This is Lungdu. A vegetable of the fern variety that grows up in the mountains. It's rich in folic acid and great for diabetics (thanks, mom). It is available only for a few months; now towards the start of the rains here, it is probably the last I get to eat it this year. The second pic is how it looked when I made it. In Tirthan Valley they cook it without tomatoes and curd. In Kangra, they do add curd. I personally like it without curd or tomatoes. The third pic is how I shop for my dinner in the mountains. I stop the car at a picturesque spot and lo and behold, I get to click pictures and pick vegetables for my dinner.
