Little Meals on the Aerie, Week of 4/28
I love meal prepping, so I'm going to share what's on our table this week! I pack breakfast and lunch for us to take to work. For dinner, I make ahead nearly all of this to reheat the day of. I don't often get home until 6pm, so I want dinner on the table in fifteen minutes flat!

You can prepare Arañitas by frying shredded plantains. It is a crispy plat du jour served with garlic-based dip known as mayo-ketchup. Bistec encebollado is a flavorful dish. It consists of marinated beef steak with adobo-spiced and onion sauce. The flavors come from marinating the meat well for 10-12 hours.

Located in West Manchester Avenue,  Benny’s Tacos and Rotisserie Chicken, a three-link restaurant, is booming in business despite the COVID-19 Pandemic due to their innovative way of encouraging delivery and takeout; making the overall price cheaper through online orders and delivery instead of carryout. Ricardo Porcayo—the manager and head chef of the location—gave me a hypothetical situation where a burrito with its arroz y frijoles would, through carryout, cost 15 dollars. However, if the customer were to choose delivery, he/she/they would only be required to pay 12 dollars. This has caused their sales to exponentially increase in delivery. The pandemic has only affected them negatively by a small margin, where instead of making about 10,000 dollars in a week, they are now making 9,500 dollars. 
Ricardo Porcayo’s tone of voice had the confidence of a keynote speaker and the humility of an H-2A worker. He was born in Orange County and his father brought him back to Mexico at the age of seven years old because his father believed that a more sophisticated education would be present there. His father wanted him to work in construction and be an architect, however Mr. Porcayo had other pursuits in mind. He came back to America at around the age of fifteen years old and dedicated himself to learning English at a night ESL school while attending high school. He felt that the transition into a predominantly Latinx population helped him out with his education and encouraged him to want to speak English to his peers. He told me that the main reason as to why he wanted to practice was to flirt with girls. He began culinary school very shortly after college and was fully funded by a company known as Mexican Grill. He then went to pursue Mexican cuisine in Puebla and the Mexican Republic. 
The name Benny comes from the creator’s name Benny, an Armenian who had interests in adopting Mexican culture. Benny was looking to create some kind of authenticity in his products that contained Mexican cuisine and the Americanized rotisserie chicken. Benny recruited Mr. Porcayo, and Mr. Porcayo has been working there ever since. Ricardo’s favorite dish to eat at the restaurant is a  pollo asado taco as he enjoys staying healthy. His biggest take in the restaurant industry is, “Para ser respetado, tienes que respetar.” In other words, in order to be respected, you have to respect others, as he always follows through with the service he provides to his customers and the way he treats his employees.
