On tonight’s episode of the Coronavirus Cooking Diaries let’s talk about bone I. Pork Chops. These pork chops were nice and thick and only required a simple preparation. I heated some oil in a cast iron pan and an aluminum skillet. The two thicker chops I cooked in the cast iron and the smaller chops I cooked on the stove top on the skillet. I gave them a simple seasoning of salt, pepper, black pepper, and garlic salt. Initially I was going to start them in the pan by browning each side and finishing them in the oven but it was hot and they were 2 different thickness so to make things easy, I just cooked them on the stove top. I fried them on medium high heat for 4 minutes on one side and 6 minutes on the other to no a temperature of 150 degrees. I do not like overcooked and dry pork. Pork chops are not meant to@be dry and overcooked. Pigs used to be fed small amount arsenic to kill trichinosis but the FDA no longer approves this practice. It used to be that pork was routinely overcooked in order to avoid the food-trichinosis. For many years, nutritionists and the USDA had recommended cooking the meat until it reaches an internal temperature of about 160°F plus but now trichinosis is significantly less common and it is recommended to cook pork until it reaches 145 -150 degrees which can results in the center being slightly pink. It is also much juicier, tastier and not nearly as tough as an overcooked chop. I served these chops with some peas & carrots and some creamed corn. On tonight’s episode of the Coronavirus Cooking Diaries, let’s talk about skirt steak. Pictured here baby s an inner skirt steak. Skirt steak is a cut of beef steak from the plate. It is long, flat, and prized for its flavor rather than tenderness. It is not to be confused with flank steak, a generally similar adjacent cut nearer the animal's rear quarter. Both the inside and outside skirt steak are the trimmed, boneless portion of the diaphragm muscle attached to the 6th through 12th ribs on the underside of the short plate. This steak is covered in a tough membrane that should be removed before cooking. The inside skirt steak is often confused with the flank steak, which is the tail of the porter house and T-bone steaks of the short loin found on the flank. It has similar cooking properties. On tonight’s episode of the Coronavirus Cooking Diaries I present you the Park Paloma. The Paloma, Spanish for dove, is a tequila-based cocktail with lime juice, simple syrup, and grapefruit-flavored soda such as Fresca, Squirt, or Jarritos and served on the rocks with a lime wedge. Mine had a spicy Chili salted rim. There was a group of guys selling them in the park and it was a thirst quenchingly delicious concoction that was exactly what was needed on a hot, sunny day. I also happen to love grapefruit soda such as @squirtsoda and @frescausa especially in the summer. Palomas are found throughout Mexico, and NYC. On today’s episode of the Coronavirus Cooking Diaries I present you the once lowly, now highly prized, ugly, yet delicious...Steamed Lobster. I love them steamed whole, on a roll, poached, broiled, grilled, etc. Lobsters are a high priced delicacy these days but historically that wasn’t necessarily the case. In North America, the American lobster did not achieve popularity until the mid-19th century, when New Yorkers and Bostonians developed a taste for it. Commercial lobster fisheries only flourished after the development of the lobster smack, a custom boat with open holding wells on the deck to keep the lobsters alive during transport. Prior to this time, lobster was considered peasant food for the poor or a food for indentured servants or lower members of society in Maine, Massachusetts and the Canadian Maritimes. It is said that some servants actually put in their employment agreements that they would not eat lobster more than twice per week. Lobster was also commonly served to unhappy prisoners to their displeasure. American lobster was only used as fertilizer or fish bait until well into the 20th century. As a crustacean, lobster remains a taboo food in Judaism and certain streams of Islam. Lobsters, like snails and spiders, have blue blood due to the presence of hemocyanin, which contains copper. In contrast, vertebrates and many other animals have red blood from iron-rich hemoglobin. Lobsters also possess a green hepatopancreas, called the tomalley which is prized by chefs and devotees alike, which functions as the animal's liver and pancreas. Today’s post has everything to do with being a parent during the Coronavirus pandemic & nothing to do with cooking. I didn’t do much cooking this weekend, I needed a break. The focus this weekend was to get tested for the COVID-19 virus. We don’t have symptoms but the kids can’t wait any longer to visit Buffalo to see their grandparents. It’s been 7 months since they last saw them & they miss them & all that Buffalo summer’s have to offer. On Saturday afternoon we tried to find a @citymd open so we could take the COVID-19 & antibodies tests. We went to 4 before we found 1 open. We are not taking any chances getting my parents sick so we waited in line for 1 hour in 90 degree heat for tests. The kids were scared but I did my best to keep them calm. I went first so they could watch. I had the nasal swab, uncomfortable but relatively painless & quick. It’s more of a scrape than a tickle. Then they drew blood for antibodies. The kids were another story. It took some convincing for them to have the nasal swabs. They were brave & did well. Getting them to have blood drawn was another story. Natalia tried but the nurse missed her vein & gave up after 3 tries. Drawing blood is an art form and some doctors and nurses are great at it & others not so much. Felix was too scared to even try. I did my best to soothe them & keep them calm but Felix was freaking out. I felt like a failure as a parent because I want to be sure they are clear before we plan this trip. We are not playing Russian Roulette with their grandparents’ lives. They knew what was at stake but it was still so hard for them. I felt like a failure. Nothing I did made them feel better. It was painful, sad & frustrating. Being a parent sucks sometimes. It will take 7 days for results don’t get me started on that. On tonight’s episode of the Coronavirus Cooking Diaries, i am sharing Blueberry Swirl Lemon Cheesecake