आंवले की खेती के पीछे सबसे बड़ा सकारात्मक पक्ष यह है, कि इसे किसी खास प्रकार के मौसम की जरूरत नहीं होती और कम जमीन पर भी बहुत अच्छी उत्पादकता प्राप्त की जा सकती है।
यह बात तो आप जानते ही हैं, कि आंवले का इस्तेमाल अचार, मुरब्बा और कैंडी बनाने के अलावा कई प्रकार के ऑर्गेनिक प्रोडक्ट, जैसे कि त्रिफला और च्यवनप्राश में भी किया जाता है।
यदि आप भी कुछ दूसरे किसान भाइयों की तरह की आंवले की खेती करना चाहते हैं, तो सबसे पहले आप को समझना होगा कि पूसा के वैज्ञानिकों ने आंवले की खेती के पश्चात, प्राप्त हुए आंवले से बनने वाले दूसरे उत्पादों को तैयार करने की नई विधियां, किसान भाइयों के समक्ष रखी है।

आंवले की कैंडी कैसे बनाई जाती है ?
यदि आपने अपने खेत से अच्छी मात्रा में आंवला प्राप्त कर लिया है, तो इस ‘अमृत फल’ का इस्तेमाल, इसकी कैंडी बनाने में किया जा सकता है।
आंवले की कैंडी बनाने के लिए आपको एक किलोग्राम आंवले के साथ लगभग 700 ग्राम तक चीनी के घोल को मिलाना चाहिए।
इस विधि के दौरान किसान भाइयों को सबसे पहले, पौधे से मिले हुए आंवलों को बिल्कुल साफ पानी से धो लेना चाहिए,
फिर उन्हें किसी बड़े बर्तन में डालकर अच्छी तरीके से उबालना होगा।
किसान भाई ध्यान रखें, कि इसे उबालने के समय बर्तन को ऊपर से पूरी तरीके से ढक दें और 2 से 3 मिनट तक पकने की तैयारी करें।
उसके बाद अतिरिक्त पानी को बाहर निकालकर ठंडा होने दें��
इसके बाद उन्हें बाहर निकाल कर चीनी को मिला दिया जाता है और इसे 2 से 3 दिन तक ढक कर रख देना चाहिए।
अच्छी तरीके से ढकने पर उस बर्तन में हवा का प्रवेश नहीं होगा, जिससे कि चीनी अच्छी तरीके से घुल जाएगी।
इसके बाद उन्हें निकाल कर पॉलिथीन की सीट पर फैला देना चाहिए और 2 दिन तक धूप में रखना होगा।
सभी किसान भाई ध्यान रखें, कि यदि आपके यहां बहुत तेज धूप आती है तो आंवले से दूर ही रखें, क्योंकि इससे वह बहुत ही सख्त हो सकते है।
इसके बाद उनकी अच्छे से पैकिंग कर बाजार में बेचने के लिए इस्तेमाल कर सकते है।
आंवला से चटपटी सुपारी बनाने की विधि
इसके अलावा, हाल ही में एग्रीकल्चर वैज्ञानिकों ने आंवला से चटपटी सुपारी बनाने की विधि भी किसान भाइयों के लिए डीडी किसान चैनल के माध्यम पहुंचाई है।
इस विधि से चटपटी आंवला सुपारी तैयार करने के लिए पहले पेड़ से मिले आंवलों को अच्छे तरीके से धो लेना होगा।
फिर उसकी छोटी-छोटी स्लाइस काट लेनी होगी।
बची हुई गुठली को बाहर फेंक देना चाहिए और उसके बाद एक कांच के बर्तन में डाल लेना चाहिए।
इसके बाद उसमें काला नमक, सादा नमक और काली मिर्च मसाले को मिलाना होगा।
यदि आपके ग्राहकों को अजवाइन और जीरा जैसे मसाले भी पसंद है तो उन्हें भी मिला सकते है।
इन आंवलों को 3 से 4 दिन तक उसी बर्तन में रहने दें और समय-समय पर दिन में दो से तीन बार अच्छी तरीके से हिला देना चाहिए।
5 दिन बाद इन छोटी-छोटी स्लाइस को एक बिना हवा प्रवेश करने वाले डिब्बे में भरकर अच्छी तरीके से ढक देना चाहिए।
इस प्रकार यह मार्केट उत्पाद बाजार में बिकने के लिए तैयार है।
