I’m getting ready for a wood firing. It’s been a bunch of years since I’ve been able to get to one, and I really want to maximize my use of this super special way to fire. So I go down to the studio with the intention of throwing a variety of different forms. But really, all I want to make is bowls! So I throw some bowls, and then I come up to the kitchen to cook supper, and guess what I really want to eat? Bowls. Rice bowls, noodle bowls, big bowls of salad. Then I want yo sit on the porch with the bowl in my lap, and savor all the wonderful flavors and textures and sip some wine. This slow roasted salmon and clam barley bowl was inspired by a lunch at Dottie Audrey’s Bakery. There was sweet chili sauce accompanying the grain, veggies, and fish, that was so good I could eat it with a spoon. My approximation: chili garlic sauce, ketchup, lemon juice, and a dash of tapatio. Also in the bowls: lightly sautéed gorgeous spinach and garlic scapes from our csa, marinated raw first zucchini (csa), and avocado (a must with the silky salmon). Did you know grilled green beans are super tasty? These were a tad over the hill and grilling just brought outbtheir sweetness and gave them a wonderful texture. ATK’s seared sesame crusted tuna is a longstanding favorite around here, but we wanted something spicier. So I made up a mixture of Aleppo pepper, cayenne, coriander, toasted cumin, and salt. The oiled tuna got dredged in the spice mix and then seared quickly in a ripping hot cast iron pan. This is my riff on a recipe from Carla, @lallimusic. It starts with a seared pork layer (seasoned ground meat from our local share) topped with toasted garlic croutons (from my home baked organic sourdough). Then torn haloumi. Then a ton of torn herbs from my container garden, plus some foraged ones: garlic mustard, mint, basil, cilantro, tarragon, lemon verbena, thyme, and chives. Finally seeds, lemon zest, and flaky salt toasted in oil: pumpkin, cumin, sesame, mustard, and caraway, drizzled over it all. This day will always be my mother’s birthday, even though she’s been gone for 3 years. She would be 85... She was in her 50’s here. After my brother died, she’d written a book about parental grief. Her agent got her on the Oprah show. She called me, gasping for air (she’d promised Steven she’d quit smoking and couldn’t remember how to breath while driving or talking on the phone). “What am I going to wear?” That was cue for “we need to go shopping!” This beautiful green wood suit was the result. My mother, a beauty, could rock a pair of shoulder pads! The Oprah appearance was bizarre. The show turned out to be focused on families who had a member who’d disappeared. Husband never came hime from a business trip, son went missing while hiking in Hawaii. Mom’s book never dealt with particular kind of awfulness. She, and the subjects of her stories, all had children who were dead. Not inexplicably missing, dead. Judith maintained her poise, as always. But what could she say? She couldn’t comment expertly about missing loved ones. Nor could she effectively plug her own book. BUT she was on OPRAH and she looked fabulous! Inspired by a nonconformist little piña in my misfits box, and a half a pig in my freezer (yup, my own body weight of pork in there from our local share), I decided to do Taco Tuesday up good: Tacos al Pastor, ftw. cascatelli Sometimes new eagerly anticipated experiences or products fail to live up to the hype. After listening and reading about Dan Pashman’s carefully crafted pasta shape, I expected it would be the best ever. I, like Dan, favor mafalde, but never liked the long length. I’d taken to breaking them, coming close to creating my own short, hearty, ruffly shape a few years ago. I also knew I preferred pasta made with bronze dies because of the sauce trapping texture. So, forkability, sauceability, and tooth sinkability, I’m there! My pasta arrived yesterday, and I set to work. Also, the first day for our local CSA! I had sauce leftover from making tacos al pastor, so that garlicky, chili infused liquid crack would be my base. I started by sautéing baby leeks with ground pork from our share. A little tomato paste for extra body and umami. Sauce added, everything cooked down for 20 minutes. Then, in went a handful of beautiful baby greens. Then the perfectly cooked cascatelli along with fresh local peas. The pasta did an amazing job of sucking up a remarkable amount of sauce. I was prepared with well seasoned pasta cooking water, but needed only a few spoonsful. A good drizzle of parm, a cascde of chive flowers, and my initial foray into cascatelli celebration was underway. The salad accompaniment was an asparagus caprese with loads of my mother’s day basil. A glass of cold oregon sauvignon blanc on the porch and we enjoyed every bite. We interrupt this holiday weekend to bring you a plate of smoked honeynut squash. and also the stoneware bowls I made for Max (my nephew) and Amanda’s wedding gift. One of the few things I truly love about loading the kiln in cold weather (it’s in the garage) is that it gives me incentive to make big bowls of ramen, chock full of mushrooms, winter squash, and eggs (all local). Well, we have no heat or hot water, so we spent the day doing yard work and then fired up the grill. Might as well stay outside since it’s just as cold in the house! I cannot sing the praises of this grill smoked salmon enough. Our Alaskan fish share included both sockeye and coho, so I sprinkled the coho with sesame seeds so we could tell the difference. Some korean potato salad, steamed broc, eggs, cukes, and the last of my sister’s avocado rounded out our meal.