bars! Lemon and Blueberry is the perfect pairing and these cheesecake bars are good but I want to tweak the recipe I found to make them great! I grabbed the recipe online but will make them again with either a quick shortbread or traditional graham cracker crust that is thinner and a thicker cheesecake layer so the amount of blueberries I used actually swirls and not just color the cheesecake. These blueberry lemon cheesecake bars are good but I plan to make them again until I get it right. It’s peach season!! On today’s episode of the Coronavirus Cooking Diaries, let’s talk about Peach Fritters! Peach fritters have been a breakfast and brunch staple since I was a kid growing up in Buffalo. My mother and grandmother would make them for us every summer when the peaches were in season. My grandparents and parents also canned peaches so every ow and then we would have them during the winter too. Fritters are found in many many cultures and these are more similar to pancakes than they are the traditional round fritters made with corn meal or other grains. A fritter is a portion of dough, meat, seafood, fruit or vegetables which have been battered or breaded and fried. Fritters are traditionally prepared in both sweet and savory types and vary in methods. The peach fritters you see here have eggs, milk, oil, flour, vanilla and baking powder, lots of it. I used fresh peaches but you can use canned or any other fruit you like such as cherries or apples. They are crispy on the outside, soft on the inside and peachy delicious. They are more like pancakes and less like doughnuts or croquettes. Sprinkle them with granulated or confectioners sugar and serve with butter and maple syrup if you like. In today’s episode of the Coronavirus Cooking Diaries I made some steamed clams Spanish style with chorizo, garlic, shallots, butter, white wine, olive oil and crushed red pepper. The hard clam also known as a quahog, or round clam is a marine bivalve mollusk that is native to the eastern shores of North America and Central America from Prince Edward Island to the Yucatán Peninsula. Little necks are the second smallest size@of these clams and are perfect for steaming or eating raw. I love steamed little neck clams and there are many variations. On today’s episode of the Coronavirus Cooking Diaries let’s talk about Branzino. Branzino is a mild white fish that gained popularity in Italian cuisine and cooking. Most often you will find it roasted whole but I picked up some nice filets and decided to cook them up. Branzino is also often referred to as European bass and provides a sweet tasting, flaky white meat. It is both fished and raised commercially, and is considered to be the most important fish currently cultured in the Mediterranean. I did a very simple preparation of the Branzino with some salt pepper and a quick fry in a pan with butter and oil for a couple minutes skin side down and about 45 seconds more on the meat side. A slash of lemon juice finished it off. I served it with some of the burst tomato sauce I made the night before. I also made some homemade French Fries for a little fish and chips action. On today’s episode of the Coronavirus Cooking Diaries let’s talk pasta sauces. During my day job I manage a staff 15 and I spend a lot of time sitting in Zoom meetings. Often times we spend the time chatting before everyone joins and one of the conversations invariable leads to what I cooked the night before. I often ask my staff what they cook and often hear that they are bored because they cook the same 3 or 4 dish rotation every week. In order to spice things up so I offered to give them a cooking class. I gave then some choices to pick from and unanimously the decided pasta sauces. So over the course of an hour I whipped up three quick and easy sauces on Zoom, a Pasta Aglio, Olio e Peperoncino with a couple of variations including adding capers, anchovies and pickled ramps. a simple yet tasty Marinara and last but not least a garlic, fresh cherry tomato and basil sauce. Some of them watched, others cooked along with me but overall the feedback was great and it seems we are going to try and do it again. Next time I think we will do chicken. Happy Saturday. Yes, it is 4th of July but it feels like any other day. I will take the kids to the park but with the fireworks going off every evening in NYC, it’s no longer an enjoyable experience. Unfortunately, I am not in a celebratory mood so instead we are going to explore what failure means. On today’s episode of the Coronavirus Cooking Diaries I present to you my Popover failure. They were good but not like they are meant to be because they were smaller and more dense like a muffin because they never really “Popped!”. Like any baking failure you eat it, learn from it and try again until you get it right. Isn’t that what life is all about? Learning from mistakes. Being open to make mistakes by trying new things, broadening your horizons and stepping out of your comfort zone. So often we are too afraid to try that we become paralyzed. Remaining open to all and any opportunity is not easy. But if first we don’t succeed, try try again! I hope to try again soon! For those that may not know, a popover is a doughy type of muffin made from egg batter. As it bakes, the dough rises to “pop over” the edge of the muffin tin and form a hollow shell while remaining crispy on the outside and light and fluffy on the inside. Typically you pull them apart and eat them with butter and jam. The popover is said to be an American version of Yorkshire pudding and is similar batter to puddings made in England since the 17th century. The oldest known reference to popovers is in a letter of E. E. Stuart’s in 1850 and 0popovers first appeared in a cookbook in 1876. Cook like a chef, eat like a chef. It’s Thursday night but it feels like Friday, or Saturday, or who the hell knows anymore. Blursday. I am exhausted. It has been a grueling few weeks with a lot of stress, tension and emotion. Managing work, kids, the end of school, following the news of the protests, the Black Lives Matter Movement, and a clueless President, cooking, cleaning, shopping and that annoying little virus has me stressed, annoyed, overwhelmed and exhausted. Therefore, I will keep things short and sweet. On today’s episode of the Coronavirus Cooking Diaries my daughter helped me make a glazed Lemon Bundt Cake.
