Date night/"treat" night
Had today off, which I so desperately needed. And I actually got to sleep in. Which, again, I needed. This past weekend has been nonstop working, running around and meeting up with friends. Which was all fun but whew. I’m tired.
Did absolutely NOTHING today! Rearranged my phone (check out Launcher Lab. Let’s your inner nerd do whatever they want with their phone! So cool), caught up on YouTube and just relaxed. I did end up at the gym, though! 7.55 miles on the elliptical, 30 sit ups, bicep curls (10 lbs x2, 15 lbs x 1), side extends (10 lbs x2, 15 lbs x 1) and lat pull downs (40 lbs). I’m sure I’ll be sore tomorrow. Good workout today.
By the time I was done, Stephen came home and we decided to go to Bonefish Grill. We each had our own Bang Bang Shrimp and then shared the Calamari appetizer and bread with pesto together. I’m so stuffed! Best part? Only went over 258 calories for the day! I’ll take it 😎
Now to relax for another hour or two before we head to bed; I know I close tomorrow but I really want to get some more sleep to be rested. Survive tomorrow and then I’m off again! Cannot wait.
Our Version of Bang Bang Shrimp
Sauce (41-50 medium shrimp)
1/2 cup mayo
¼ cup Sweet Chili Sauce
4 or 5 squirts of Sriracha sauce (or to taste)
1 cup milk
¾ cup flour
½ cup Panko Bread Crumbs
1 tsp salt
½ tsp Black Pepper
½ tsp Sage
½ tsp Onion Powder
½ tsp Garlic Powder
¼ tsp Basil
Heat oil to 350 degrees
Coat the shrimp in flour mixture then dredge in egg/milk mixture then in flour mixture again.
Special notes: After you batter the shrimp chill shrimp in fridge for 20 minutes before frying to help keep batter on shrimp.
