this post…
