🌸 celebrating Mom all month long 🎂 • • • fun fact - both my parents have their bdays in the same month as Mother’s Day & Father’s Day, so we pretty much go all out in May & June 🥳 • • • • only the best for Momma Ha! Dad always go HAM on the grill 🥩 We celebrated my moms bday with regent strawberry fruit cake, mango sticky rice, Wagyu Tri tip, artichoke with aioli & other veggies 🥥 My brother made pandan coconut & mango crepes for breakfast 🤤 • • • for Mother’s Day my Dad made lamb, lobster & steak on the grill. Jarred made some chocolate butter mochi & we enjoyed Milk Bar Cookies for dessert 🍪 • • • • this quarantine has been difficult, but one thing we are thankful for is good health & family ☀️ Weather has been nice & we got to enjoy some good quality time outdoors. Ojai Pixie Tangerine Thyme EVOO Butter Mochi Ingredients: 1 lb box mochiko flour 2 tsp baking powder ½ tsp salt ¼ cup @garciadelacruzoliveoil Master Miller Extra Virgin Olive Oil ¼ cup butter, melted 2 cups sugar 13.5 oz can coconut milk 4 eggs, beaten 1 tsp orange curacao 4 @melissasproduce Ojai Pixie Tangerines, zested and peeled 1 tsp dried thyme 2 drops red food gel 8 drops yellow food gel Directions: 1. Preheat oven to 350°F. Spray 9" x 13" with cooking spray and line the bottom and overlap the long sides of the pan with parchment paper. Spray with cooking spray and use a smaller piece of parchment to overlap the short sides of the pan. Spray with cooking spray and set aside. 2. In a medium bowl, whisk together mochiko, baking powder, and salt. Set aside. 3. In a blender, puree tangerines, zest, thyme, and food gels. Set aside. 4. In a stand mixer, combine butter, olive oil, and sugar on medium speed for 2 minutes. Add coconut milk and mix on medium speed for 2 minutes. Add eggs and orange curacao and mix on medium speed for 2 minutes. Add tangerine puree mixture and mix on medium speed for 2 minutes. Add dry ingredients and mix on medium speed for 2 minutes. Pour into parchment lined pan. 5. Bake for 1 hour and top is golden brown. Cool in pan for at least 30 minutes. 6. Use overlapped pieces of parchment paper to remove the butter mochi from the pan. Place on a large cutting board and slice into 24 squares.
