Sharp class dragons as pokemon types
Dragon will only be used when needed. Go find the previous post yourself. You'll only miss the Stoker and Boulder class. I forgor to say this before but the list will be from alphabetical order from the wiki.
Devilish Dervish: dark/flying or pure flying or dark for the name and unruly nature. It's not metallic, so no steel.
Egg Biter: Dragon/flying or pure dragon for lack of other traits besides strong jaws.
Grim Gnasher: dark/flying or pure dark for vulture like behaviors for attacking the weak and old. The teeth shooting and slitherwing venom immunity can give it a move or ability.
Hackatoo: steel/flying or rock/flying for ax like snout. It isn't described to be hard like metal, so the strength of a Hackatoo is variable.
Raincutter: water/flying or water/ground rain resistant fireballs, water loving behavior and foraging in the mud.
Razorwhip: Steel/flying obviously.
Scuttleclaw: probably some sort of mix of dragon, flying, and fairy. It is constantly described as cute and playful pranksters when young, so STAB play rough could work.
Shivertooth: Ice/flying, ice/steel, or pure ice or cold environment and slicing scales.
Speed stinger: electric/poison, ground/poison, or pure poison for paralyzing venom, lack of flight, and high speed.
Stromcutter: dragon/flying or pure flying for the four wings and swiftness.
Thornridge: fighting/flying for being described as a protector for those in need.
Timberjack: flying/steel or pure flying for the massive wings and their cutting edge.
Windstriker: fire/flying for be described as us using super heated air instead of fire.

1, 11, 13, 14, 18 for viggo, also i'm gonna be honest at first i was like "oh he's neat" and then I got on the internet and fanart/fics smacked me so damn hard. Just putty in viggo's rough, strong yet gentle looking hands.

Do you remember your first dragon you hunted? And if so, what was it?
Funnily enough, I don't actually remember. However, I do remember the first dragon I almost killed, back when I was just a lad, perhaps fifteen years old? It was a Hackatoo. The only thing that stopped me from lopping its head off right then and there when the older men offered me the chance was the fact that Viggo was right there, watching. He wasn't quite ten years old yet, and every night he slept with this little stuffed Hackatoo toy, made by our mother for him in case something happened to her and she couldn't be around for him (which, for reference, something did). It was the last piece of her that he had. I couldn't kill a Hackatoo in front of him, so I declined and took him away before he could witness its death himself.

hhhhhh thanks I'm glad you like the 10 class system! But now I'm gonna go a step further: we have Night Fury for Strike, Deadly Nadder for Tracker, Gronckle for Boulder, Monstrous Nightmare for Stoker, and Hideous Zippleback for Fear. What if there were riders for the other 5, what species would they ride? I'm thinking Death Song or Dramilion for Mystery, Razorwhip or Timberjack or Hackatoo for Sharp, Snow Wraith for Frost, Triple Stryke for Toxic, and Thunderdrum for Tidal.

All those proposed dragons are great for a larger rider group. Especially, I love your inclusion of Razorwhip, Thunderjack, and Thunderdrum. And not just because I like those dragons (though that bias is there <.< haha).
Dragons like the Thunderjack and Thunderdrum I think of as "more common," containing a higher population near Berk. That's my headcanon, but how I got it: The Thunderjack was introducer sooner into HTTYD lore, so I think of it as "more standard" than "exotic." The Hairy Hooligans knew about and talked about that dragon for a long time before anyone went off venturing, ergo, it's around them lots. Similarly, Thunderdrums were introduced earlier in HTTYD franchisedom, and between Thornado and the babies Bing, Bam, and Boom, we've seen enough Thunderdrums I suspect they're frequent around Berk.
When dragons are native to Berk and populous, they're more likely to become a rider's dragon. When making headcanons of future hypothetical riders, I prefer sticking to "more likely" dragons.
There's a cool narrative appeal to hitting all 10 classes, as you were saying. So, going by your premise:
Hiccup: Night Fury (Strike Class)
Astrid: Deadly Nadder (Tracker Class / Sharp Class)
Fishlegs: Gronckle (Boulder Class)
Snotlout: Monstrous Nightmare (Stoker Class)
Ruffnut and Tuffnut: Hideous Zippleback (Fear Class)
Heather: Razorwhip (Sharp Class)
New Rider A: Changewing (Mystery Class)
New Rider B: Snow Wraith or Woolly Howl (Frost Class)
New Rider C: Triple Stryke (Toxic Class)
New Rider D: Thunderdrum (Tidal Class)
Honorable mention: Speed Stinger as a non-rideable Toxic Class pal, like the Terrible Terror messenger dragons they had.
You already had such good ideas I'm sticking close to them!
In a hypothetical world I had full control of creating five new riders, I wouldn't hit all classes of the proposed 10 class system! I'd have doubles. Why not three Nadders and two Gronckles? That's more likely than each dragon class being represented once! It wouldn't have the cool narrative factor you're working with, but I'd enjoy doing an underappreciated duplicates thing, too.
Because I'm a book!HTTYD lover, whenever I consider creating HTTYD characters / content, I slip in as many book Easter Eggs as possible. So there's also a chance I'd give new rider characters the dragons book characters had. (Heck, just put Camicazi, Thuggory, etc. into the "new riders" group!)

This is Hax. He's a hackatoo. Like Lumberjack, he's bestial. He's wild and can't talk. But he's smart and knows what he's doing. But he's more of a wildcard. He would go headfirst onto battle and would not think things through sometimes.

More traffic/httyd AU rambles
Scott has a whispering death. I think he deserves it. It's red and named Poppy btw (he also has a snow wraith that Will Not Leave him alone)
Just for fun, some of the helsmits are out there living this lives. Like if the main show of the AU is the Dogwarts vs Desert Duo plot, then the helsmits have a spinoff show. Does this make sense
I'm trying to think of plant based dragons for Bdubs but nothing is coming to mind except for a snaptrapper. Whatever dragon I have him will be named Clock tho
I now realize I forgot Pizza when I gave Scar Vex, so Pizza is now a terrible terror that Scar adopted randomly.
Cleo gets an boneknapper. Have you seen this thing it literally makes itself armor out of bones. Cleo gets the cool bone dragon
Tango gets a monstrous nightmare. Do you see my vision. He gets the funky fire dragon that can set itself on fire.
Joel has a pack of small shadows. They are the wolves of the dragon world I am going insane about this idea.
As a stand-in for the whole enchantment table conflict, I'm gonna say dragon eggs are the problem. Scar wants pretty rocks to sell and Ren isn't going to let anyone hurt dragons of any kind. Cue drama and plot :>
I still don't fully how I'm going to build in the story of 3rd Life. But nobody's gonna die. I promise. (well if it's gonna be anyone it will be Jimmy or Scar for plot reasons. But only if I can't find a better way to end the story)

Dragon Training - Lesson 12
We'll be starting week three of Dragon Training with a nice and short lesson on a Sharp Class dragon. The Hackatoo!
These interesting Sharp Class dragons have axe-like snouts they use to cut down trees. Remind you of a different dragon we already covered? They're reminiscent of Timberjacks, but quite different in the long run.
They have adequate firepower, being able to shoot their blasts in quick succession.
Hackatoos are reckless and impulsive, often getting their snouts stuck in trees when they overestimate their cutting abilities.
These dragons would go well with a rider who is on the more careful and calm side, as keeping a Hackatoo out of trouble is the main struggle when training.
