Korean-Inspired Grilled Chicken Thighs Recipe

A warm and sunny Summer Sunday is made for lighting up the barbecue and making a meal of smoky grilled meat or fish. There is something contemplative about watching wood and coat set alight, the hypnotic dance of fire and flames, until they turn to red embers, which perfectly suit a lazy day. And besides the setting of the barbecue, preparing the meat takes very little effort: it's a matter of assembling a marinade and forgetting it in the fridge for a few hours, and then, it cooks in minutes!
Thus I reckon it's well worth it to fire up the barbie and make these finger-licking delicious Grilled Spicy Soy Chicken Drumsticks, even if it's just for yourself! Happy Sunday!
Ingredients (serves 1):
1 heaped tablespoon Hot Pepper Sauce
1 tablespoon soy sauce
2 heaped teaspoons honey
1 teaspoon toasted sesame oil
3 beautiful chicken drumsticks
In a shallow dish or plate, combine Hot Pepper Sauce, soy sauce, honey and sesame oil, stirring well until perfectly blended.
With a sharp knife, score the flesh of the chicken drumsticks. Place drumsticks in the dish and toss well with clean hands, thoroughly rubbing marinade into the chicken flesh.
Cover with cling film and place in the refrigerator, to marinate, at least a couple of hours.
Prepare barbecue: half an hour before grilling, arrange a layer of coals in the barbecue. Top with a few small branches of wood (applewood gives good taste), and light.
Wait for the flames to die down, and place the marinated chicken drumsticks on the grill over the red embers. Grill, about 7 minutes on each side until well-cooked through, and nicely charred. As you turn drumsticks on the grill, generously brush with remaining marinade, and once more just before serving, to glaze them nicely.
Serve Grilled Spicy Soy Chicken Drumsticks hot, with a side of mango salad or, and a glass of chilled Gris Rosé or Chardonnay.

Nothing compares to the smoky flavour meat, fish, seafood and even vegetables take over the embers. And, it’s fun: lighting the fire, watching it until it’s time to grill, the grilling itself, and eating outside, under the shade of our apple tree, a chilled glass of dry white wine or rosé the recompense for our efforts... This Seven Spice Grilled Steak is just that, a bite of Summer, a bit of a vacation, and ready so quickly you can indulge in the middle of a Tuesday!
Ingredients (serves 2):
340 grams/12 ounces good quality basse-côtes or rib-eye-steak
2 teaspoons Seven Spice Blend
1 1/2 tablespoon olive oil
With a sharp knife, score beef steak on both sides. Thoroughly rub Seven Spice Blend into the flesh on each side. Allow steak to absorb the flavours, at room temperature, for about an hour, covered with foil.
Prepare barbecue: half an hour before grilling, arrange a layer of coals in the barbecue. Top with a few small branches of dry wood (applewood or fir give a good taste), and light.
Generously rub olive oil onto each side of the steak.
Wait for the flames to die down, and place the steak on the grill over the red embers. Grill, about 5 minutes on each side, for a medium-well steak.
Serve Seven Spice Grilled Steak with grilled corn and Mint and Feta Butter.
